"I began distilling in 1972, just three months after moving to Nederland, Colorado from Missouri at the age of 22....
Tincup is my take on classic American Whiskey.  I wanted to make a whiskey with a bourbon style profile, but with a more powerful and spicy flavor.  Tincup has a high rye mash bill, so it's got great spice and pepper notes, but balanced with the sweeter notes from bourbon.  It's made using Midwestern grains, aged in new American white oak barrels and cut with Rocky Mountain water.  The name is a nod to Colorado's first whiskey drinkers - the miners that came through looking for gold and drank their whiskey out of tin cups.  The cap works as a cup too -- you can us it to share with friends.  I drink it neat, with a bit of water, or an ice cube.  I hope you like it." -- Jess Graber

"A blend of one, two, three and four-year old lambic, fermented and matured in oak casks by wild yeasts carried on the open air.  During re-fermentation the younger yeasts have inexplicably gone dormant - knocked off early for a long snooze, you might say - which halts the fermentation, assuring that you will taste the original flavors of the lambics in their purest form.  Doesjel, in Flemish, means, roughly, "Snoozer."    This Doesjel will pour without a foamy head, exactly like unblended lambic.  Lambic is brewed from 60% barley malt, 40% unmalted wheat, hops and water.

For decades, Armand Debelder has worked as a Geuze blender - as did his father - mixing young and old lambics from other lambic brewers to create the classic beer of Belgium.  Recently, Armand has started brewing his own Lambic.  The 3 Fonteinen beers are among the very few traditional and authentic Geuzes and Lambics being made in Belgium today.

Iris is made in the style of lambic – fermented by wild yeasts and aged in oak wine casks at the brewery – but with a couple of big differences. First, it is made entirely from malted barley, whereas traditional lambic uses one third unmalted wheat. In addition, the brewery has used fresh Hallertau hops in the boil and for dry-hopping the Iris. (Traditional lambic calls for hops that have been aged for several years, which impart virtually no hop flavor to the finished product.)  Iris is a rare and unusual treat to thrill the connoisseur of traditional Belgian beers – absolutely, utterly unique.

Saison Dupont Cuvee Dry Hopping 2014...$9.99 / 750ml
Every year Dupont’s Master Brewer, Olivier Dedeycker, makes a special dry-hopped version of the brewery’s world famous Saison Dupont. This lets him take advantage of different hop varieties each season. For 2014, he chose the famous English hop, CHALLENGER, renowned for its balance of bittering and aromatic qualities. Importantly, they were cultivated in Belgium by the farm that supplies Olivier’s Golding hops. Using only hop flowers (no pellets, please), he added them to the late boil and dry hopped in cold maturation. The result is “a super refreshing saison with accentuated floral, spice and citrus hop notes. Cheers!”
A bit of background…The first dry-hopped edition ever to comes to the States (2013 edition 98 on RateBeer) was a huge hit. We had only about half the quantity the market could have absorbed.

Originally called "Ouden Tripel", this ancient West Flanders Brown beer has found a new élan as a regional specialty under its current name: "VanderGhinste Oud Bruin".

The main ingredients of our Vanderghinste Oud Bruin are malted barley, wheat, hops, water, and caramelized malts. These are used to brew a top-fermented beer.

Blending this beer with lambic beer aged in oak for 18 months results in this specific West Flanders Brown beer. Its typical flavour is characterized by a well-balanced, hardly noticeable sourness.

This first flavour impression is soon followed by a second pleasant discovery: a slight bitterness followed by a hint of sweetness.

Gyle 682: "This Dark Island Reserve was brewed on 24th September 2013 and enjoyed a long, cool fermentation to 10% Alc/vol .  This small yield was then matured in refill hogshead previously used to mature fine single malt whisky from the far North of Scotland.  The 3,750 bottles produced were bottled on 15th November.  Classic dark Island aromas of smooth roast malt, dark chocolate, figs and dates combine with vanilla, spice and bitter range aromas from the wood and the whiskey." -- bottle

As many of you know, Shelton Brothers was not available in Missouri for about 3 years.  Upon their return, they asked brewer extraordinaire, Mikkel of Mikkeller, to brew a beer for Missouri to announce their return.   Well, we are lucky that he said yes.  This is a special brew, brewed only for Missouri and it has finally arrived at The Wine and Cheese Place!


