Non-GMO heirloom grain Jimmy red corn is a typically rich and sweet corn with a little more aromatics. The Brasetto rye is used for the nutty, spicy and fruit notes of this grain. The malted barley grown in the US, especially in the Midwest, tend toward a soft grassy note. The blend used is perfect for adding to the richness of the heirloom Jimmy red. The crops are grown in the Midwest at Ford county 1 and Stumpf Farms. They are irrigated and mashed/fermented with limestone water like traditional bourbons. This particular whiskey is mashed, fermented and aged together. This came together nicely and the flavor at this proof is such that it is being offered uncut.

- The colored tequila shelf talkers are taken from "Tequila Matchmaker." Different colors represent different NOMS as many brands can be made at the same place. A good NOM is like a good wine importer, you can trust the products from there. Cool colors mean they come from the highlands (more citrus and fruit flavors), warm colors mean they come from the valley (more spice and agave forward).

A barley wine aged for 2 years in oak barrels at our Bermondsey Vault. The long maturation has allowed it to really develop, round, and acquire a tannic hit of oak to balance out the weight of the beer.
It’s also the first in a series from the Vault that we hand bottled (of course bottle conditioning) to allow it to continue maturing nicely in your cellar for however many years you choose. Moor Beer was reborn in 2007 when Californian Justin Hawke purchased the defunct business and created what has become one of the world’s top rated breweries.
