Springbank Distillery is the oldest independent, family-owned distillery in Scotland. Legal distillation began in 1828. The chairman is Hedley Wright, the great, great grandson of John Mitchell, the first legal distiller of Springbank whiskey. There are few Scottish distilleries that still malt their own barely, but Springbank is the only distillery which malts 100% of its own barley, using traditional floor malting. The whole production process: malting, milling, mashing, fermentation, distillation, maturation and bottling, happens on one site in Campbeltown. This is unique in Scotland.

• Our 10-year-old offers whisky drinkers the perfect introduction to the Springbank range. Matured in a combination of bourbon and sherry casks, it is perfectly balanced from the first sip through to the full, rich finish.

• Aroma - oak notes are dominant, followed by toasted marshmallows and dried fruit pudding, as well as cherries, marzipan and a hint of peat

As local harvest has been non-existent for the last three summers, we looked farther to find the juiciest of peaches. Hence, for this Perzik, we macerated freshly hand-picked yellow peaches from an organic producer in the north of Spain. We only used two -and- three year old lambikken for macerating. Maceration took almost five months. The weighted average age of the peach blend upon bottling is almost 24 months. The final proportion of fruit used is 384g per liter of Perzik.

The 2021 Le Difese is redolent of crushed red berry fruit, rose petal, lavender, spice and sweet pipe tobacco. Medium in body yet nicely layered, the 2021 is impeccably balanced. It is also a sheer delight to taste at this early stage. In many vintages, Le Difese is a fruity, forward wine, but the 2021 has a nervy feeling of classicism that is hugely appealing. It's one of my favorite recent vintages. As it has been for some time, Le Difese is a blend of Cabernet Sauvignon from the estate and Sangiovese purchased from several properties in Chianti Classico, with the energy of Sangiovese very much driving the feel in this vintage.

Le Difese in 2021 sports a majority of Sangiovese – 55% – in a break from the traditional 70/30 split in favour of Cabernet Sauvignon. Third-generation at Tenuta San Guido, Priscilla Incisa della Rocchetta, explained that this decision was made to enhance the wine's 'local Tuscan' character, and to improve its drinkability early on as 'a first step into the Tenuta San Guido world.' While the Cabernet is grown on the estate, the Sangiovese is sourced, as always, from long–term partners based in Chianti Rufina. Bright, incredibly vibrant red, black and blue fruits introduce subtle, finely grained tannins with notes of wood and chocolate. It's at once juicy, tangy and crunchy, with good ripeness and great acidity. Matured for eight months in used barriques.

In the 1950s, Vincent Jacoulot’s descendants began branching out from brandy into fruit crèmes and liqueurs. As with all things Jacoulot, these products draw on Burgundy’s rich culinary traditions. Burgundy is known both for its beautiful vineyards and its wild-growing and unique fruits that are abundant throughout the region. These liqueurs allow us to savor the bounty of Burgundy’s harvest at any time in any place. Their careful production creates intense, pure flavors with minimal oxidation.

This pure crème uses three different varieties of vineyard peaches – much smaller than the standard table peach – and macerates them for 60 days in neutral grape spirit. The fruit solids are then pressed and blended into the maceration, along with beet sugar to give this liqueur balance and richness.

• Flavor Profile: Peach gummy rings abound, with a pure ripe peach palate that is fresh and vibrant.
• Usage: The unmatched peach flavor in this crème makes it a powerful ingredient in almost any cocktail. Use it in a Bellini for maximum peachiness, or combine it with classic fall flavors such as whiskey, cognac, ginger, amontillado sherry, or Angostura bitters for an endless array of options.
