Education: Grape - Zinfandel

Wine Tasting at all FOUR locations

A little more education: We are going to try to feature either a grape or a wine region each week at our stores. We will give you some background information on the grape or region and feature a wine that highlights what we are featuring. We will taste that wine on Saturday at all four of our locations. Grape: Zinfandel


Zinfandel is a red wine grape variety widely cultivated in California. It arrived in the Americas from Europe in the early years of the 19th century, and was an immediate success in both Napa and Sonoma counties, which remain its strongholds today.

After 30 years of discussion and disagreements (including legal intervention by the Bureau of Alcohol, Tobacco and Firearms), DNA research carried out in California in the 1990s confirmed that Zinfandel is identical to Italy's Primitivo

Zinfandel has been used to make various styles of wine since it arrived in the United States, including dry and sweet red wines and the famous 'White Zinfandel' blush, created to cater for a white wine-drinking American consumer base of the 1970s. The arrival of this new wine style in the early 1970s led to an explosion of Zinfandel plantings – perhaps ironic given that the style of wine was created to find a use for the swathes of under used Zinfandel vines already in existence. We only carry one brand of White Zinfandel in the store but stop by on Saturday to explore a huge variety of amazing Zinfandels from California, including our perennial favorite the Seghesio Sonoma County Zinfandel.

Recipe of the Week: Zinfandel BBQ Sauce

Zinfandel BBQ Sauce

Ingredients:
  • 5 tablespoons butter
  • 4 to 6 shallots, minced (enough to make 1 cup)
  • 3 garlic cloves, minced
  • 3 cups Zinfandel  (that leaves 2 cups in the bottle for the cook)   ***
  • 1 1/2 cups ketchup
  • 1/4 cup brown sugar, or to taste
  • 1/4 cup honey, or to taste  ***
  • 1 tablespoon Sweet Sophie Maple Syrup  ***
  • Salt and freshly ground black pepper   ***

Directions:

Melt the butter in a heavy saucepan. Add the shallots and garlic and cook over moderate heat until just beginning to brown, 3 to 4 minutes, stirring with a wooden spoon. Add all but 3 tablespoons of the wine and boil over high heat until reduced to about 2/3 cup.

Reduce the heat and stir in the ketchup, brown sugar, honey, Sweet Sophie, salt and pepper. Gently simmer the sauce until thick and richly flavored, 10 to 12 minutes, adding the remaining 3 tablespoons wine after 6 minutes. Correct the seasoning, adding salt and pepper to taste.




This sauce is great for basting or marinating before grilling but also makes a great dipping sauce for your favorite finger foods.

We love to rave about our Distiller's Gin No. 6, but we didn't stop there. We also created another gin - Distiller's Gin No. 11 - which appeared for the first time in March 2007. This gin is based on the traditional London Dry Gin profile. If you are a fan of abundant juniper flavor, this may be your new favorite gin. We created No. 11 for those looking for a warm round nose, and an unmistakable dry gin flavor.

The botanicals in No. 11 add fullness to the gin without taking away from the leading role of the juniper berries. The balance is remarkable and lends itself well to classic cocktails from when gin was king.

A Rare Creation - U.S. Made Aquavit
North Shore Aquavit....$29.99 / 750ml

Most common in Scandinavia, aquavit is a truly enjoyable spirit. In that part of the world, you can find many small and large-batch aquavits with widely varying flavors. In the U.S., the selection is far more limited. In Chicago, we have only found five aquavits (and only 3 are common), all of which are imported. We thought it was high time one was produced on this side of the ocean.

By the U.S. government's definition, aquavit's dominant flavor must be caraway seed (most commonly found in rye bread). Beyond that, the distiller uses his or her own artistic flair to add additional flavors and qualities to the spirit.

Aquavit - Private Reserve has a complex balance of spices and flavors. We begin with hand-selected botanicals from all over the world, including caraway, cumin, and coriander. These botanicals are macerated and distilled with the alcohol, and we age the spirit in new American oak to soften and meld the flavors. Unlike other aquavits, we do not add caramel coloring. All of the flavor and color is natural, and are the direct result of our process.

