Moving to the 2020s, which were still in barrel, the estate commented that this was an early vintage, and the wines are slightly less concentrated due to well-timed rains. The 2020 Côte Rôtie Amethyste showed beautifully, with an exuberant, perfumed bouquet of violets, cracked pepper, spring flowers, and raspberries. This medium-bodied, elegant, incredibly satisfying Côte Rôtie would be a great introduction for readers looking to understand the style of this terrific estate.

TWCP got a VIP tour with John Wadell, head taster at Peerless. He selected 6 very special barrels for us to try. Not your ordinary barrel picks where they just randomly select barrels, he selected 6 barrels that he deemed were the best barrels and slated to be Single barrel releases to sell at Peerless' gift shop. All of these barrels will be single barrels they will sell at Peerless except the one we picked!!!!!! We got to pick the best of the bunch and the other 5 will be sold at their shop.

Departing from our usual high-rye bourbon mashbill, we turn to Red Turkey Wheat, an heirloom variety grown in the American Midwest, not bred for yield but for flavor. A classic 19th-century grain, Red Turkey Wheat brings a soft, sweet profile to this wheated Bourbon. First released in 2021, we were so pleased with the results that it has now earned a wider release, making this distinctive whiskey more broadly available. Aged for five years, this whiskey opens with aromas of orange marmalade, cotton candy, and warm bread, followed by a citrusy brightness, light nuttiness, and a smooth, grain-forward finish. Unlike most wines in this category, Lucien Le Moine’s Bourgogne Rouge is sourced from village vineyards in the Côte D’Or, resulting in a serious, structured wine. We recommend decanting it 30 minutes ahead. Deep, ruby color leads to a rich and complex nose of black cherries and earth, with intense fruit flavors and an endless finish. The tannins are rich but supple, polished by nearly two years’ aging in wood. A brilliant Bourgogne Rouge – it transcends the category. Perfecting our process one cube at a time
High quality ice starts with high quality ingredients. We first filter our water to remove as many impurities as possible. The filtered water is then passed into our Clinebell machines, which utilizes a remarkably strong process called directional freezing that removes every last impurity and air bubble, resulting in crystal clear 300lb ice blocks. Using a combination of chain saws and heavy duty band saws, we cut and polish each and every cube by hand.

As a bartender working in St. Louis, I was always disappointed by our lack of access to this sort of ice. I took it upon myself to freeze and cut ice using a knife and hammer for our services, because I truly believed it made a difference.