"A Quad / Lambic" Blend
It's a combination of Monk's Brew and their lambic-style beer base for the Spontan series.



"The beer is a blend of an Abbey style and Spontan lambic. We had done a blend of saison and spontan for a special winter release (winbic) and I wanted something tending toward sour for this beer...but did not want the price of 100% spontan....hence Show Me Cuvee." -- Mikkel

Maurin Quina Liqueur




Maurin Quina Liqueur...$35.99
An Italian born artist later created the infamous icon of the green devil as the label for Maurin Quina.
Created in 1884 by Mr. Auguste Maurin in Le Puy. A sweet white wine fortified with an infusion of wild cherries and quinine in a neutral grape spirit, with measured amounts of cherry brandy, lemon and cherry juice added.  Production stopped in 1906 and only has been recently introduced.

TASTING NOTES
Delicate red hue, the subtle wine background elevates an array of tamed wild cherry flavor with light lemon and almond notes.

Quina and Quinine
Blanco tequila combines with cherry-marzipan notes of the Maurin Quina for this light and refreshing tall sipper from Los Angeles bartender, D. “Max” Maxey.

1 3/4 oz. blanco tequila
1 oz. Maurin Quina
1/2 oz. agave syrup
1/2 oz. fresh lemon juice
Tonic water
Ice cubes
Tools: shaker, strainer
Glass: Collins
Garnish: lemon horse-neck peel

Combine all ingredients, except the tonic water, and shake with ice. Strain into an ice-filled Collins glass, top with tonic water and garnish.

"Even though this beer has been called the hoppiest in the world numerous times and even though it was debated vigorously on beer blogs prior to its release date around the world, the story about the IBU 1000 cannot be told properly without the information that Mikkellers intention was never solely to brew a beer with an extremely high IBU. The purpose of this project was to brew a beer with an impressive IBU that at the same time was relatively easy to drink. And that is exactly what Mikkeller has done with this beer.
Because – believe it or not – this beer is actually very well balanced. Residual sweetness contrasts nicely with the bitterness from hop and the result is a beer, that is much easier to drink than what you would assume.

The name IBU 1000 refers to the theoretical IBU of this beer. There are physical limits to how much bitterness beer can soak up. For the benefit of those especially interested in the process of brewing we can tell you that 6½ kilogram of alpha-acid extract was used og 10 kilograms of simcoe-pellets per 1000 liters beer! As befitting our innovative nature, the Courvoisier Connoisseur Collection are the first releases from one of the major cognac houses to be graded by an age declaration, like whisky, rather than the more conventional grading of cognac, like VS, VSOP and XO.

Courvoisier 21 Year Old features unique and extraordinary cognac not less than 21 years old, allowing the maturing cognac to blossom and achieve its full aroma and flavour potential.

This cognac contains the finest eaux-de-vie from the Grande Champagne cru, the most exclusive in the Cognac region, that have been aged in our warehouses for over two decades in hand selected Tronçais oak barrels. 21 years is the perfect time for these specific eaux-de-vie to develop their full richness and heightened aromatic style.

On the nose, the first notes are dried hazelnut, dried apricots and figs, followed slowly by notes of cocoa, honey and smooth spices like white pepper and coriander. The finish brings subtle notes of leather and fine cigar.

On the palate, the aromatic notes deepen into candied orange and gingerbread, leading to a smooth and voluptuous finish with exquisite depth that seems to go on forever.

A wheated bourbon with a full-bodied flavor and a balanced palette. Old Weller Antique is bottled at 107 proof, offering a complex taste and bold finish. It’s certainly a recognizable member of the Weller label, with its own unique characteristics to compliment the high proof.

Sweet and unusual floral notes and coupled with vanilla. The taste is very well balanced with sweet fruit notes, strong vanilla undertone and sharp spicy tones, with a cinnamon finish.
