The 2012 Gevrey Chambertin 1er Cru Clos Saint Jacques from Louis Jadot, which has deepest in colour of the five growers, the has entrancing purity on the nose: dark cherries mixed with cranberry leaf, bergamot and minerals all beautifully defined. The palate is medium-bodied with supple ripe tannin, quite a firm grip in the mouth, the result of a firm backbone. I actually thought this might have been Sylvie Esmonin's Clos Saint Jacques.

Tasting note: A beautifully complex and airy nose features ripe aromas of exuberantly spicy plum, violet, sauvage and essence of red currant. There is a very round and velvety mouth feel to the delicious medium weight flavors that somehow manage to retain a good sense of delineation and energy on the overtly mineral-inflected and wonderfully long finish. I very much like the sense of harmony where the fine-grained tannins add to that impression. This should be excellent in time though note that it will require a minimum of 10 years of cellar time before this is approachable and another 5 to 7 before it arrives at its peak.

Tasting note: There is a lovely spice element to the ripe and fresh nose of red currant and plum aromas that are trimmed in just enough wood to notice. The lush, even suave medium-bodied flavors possess good mid-palate concentration before terminating in a clean and dry in the best sense finish that delivers moderate persistence.

Tasting note: Reduction and wood toast dominate the nose at present. By contrast there is excellent richness to the full-bodied and suave medium-bodied flavors that tighten up quickly on the balanced, complex and impressively persistent finish. This appears to be the best wine in 2015 range among the Mongeard villages cuvées.

2015 Mongeard-Mugneret Vougeot 1er Cru Las Cras...$85.99
Tasting note: Here too the wood is moderate but not dominant as it allows the earthy plum and floral-scented nose to be appreciated. There is a beguiling texture to the saline and detailed medium weight flavors that offer good length on the balanced finish but not quite the same overall complexity. Even so this is certainly attractive.

The vines for the César range from 55 to 100 years old and the grapes are hand-picked

The Cuvée Cesar is one of Vincent's top wines. His very old Grenache vines produce a wine packed with black raspberry, black pepper, with hints of cassis fruit, all supported by firm ripe tannins. In the nose plum, red and black cherry, and garrigue spices mingle together. While the “Cuvée César” is a relatively lush and generous wine, it is also a wine built for the long term. So drink it now with a nice steak au poivre, or wait a few years and try it with venison or duck breast.

This is one of the rare, pure Cabernet Francs from the vineyards around Minervois. After the grapes are harvested they are 100% destemmed, crushed, then fermented and aged in tank before bottling. The grapes are sustainably farmed, and vinified using indigenous yeasts. There is no oak aging for this wine. 
Tasting Notes: Rémi Bonnet produces a delightful Cabernet Franc. This wine avoids many of the pitfalls often associated with the grape, but remains a true expression of the varietal. It is a lush, silky wine, that has a great versatility that allows it to complement a wide variety of foods. In the nose blackberry, blueberry, and black cherry notes mix with just a hint of subtle white pepper spice. In the mouth the wine is simultaneously rich and soft, dominated by black fruit flavors. The satin textured finish is complimented by ripe round tannins. This wine is ideal for pork, turkey, hamburgers, or even pizza.

Vines average 40 years in age. The grapes are harvested by hand with a hand triage to select only the best quality grapes. 
Again in 2016 the Graniers decided to continue to increase the percentage of Syrah in their blend. This increase has given the wine added depth and concentration, without sacrificing balance in the wine. In the mouth, rich blackberry notes give way to red cherry and black pepper spice. Even with the increased percentage of Syrah, the tannins are very supple and round in the finish. This is a classic example of a Côtes du Rhône, ideal for backyard barbeque, burgers on the grill, or even pizza

2015 Mas de Brunes “Cuvée des Cigales” – Vin de Pays Côtes de Thongue...$17.99
Blend: 55% Syrah, 35% Grenache, 10% Carignan

Tasting Notes: “Cuvée des Cigales” is completely dominated by black fruit. The nose is full of deep blackberry and plum aromas. In the mouth black cherry and blackberry flavors mix with the exotic and complex spice flavors from the Carignan. This is a burly, muscular wine with a lot of character. While an ideal match for grilled meats and game, we also enjoy this wine with the more complex, spicier flavors of barbecue and chili.

"Claude and Isabelle Bertrand have utilized some of her brother Bruno Granier's ancient Carignan to supplement the 60% Syrah and 30% Grenache in their 2007 Cuvee des Cigales from the Cotes de Thongue. But even a "secret ingredient" that concentrated (as witness my reviews in this report of pure Carignan from Granier's La Font de l'Olivier) can at 10% level only go so far in explaining the striking personality of the Bertrand's wine, which gives me a "who turned out the lights?" feeling, followed by an enchanting romp in some very dark territory. Humus, peat, plum paste, dark chocolate, and game share billing with implosively intense, lightly-cooked blackberry and mulberry. The only drawback here is a hint of heat and rasp of tannin accentuating a bite of black pepper in the persistent finish. But this should prove fascinating and versatile over the next several years." - The Wine Advocate

The 2015 Chateauneuf du Pape is a great effort that should be reasonably available. Produced from vines under 30 years old, it's a blend of 85% Grenache, 5% Cinsault, 5% Mourvèdre and 5% Syrah. There's a tinge of chocolate to the raspberry and licorice flavors but also hints of orange zest, cinnamon and clove. It's full-bodied and lush, with a long finish. There's no need to defer gratification, but it should drink well for at least a decade.

