"For the third installment of Boulevard Brewing Company's Smokestack Collaboration Series, Boulevard brewmaster Steven Pauwels joins forces with the husband-and-wife team of Dann and Martha Paquette, the driving force behind "gypsy brewer" Pretty Things Beer & Ale Project.  Together, the brewers have produced a modern version of the traditional English Ale known as "Stingo."  This rarely-seen, barrel-aged style originated in the north of England, with historical references dating back to the 17th century.  The name itsel if a slang term for sharp, old beer, so called because it "stings" the palate.  The Paquette's own experience brewing in Yorkshire inspired the unusual choice, suggested to Pauwels (fittingly enough,) over a beer at the American Craft Beer Festival in Boston.
Pretty Things beers originate from Somerville, Massachusetts, but don't go looking for the front door of the brewery.  A self-described "project," Dann and Martha formulate and produce their beers as "tenant brewers" in host breweries throughout their region.  More of their story, along with descriptions of all their eclectic beers, can be found at prettythingsbeertoday.com

Colonel E.H. Taylor Single Barrel...$56.99 / 750ml
Colonel Taylor is widely considered one of the founding fathers of the bourbon industry, fighting for the Bottled-in-Bond Act of 1897, nearly three decades after he purchased the now Buffalo Trace Distillery. During his time, Taylor implemented several innovative methods still used today, such as climate controlled aging warehouses. In addition to his bourbon interests, Taylor had political ties. He was the great-nephew of President Zachary Taylor and elected the mayor of Frankfort, state representative to the Kentucky General Assembly and a member of the State Senate.

E.H. Taylor Single Barrel is aged exclusively in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. This bourbon whiskey is very delicate. The aroma carries lightly toasted oak, with dried figs and butterscotch. The sweetness on the tongue remains balanced with tobacco and dark spices that finish just long enough to prepare the palette for another sip. The bottle itself replicates Colonel Taylor's original design used over a century ago.

What is Heritage Breed? Basically many of these "heritage" breeds of chickens (and other animals) were becoming threatened because the large egg producers were favoring chickens that produced a quantity of eggs and not quality. To quote The American Livestock Breeds Conservancy (ALBC), "Modern food production now favors the use of a few highly specialized breeds selected for maximum output in a controlled environment. Many traditional livestock breeds have lost popularity and are threatened with extinction. These traditional breeds are an essential part of the American agricultural inheritance." Some of the Heritage breeds that Dry Dock has includes: Ameraucana Chickens - "Easter Egg Chicken" -- produces blue and green eggs Barred Plymouth Rock Chickens -- Brown Eggs - pre-World War II - this was the most popular and most likely the eggs being eaten. “A classy effortless delivery. The corn-rye integration oozes sophistication and the vanilla-themed oak offers the perfect background. Immediate bitter sweet character celebrates both a raisin-fruity juiciness and a much firmer, burned-honeycombed middle; complex, classy and challenging; thuddingly firm with limited yield. Spices from the rye try to probe the wall but this is the metalled hoof a Kentucky thoroughbred; a very different bourbon that ticks the boxes as they should but throws in a few curve balls for the palate to negotiate.”

The high quality expensive taste of Benjamin Prichard’s Double Barrel is no accident. Our bourbon is created using a unique, labor intensive and yes, expensive process. Bourbon is generally barreled at a relatively high 125 proof. However, the final bottle proof may be as low as 80. The question then is “How does the bourbon get from 125 proof to 80 proof?” The answer is that the whiskey has been watered down before you screw off the cork and water dilutes flavor. Our bourbon is taken from 120 proof to 95 proof and re-barreled in new charred oak barrels to reinforce the barrel notes that bourbon is so famous for. To our knowledge there is no other distillery that utilizes this process. Sweet Lucy’s legacy has been flowing up and down the Mississippi flyway for years, warming the bodies and souls of outdoorsman for generations.