Enjoying Aquavit - Private Reserve

This spirit received 95 points - Exceptional Rating from the Beverage Testing Institute in November 2008 and was the Highest Rated Aquavit
Tasting notes: "Yellow straw color with a chartreuse cast. vibrant and stimulating aromas of pink peppercorns, cardamom, lemongrass, medicinal roots and herbs, and sandalwood follow through on a silky entry to a dryish medium-to-full body with a touch of tilled earth a long, spicy fade. Excellent flavor, purity and depth.
This spirit also received a Gold Medal in the 2007 San Francisco World Spirits Competition, and in July 2008 the folks at Spirits Review awarded it a 9 out of 10, and described it as "[i]ncredibly smooth and seductively aromatic - especially for an aquavit."

Absinthe has always been a favorite spirit at North Shore Distillery - first as a curiosity on our world travels, then as a fascination. We have tasted many variations and have been working on our own recipes for years. Now that is possible to actually introduce one to the market, we are excited to share this incredible absinthe with you.

Creating Sirène
We take a traditional approach to creating Sirène. We use the traditional trinity of absinthe ingredients along with a proprietary blend of additional herbs and spices to create Sirène's richness and complexity. The process requires a significant amount of time, preparation and botanicals, but the result is worth the effort.


Enjoying Sirène Absinthe
Absinthe is traditionally enjoyed in a drip. Pour about an ounce of absinthe in to an absinthe glass or a rocks glass. Then place an absinthe spoon on the glass and place a sugar cube (optional) on the spoon. If you do not have an absinthe spoon you can just add simple syrup to your absinthe. Then you drip ice cold water over your sugar cube and in to the absinthe. You can use an absinthe fountain or simply a carafe of ice water. We recommend having your first drip with three parts water and one part absinthe. Then adjust the water next time to your personal taste.

O’Fallon brewmaster Brian Owens created Zeke’s because he wanted a smooth and relatively easy to drink beer with a rich, full hop aroma and flavor.
“The tastes and demands of craft beer drinkers are evolving quickly, and people now are looking for big flavor in beers that aren’t too high in alcohol and are lighter than most craft beers,” said Owens. “We wanted Zeke’s to be special so we used only Galaxy hops which produce a really citrusy flavor and an amazing aroma.”  Zeke’s Pale Ale is brewed with two-row, Bonlander and Honey malt. Galaxy hops are added at the very end of the boil in a technique called burst-hopping that allows the beer to gain the hop flavor and aroma with just the right balance of bitterness. Whereas most red blends are created from separate lots and combined before bottling, Carne Humana was co-fermented and barrel aged as a single lot for greater depth and integration.
This wine was aged in a combination of new and seasoned French oak barrels for 18 months.

Tennessee Whiskey Legend, Marvin “Popcorn” Sutton was a third generation Moonshiner that lived and distilled his whiskey in Cocke County, Tennessee, but also claimed North Carolina as home.  Popcorn was well known throughout the South and beyond for making the best damn “likker” anyone had ever tasted. Popcorn lived life on his own terms, did and said whatever the hell he wanted and always had a trick up his sleeve.  On March 16th 2009, while facing 18 months in federal prison for making moonshine (not paying taxes on his whiskey), he decided to take his own life rather than go to prison.  Popcorn believed in his whiskey and the traditions he lived and ultimately died for. Even in the midst of his impending prison sentence, he managed to ensure that his life’s work would continue by passing on his whiskey-making tradition to me.  Popcorn knew he was the last true moonshiner and before his death, he taught me, “The Grocery Boy”, his secret recipes as well as the tradition and craft that made his whiskey world-renowned.  Celebrating the legacy of a whiskey making legend and my mentor, I’m proud to bring you America’s Rebel Spirit exactly the way Popcorn made it.

