Crispin® BIRD ON A WIRE
Limited Release Cider Aged in Rye Whiskey Barrels,
With Bourbon Barrel Aged Tupelo Honey

The Crispin Cider Company introduces its annual Americana whiskey cask aged hard apple cider in time for the holidays [did not make it in time in St. Louis]

The cider is In limited release, on allocation. And like its American whiskey cask aged predecessors; The Jacket & Stagger Lee, it continues the All American rock and roll cider theme.

“We have tried to bottle the spirit and philosophy of Alt.Country music and the incredible bands that make that style of adventurous, creative music” says Bruce Nissen, Crispin Head Cider-Maker. “Bird On A Wire sets cider free. We are an untraditional American cider company. We explore the boundaries of fermentation, yeast strains, barrel aging and blending. These are our songs”.

The Greatest Cider Adventures
Blended 4 times using 4 different apple wines from naturally fermented unpasteurized American fresh-pressed apple juice aged in American rye and Bourbon whiskey barrels.

The apple wines were fermented with Irish Stout yeast, Belgian Trappist yeast, Sake yeast and our unique Colfax Classic apple wine.

The blend was then finished with Tupelo Honey aged in Bourbon barrels and unpasteurized fresh-pressed apple juice.

Alt.Country Cider
Dances across the palate like a band playin’, people swayin’. Spend some time, wait a minute. Set it free.
ABV: 6.9%
Poured Appearance: Whiskey Cloudy. Honeyed & cloudy opaque.
Color: Rich honeyed orange, slightly brown whiskey tint.
Aroma: Whiskey notes up front & center, ripe apple, honey notes.
Flavor: Very smooth and totally balanced. Toasted oak tannins, soft rye spice, cask-woody vanilla and cinnamon. Finishes with an lingering open-mouthed kiss of farmhouse style apple juice.

Unfiltered & blended from apple-wines straight from the whiskey barrels. Give a solid, firm, bottoms-up tilt and swirl to disperse sediment evenly through the bottle to best enjoy whiskey aromas and unique bouquet. Best enjoyed at cellar temperature, 50/55F, with or without 1 or 2 ice cubes.

Bird On A Wire is most certainly worthy of aging in your cellar.

Stone Vertical Epic 12.12.12....$6.49 / 22oz

The Vertical Epic Ale series started simply enough in 2001, with Stone CEO and co-founder Greg Koch suggesting we release a different Belgian-inspired beer suitable for aging each year on the date when the day, month and year registered by the same digit. The brewhouse forged forward with this initiative, producing 11 beers that, unlike many on the market at the time, were intended to be laid down so they could be opened when the last of those dates came to pass on December 12, 2012.

Eleven years later, we’re excited to announce today’s arrival of Stone 12.12.12 Vertical Epic Ale. Soon, it will be time to uncap all 11 of the Vertical Epic Ale vintages and enjoy them together. Certainly, it will be a glorious capping to one of the most ambitious brewing projects ever undertaken, even for those with a few or maybe even one or two of these widely varied brews. We’re pleased with how each of them turned out and what we’ve accomplished, but at the same time, we admit to being a bit sad. This was an incredible series that we’re bummed to see come to an end, but, we’re going out in a blaze of beery glory. Enter Stone 12.12.12 Vertical Epic Ale!

Crafted in the style of a traditional Belgian Noël beer, it’s dark, big and hearty; the type of brew one might have actually expected to come first in the Vertical Epic series (but our wheat beer held up very nicely, as attested to in our recent tasting session with reputable experts, including those hailing from Beer Advocate, RateBeer and New Brew Thursday). Stone 12.12.12 Vertical Epic Ale should stand up to aging, but is already a beautiful brew fresh off the bottling line.

Brewed with cinnamon, allspice, nutmeg, clove, orange peel and rosehips (which turned out to be so sturdy we had to roll over them with a forklift to pulverize them for the brew), it’s a complex beer with many layers. The spices come on strong along with a nice bready malt character. That said, Stone 12.12.12 Vertical Epic Ale is rather dry on the finish, making it a beer that should do a great job as the last beer in the rotation at fans’ Vertical Epic tastings.

Planning on inviting some beer connoisseurs over for your own Vertical Epic session? We’d love to hear about it. Hit us up on social media using#VerticalEpic, or simply post comments to this blog entry. Hopefully, like us, you were able to properly store your bottles. In addition to providing a line of tasty, thought-inspiring beers, providing a practical example of how good aged beer can be when stored under the correct conditions is another triumph of the Vertical Epic Ale project.

Remember, you don’t need to have all 11 beers to do a tasting. Even if you only get your hands on Stone 12.12.12 Vertical Epic Ale, you’re in for some serious flavor. Pick it up in time for 12.12.12!

Stats: 9.0% ABV, 50 IBUs
Hops Bill: Simcoe, Tettnang and Willamette

Spices: Cinnamon, allspice, nutmeg, rosehips, sweet orange peel and just a dash of clove

Tasting Notes, provided by Brewmaster Mitch Steele

Appearance: Deep black with a dark brown, foamy head.

Aroma: First impressions are of cinnamon and allspice, combined with fruity banana esters and hints of clove from the Belgian yeast. As the beer warms in the glass, swirl it around and take in the aromatics one more time—caramel, dark toffee and molasses notes come into play as well. The end result is a wonderful juxtaposition of roasted malts, yeast esters and baking spices.

