This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety “Citra.” Citra hops are a relatively new variety introduced in 2008. It was bred as a hybrid of a number of different hops, including Hallertauer Mittelfrüh, U.S. Tettnanger, East Kent Golding, Bavarian, Brewers Gold, and other unknown hops. The resulting hop, Citra, has a distinct citrusy and tropical fruit flavor and aroma. In Citra ass down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma. Rebrewed for your tasting pleasure!

The brown ale to end all brown ales. Enjoy it, because there is no longer any reason to drink another. You’ve reached the pinnacle. A healthy blend of traditional British malts give this popular style a semi-sweet, biscuity, slightly roasted flavor. Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but we cocked it up a bit with some Cascade late in the boil just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.

Admiral Rodney Princessa HMS Princessa was originally a Spanish vessel captured by the British in 1780 at the battle of Cape St. Vincent. Captained by Charles Knatchbull with Rear Admiral Francis Samuel Drake abroad, this 70 gun ship of the line was one of the first ships to engage the French in the Battle of the Saints. Fighting valiantly, the Princessa engaged the enemy throughout the battle and inspired us to create this rum which embodies power and integrity. Rum Blend: Admiral Rodney Princessa contains Coffey still rum pulled off lower sections of the still resulting in a robust and complex flavor profile. This rum is aged from 5-9 years in Bourbon and Port casks before being blended together by our Master Blender. Tasting Notes: Deep mahogany color with honeyed raisins on the nose and a hint of vanilla and tobacco. Sweet with intense brown sugar, crème brulee tones balanced by dry toasty oak. Complex finish with good oak integration, caramel, and tropical spice.

With 8 men lost and 20 wounded, the Royal Oak played an integral role in the first skirmishes of the battle and encouraged us to create a rum of rarity, intensity, and boldness. Rum Blend: Admiral Rodney Royal Oak, the original Admiral Rodney blend, contains 7-12 year old Coffey still rum that has been aged exclusively in previously used Bourbon casks and blended to perfection. This rare rhum agricole vieux from Distillerie Poisson was aged in the tropical climate of Marie-Galante for eight years in 200L oak barrels. Evaporation loss reached 40% of the initial volume put into the casks – this means after eight years, 80 liters of rhum from each cask were lost to the angel' s share.
Rhum Père Labat is distilled on the island of Marie-Galante, part of Guadeloupe. The distillery, aging facilities, and the estate ' s sugarcane fields sit on 1300+ acres. Producing rum since the early 1900s, Père Labat utilizes estate and locally grown sugarcane varieties native to the island. As rhum agricole, these spirits are produced from fresh-pressed sugarcane juice rather than molasses. The distillery is the oldest on the island of Marie-Galante and houses one of of the oldest stills in the Caribbean.

Opus One had picked 91% of their fruit before the fires started in 2017, and only two lots were eliminated from consideration. The 2017 Opus One, bottled in July 2019, is a blend of 81% Cabernet Sauvignon, 8.5% Petit Verdot, 5% Cabernet Franc, 4.5% Merlot and 1% Malbec. Medium to deep garnet-purple colored, it slowly grows on the nose, revealing compelling notes of baked black cherries, mulberries, black raspberries, warm cassis and blackberry pie with nuances of spice cake, yeast extract, tapenade, licorice and dusty soil with a waft of wild sage. With that flavor profile in mind, we added Earl Grey Tea and Black Tea from Kilogram Tea, as well as clover honey from The Honey House, to make a Bourbon County Stout variant with a complexity like none before.

The limited-edition bourbon, released each year on the founder George Garvin Brown of Brown-Forman’s birthday, is made in hand-selected 11-year old barrels and chosen from one specific day of production – resulting in flavor profiles that vary every year and never replicated. Old Forester’s tasting notes for the 2019 Birthday Bourbon are: “Rich oak spice and blackcurrant coupled with light maple, caramel cake, and white floral notes.” This year’s Birthday Bourbon County Stout is a truly unique variation that is a must-have for bourbon and beer lovers alike.

Our Original Bourbon County Stout is aged in 4-5 year old barrels for one year, so the added age of these Weller barrels, paired with an extra year of the beer in the barrel, adds stronger barrel flavors and notes of dried dark fruit.

Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity.

Fantastic complexity and subtlety with light bread dough, lemon rind, spiced pear, aniseed and licorice on the nose. Full-bodied. Dense and silky textured. Ultra-fine bubbles. Flavorful and smooth finish. Drink and enjoy this late release.

The 2002 Dom Pérignon P2 is wonderfully open in its aromatics, but a bit less giving on the palate, especially next to the regular release. Lemon confit, white flowers, mint and white pepper open up first, followed by hints of apricot, honey, chamomile and light tropical notes. Interestingly, the P2 is quite a bit less tropical than the original release. Chef de Caves Vincent Chaperon told me he thinks the original release shows more of a buttery character because of the combination of the ripeness of the vintage and the natural evolution of the wine post-disgorgement under crown seal, as opposed to the P2 which stayed much longer on its lees. It is hard to know if that is an exact explanation, but the reality is that the two 2002s are quite far apart stylistically.

This graceful, bright Champagne features a chime of Meyer lemon peel and mouthwatering acidity, with finely meshed flavors of baked yellow plum, pastry, pickled ginger and smoke-laced mineral that intensify as they expand on the lightly mouthcoating and creamy mousse. Seamlessly knit, this is hard to stop sipping as it dances across the palate. Drink now through 2025.

The 2002 Dom Pérignon P2 is showing very well indeed, wafting from the glass with aromas of crisp yellow orchard fruit, dried white flowers, orange oil, smoky peach, peat and praline. On the palate, it's full-bodied, broad and textural, with a ripe and muscular core of fruit, ripe acids and fine concentration, concluding with a long and elegantly toasty finish. As I wrote earlier this year, this is a ripe and powerful Dom Pérignon that finds its closest stylistic analogy in the 1990 vintage, and it is considerably less evolved than the more tertiary 2000 P2 today. While the P2 is a bit drier and more precise on the finish than the original release, given the wine's slow evolution, the difference between the two is less pronounced than it has been for any vintage since 1996. To my palate, it really needs four or five years in the cellar before it truly starts to blossom.

Brilliant gold-flecked-amber in the glass, this Hungarian stunner hails from the Szt. Tamas vineyard located on one of Tokaj's most iconic hills. It has aromas of wildflower honey, ripe peach, honeysuckle blossom, freshly sliced apricot and acacia flowers. It is an ethereal blend of Furmint, Harslevelü and Muscat. Silky smooth on entry, it offers enticing flavors of white peach, apricot preserves, honeycomb and acacia honey. It has beautiful heft on the palate with balanced acidity and crisp minerality. The elegant sweetness is perfectly foiled by bracing acidity and crispness in the finish. This is how Hungarian Tokaj Aszü wine should be made. Drink through 2045.
