Cannot believe the time has come!  The first Side Project release is safe and sound at the store.
Protected by 24 hour armed guards, laser motion detectors, locked in a vault, thumbprint access to the vault :)  ....................

Many have been asking, how long will purchase count for the Merci bottle release, I will print the report Tuesday.  So you have until 7pm Monday, January 26 for purchases to count towards the the bottle release of Merci.

Also, do not forget, beer reservations will not appear on your account if you have beer to pick up.  It must be picked up and rung through the register.
The bottle release is based on BEER sales only.

  • You will be allocated a bottle to purchase that night.  Bottle price is $29.99 / 750ml
  • You will get a Side Project Glass that you get to take home with you.
  • You will get to taste the new Side Project Merci in your new glass
  • We will have cheese out to sample during the event
  • The event will be held in our upstairs tasting room.
  • You can show up anytime between 4pm and 5:45 to get your taste.  Stay as short or as long as you like.   
  • Cory King will be on hand to answer any questions (Karen is going to try to make it also)
If you get an invite and cannot or do not want to attend...

  • You can give your place to a friend if you like.  Your proxy can pick up your bottle for you.
  • You can pass on the release party and still get your bottle.  You will have 7 days to pick up the bottle after the party day.  You must tell us you are not coming to the party.
  • If you sign up for the party and do not attend, you will lose your allocation.  We want to make sure to use all the tickets.  Just let us know you will not attend so we can pass on the ticket to someone else.


Next week we will send the email out to others that will receive a bottle allocated to them of the Merci

We have been patiently waiting for our first Side Project release.  Looks like the first beer put in barrel by Side Project for The Wine and Cheese Place was back in June 2013 according to my notes!.   Those barrels are still ageing and waiting for the perfect time for release.  We are excited to announce that Cory and Karen King have made a special release for The Wine and Cheese Place (these were not any of our barrels that we supplied).    They are calling it "Merci" for Thank You and we would like to say Thank you to them also for doing this!   It is a pleasure working with them and has been for many years now.  Looking forward to many more releases.

Brian 'Stillwater' Strumke came to Kentucky for a second time to brew this unique saison. Brewed with house smoke malts (featuring sage smoked and pecan smoked malts) and finished with Brettanomyces, this saison is a beautiful piece of art. Bright and fruity, in saison fashion and a light tinge of earthy smoke round this farmhouse ale out.

2009 Foreau Clos Naudin Reserve Vouvray Moelleux...$99.99
What there was in this vintage of botrytis, Foreau reports, essentially went into his 2009 Vouvray Moelleux Reserve. Brown-spiced pear liqueur and quince preserves dominate the proceedings – wreathed in perfume of freesia and lily – and there are buoyancy and elegance, despite viscosity, enormous richness of texture and residual sweetness, that indeed point to the magic nobility rot can convey. Its sense of lift – when combined with luscious, still juicy suggestions of grapefruit and blood orange familiar from the corresponding demi-sec – wards off any risk of palate fatigue. Mysterious botrytis manifestations of stale bread, truffle, and white raisin emerge from the empty glass. This extraordinary achievement will stand with such past great Foreau moelleux reserves as 2005, 2003, and 1989-90 and is likely to merit 30 or more years of consideration. In direct comparison, what strikes one about the 2005 today is its more obvious sense of botrytis and its slightly diminished sense of acidity and lift. But it maintains the edge in sheer complexity.

One of the earliest references to mead can be found in the Hindu's of India's holy books, the Veda books, which date back 4000 years and possibly even earlier than that.The oldest known recipe for mead to be written down in the Nordic countries was in 1520 by the Archbishop Olaus Magnus. Dansk Ribe Apple Honey Mjod...$27.99
Ribe Mjod is brewed in celebration of Scandinavia’s oldest town - Ribe, 1,300 years! The recipe is prepared in cooperation with Ribe Viking Centre.

Ribe Mjod is a dessert honey wine that can be enjoyed cooled or at room temperature. Ribe Mjod ages well. there may be some natural yeast sediments on the bottom.

Same honey base as Viking Blod/ Klapojster Mjod/ GI Dansk/ Vikingerness with the addition of fresh, unfiltered & unpateurized apple juice (local apples) added to the mix of honey and water.

After that it is then transferred to fermentation tank and fermented around 6 weeks. Then transferred to maturation tank to which hops (as bitter = balancing agent) is added (same process as with Viking Blod/Klapojster Mjod/GI Dansk Mjod/Vikingerness Mjod). It is then racked for a second time for about 10 days.
