The BCS team created this unique blend by selecting a diverse set of whiskeys sourced from both the United States and Canada, with some barrels aged for as long as 25 years. Each of these whiskeys was then meticulously finished in a distinct rum cask originating from one of three Caribbean nations—Jamaica, Barbados, or St. Lucia—imparting unique tropical and molasses-driven characteristics to the spirit. After the individual finishing processes were complete, the team skillfully blended the various components, harmonizing the bold spice of the whiskey with the rich, exotic sweetness of the rum casks to create a complex and layered final expression.

TWCP got a VIP tour with John Wadell, head taster at Peerless. He selected 6 very special barrels for us to try. Not your ordinary barrel picks where they just randomly select barrels, he selected 6 barrels that he deemed were the best barrels and slated to be Single barrel releases to sell at Peerless' gift shop. All of these barrels will be single barrels they will sell at Peerless except the one we picked!!!!!! We got to pick the best of the bunch and the other 5 will be sold at their shop.

Perfecting our process one cube at a time
High quality ice starts with high quality ingredients. We first filter our water to remove as many impurities as possible. The filtered water is then passed into our Clinebell machines, which utilizes a remarkably strong process called directional freezing that removes every last impurity and air bubble, resulting in crystal clear 300lb ice blocks. Using a combination of chain saws and heavy duty band saws, we cut and polish each and every cube by hand.

As a bartender working in St. Louis, I was always disappointed by our lack of access to this sort of ice. I took it upon myself to freeze and cut ice using a knife and hammer for our services, because I truly believed it made a difference.