Taste:
Intense cinnamon, nutmeg and allspice with banana esters dominate up front. Hints of citrus arrive mid-palate, while molasses notes persevere in the finish along with a very nice dark-roasted malt dryness.

Palate: A full, but not sweet, extremely dry finish. Very complex with great flavor balance.

Overall: The aromas wafting through the brewery as we brewed this beer were amazing! We couldn’t think of a better way to sign off this Epic series of beers.

Smith Bowman Distillery Releases Limited Edition Bourbon

by AmandaWhaymand » Tue Oct 23, 2012 4:28 pm
Fredericksburg, VA. (Oct. 23, 2012) – A. Smith Bowman Distillery, a micro-distillery located just outside of Washington, DC, is releasing a limited edition, port-finished bourbon called Abraham Bowman Limited Edition Whiskey Port-Finished Bourbon. The barrel this bourbon was aged in has some unusual history to it – it aged bourbon for four years at A. Smith Bowman, then was emptied, shipped to a winery in Potomac Point, Virginia, filled with port, aged for two years, emptied again, then sent back to Bowman where it was filled in January this year with a seven-year-old bourbon before being dumped again and bottled in September.

“This barrel for this bourbon has some miles on it,” said Truman Cox, master distiller, A. Smith Bowman Distillery. “But it’s yielded some amazing results. The taste of candied apples, dark fruits and figs all come together to produce an easy drinking, all around enjoyable bourbon.”

Official tasting notes for the new Port-Finished Bourbon state the first pour gives the nose a treat with overlapping bright aromas. The flavors are initially plums and figs with the whiskey grains coming through on the mid palate. The finish is an amalgam of sweet dark grapes and dry spicy whiskey that leaves an enigma on the tongue.

The Port-Finished Bourbon is part of a collection of limited-edition whiskies released periodically by A. Smith Bowman. There are plans to release more limited-edition whiskies in the future, according to Cox, who took over as Master Distiller last year, and is eager to start crafting his own experiments, “The Port-Finished Bourbon is our fourth release in our limited edition series, and we have plans to ramp that up a little bit each year as we move along.” Cox aspires for each release to be a distinct expression, and with their limited availability, to be valued as a unique collector’s item.

The Abraham Bowman Limited Edition Whisky Port-Finished Bourbon will be available in very limited quantities starting at the end of October. It is 100 proof, seven years old, and suggested retail pricing is $69.99.

Laverstoke Park Farm Organic Beers

In stock now, from England

Laverstoke Park Farm Organic Ale...$12.99 / 4pk

Laverstoke Park Farm Organic Lager...$12.99 / 4pk
This traditional bottle conditioned ale has a remarkably full flavour and has been produced by master brewers utilising the traditional hops and barley grown on the farm. We now also produce an organic Real Lager brewed in a similar way to our ale and brewed with ingredients grown on the farm.

We have collected and grown old traditional hop varieties and selected the best combination of these for their aroma, and balanced them with additional organic hops, in this, our first beer. We are biodynamic and organic and go much further than both to produce excellent, flavoursome hops and barley. Our micro-biology lab continuously tests the soils, adding compost and compost teas so that the biology in the soil has the right proportions of beneficial bacteria and fungi for the hops and barley to be at their best and most flavoursome. This creates the deep flavours of the beer.

Hops used in our Organic Real Ale and Real Lager

We often get asked which hops we use in our beers and the answer is that we grow a wide variety of hops on the farm which are formulated in different percentages to produce our ale and lager. Among those we grow are Fuggles, Bodicea, Cobb's Golding, Northdown, Challenger, Farnham Whitebine and White Grape

Prices....

We know it is easy and very convenient to shop at the grocery store, you are already there buying your milk and bread, but at their prices, it is worth the special trip to The Wine and Cheese Place.    I have, of course, seen some sale prices that will periodically equal or slightly  beat our price, but usually with our mix/match case price, we are still cheaper.   You can be confident when you  shop at The Wine and Cheese Place that you are getting the best prices without having to chase down "on sale" or "one day sales."

We don't have the advertising budget that the big chains have, we ask you to tell your friends about our selection and prices!  Help us educated them and save them a ton of money over the course of a year.

Here is some proof...
Out tonight doing some grocery shopping and I walked down the wine aisle and was shocked at the price of Veuve Clicquot NV Yellow Label at Dierbergs.   I then stopped by Schnucks on the way home to check some of their prices.
Dierbergs: $68.99
Schnucks: $62.99 on sale,  regular $68.99
The Wine and Cheese Place: only $39.99.

Both of them also at Moet and Chandon Imperial at around $62 and our price is $38.   I decided to check a few liquors also and noticed...
Stolichnaya Vodka at $44.99 1.75 liter Dierbergs
The Wine and Cheese Place: $26.99 for a 1.75ltr
(our price will be changing soon, but it will still be under $30)

Price comparison
Dom Perignon Champagne
....$217.99 Schnucks (we are $83 cheaper per bottle!)

....$134.99 The Wine and Cheese Place

Stolichnaya Vodka 1.75
...$42.69 Schnucks