Carignan at one time was the most widely planted grape in France. Today however, it is rare to see it bottled as a single varietal wine. This Carignan is rich, with dark blackberry fruit flavors in the mouth, and exotic spices of white pepper, and sandalwood in the nose. This combination of flavors and aromas is ideal for barbecue, and grilled meats

For years the French government encouraged growers to dig up and replant their Carignan with other grape varieties. Sadly, this means it is very difficult to find good, old-vine Carignan. Most of it has already been ripped out to liberate the land for more popular grape varieties. However, when kept in check, old vine Carignan can produce wines of deep concentration and complexity. This wine is destemmed and crushed, before undergoing a temperature controlled fermentation in tank. After fermentation, it is allowed to rest on its lees in stainless steel tanks before a light filtration and bottling.

This wine is unusual, in that it is simultaneously dark and concentrated, while having soft tannins and lush fruit. In the glass the wine is deep purple in color, the nose is spicy with hints of black fruit. In the mouth, blackberry and plum notes mingle with hints of black pepper spice. The finish is soft and round, making this an extremely versatile food wine. This wine is ideal for everything from barbeque and burgers, to pizza and pork chops. Enjoy!
Many grape varieties have mysterious origins, Marselan however, does not. This grape variety was invented by Paul Truel in 1961, in the town of Marseillan, in the South of France. It is a hybrid of the two grape varieties Cabernet Sauvignon and Grenache. Still relatively unknown, this grape can produce delicious, juicy, easy drinking reds. Faiveley Corton Clos du Corton




2015 Domaine Faiveley Corton Clos du Corton Grand Cru....$242.99

Full medium red. Deep, soil-driven aromas of raspberry, dark cherry, redcurrant, coffee and underbrush; not quite as black as it was from barrel in late 2016 but still conveys a brooding menthol quality. Enters the mouth plush and utterly seamless, but terrific soil-driven saline minerality gives definition to the middle palate. A bit reticent today but the slowly mounting, extremely long finish saturates everything in its path. The tannins are huge but plush, saturating the front teeth and incisors. I recall technical director Jérôme Flous telling me last year that this wine has an IPT (indice polyphenols totaux) of 90, compared to a normal 50. This outsized grand cru shows the sweetness of the vintage's best examples and appears to possess the stuffing and structure to go on in bottle for 25 years; in fact, it shut down rather dramatically with time in the recorked bottle.

Developed in Virginia in the mid-1840s, and grown in Missouri since at least 1894, "Bloody Butcher" is a true American heirloom corn with beautifully striped deep red kernels said to resemble the blood on a butchers apron.

A hands-on process from planting to labeling, this single-barrel batch corn whiskey is aged in one-of-a-kind Missouri-made toasted barrels, which are coopered from air-dried staves and washed by rain for years, mellowing the tannins, and producing a whiskey that is smooth up front, lively and peppery to the palate, with a clean finish.

Filley's Sweet N Heat Sauce
The Wing -n- everything Sauce
HOW WE GOT STARTED:
Not everyone, especially kids, can handle the traditional hot wing sauce. Sweet -n- Heat was created with those individuals in mind. The concept started in our kitchen many years ago with taking traditional hot sauce and adding various ingredients to give it that sweetness flavor but yet have a "kick" of heat. Over the years, our friends have sampled the sauce on various foods and often said "you really need to manufacture that sauce". Well in April 2015, we finally took the big leap and with the help of our partners, created a LLC and sought out a manufacturer to take our recipe and officially bottle Sweet -n- Heat.

Sweet -n- Heat, as it says on the label, is more than a wing sauce. Some other foods, just to name a few, it is recommended to be used on are:

  • pulled pork
  • scrambled eggs
  • dipping sauce for fries
  • hamburgers
  • in place of your traditional pizza sauce
So here we are today, bottles manufactured and ready for you to purchase and enjoy in your own kitchens!! We would love to hear what foods you enjoy Sweet -n- Heat on.

Knapoggue Castle special barrel release is a rare find.  Produced from handpicked number of barrels, this 12 year old whiskey is triple distilled in copper pot stills and aged in first fill bourbon barrels.  It is non-chill filtered and bottled at 92 proof.  

"We found that some consumers didn't realize how long Knappogue Castle Single Malt was aged, therefore missing a very important part of what we do to make it smooth, bright and spicy" observes Mark Andrews, son of the brand's founder. "We want to be perfectly clear about the age of Knappogue Castle Single Malt. Now, there's no need to calculate how long it was aged because we're stating it boldly on the front label. The age of the product is something we're proud of along with the fact that no color is added" says Mr. Andrews. "Although our standard offering will be the 12 year old single malt, we will continue to have special bottlings of rare and unique distillations which will most likely bear a vintage date."