Recipe
Popcorn’s Southern Sweet Tea
-11/4 parts Popcorn Sutton’s Tennessee White Whiskey®
-4 parts sweet iced tea
-1/2 part fresh lemon juice
-1 part Sierra Mist®
Pour all ingredients (except Sierra Mist®) into a highball glass filled with ice. Top with Sierra Mist®. Garnish with a lemon wedge.

Popcorn’s Old Fashioned
-2 parts Popcorn Sutton’s Tennessee White Whiskey®
-1 part Sierra Mist®
-1 sugar packet
-1 orange wedge
-1 cherry Pour all ingredients into a highball glass. Muddle thoroughly. Fill with ice and top with Sierra Mist®.

Popcorn’s White Lemonade
-1 1/4 parts Popcorn Sutton’s Tennessee White Whiskey®
-1 part fresh lemon juice
-3/4 part simple syrup
-2 parts Sierra Mist®
Pour all ingredients (except Sierra Mist®) into a highball glass filled with ice. Top with additional ice and Sierra Mist®. Garnish with a lemon wedge.

Popcorn’s White Manhattan
-2 parts Popcorn Sutton’s Tennessee White Whiskey®
-1/2 part sweet vermouth
-3/4 part agave nectar
-2 dashes angostura bitters
Fill mixing glass ¾ full with ice. Pour ingredients in order listed and stir until well chilled. Strain into a martini glass. Garnish with a orange curl and maraschino cherry.

Popcorn’s Tennessee Spring Tea
-1 1/4 parts Popcorn Sutton’s Tennessee White Whiskey®
-3/4 parts peach schnapps
-3 lemon wedges
-3/4 parts agave nectar
-6 mint leaves
-Iced tea
Combine all ingredients in a mixing glass(except iced tea) and muddle. Add ice, fill with iced tea. Garnish with lemon wedges.

Popcorn Julep
-2 parts Popcorn Sutton’s Tennessee White Whiskey®
-4 mint leaves
-2 parts agave nectar
-Sprite®
Combine all ingredients in a mixing glass(except Sprite®) and muddle. Add ice, fill with Sprite®. Garnish with a mint sprig.

Popcorn’s Light of the Moon

-4 parts sweet & sour mix

-Coca-Cola®

In a blender, combine sweet and sour mix, triple sec, Popcorn Sutton’s Tennessee White Whiskey® and Grand Marnier. Blend until smooth. Pour into lowball glass with ice. Garnish with a quarter lime.

Great Italians....





2008 Felsina Fontalloro Toscana...$45.99
The 2008 Fontalloro is the yin to the Rancia’s yang. It is also characteristically beautiful, open and expressive at this stage. Layers of sweet red fruit, flowers and spices blossom effortlessly from the 2008 Fontalloro. The intensely saline finish that is present in the Rancia is found in Fontalloro as well. I am usually not the biggest fan of Fontalloro, but there is no denying the superb pedigree and sheer class of the 2008. This is a wonderfully, sophisticated, polished wine from Felsina. In 2008 the slightly drier microclimate at Fontalloro vis-a-vis Rancia is the main reason this wine is such a huge success in 2008. Anticipated maturity: 2013-2026.

2011 Felsina Berardenga Chianti Classico...$21.99
The 2011 Chianti Classico is absolutely impressive and is one of the best base Chianti Classicos I have tasted from 2011. You feel the ripeness and heat of the vintage, but this wine also delivers surprising finesse and complexity. Black cherry and baking spice mingle on the bouquet. Soft tannins wrap around the palate. Anticipated maturity: 2015-2025.

Author James Fenimore Cooper gave the name 'Glimmerglass' to the beautiful body of water that graces Cooperstown. Nestled between gentle mountains, it reflects any object held up to it, just as it reflects our joy at the arrival of each spring.
Deep straw to light amber in color with a thick, pure white head. The saison yeast strain gives off fruity aromas of pear, apple and slight citrus balanced with a delicate floral hop character and a touch of spiciness. Taste is very clean, with pronounced fruit flavors, delicate bready malt followed by welcomed spicing. Crisp finish with lingering yet subtle notes of yeast and touches of fruity pepper.
