Diamond Peak’s 3rd limited annual release highlights flavors that transcend traditional whiskey. Using a marriage of 6-9 year Stranahan’s American Single Malt Whiskey, the liquid was finished in prized varietals of rum casks from the greater and lesser Antilles of the Caribbean: The Dominican Republic, Barbados, and Martinique.
DISTILLATION: Distilled from 100% malted barley and handmade in small batches at the Stranahan’s distillery, Colorado’s first legal distillery since Prohibition.

Batch 032 began with a balance of two sets of barrels: a selection of 5 and 6-year-old barrels with a creamy and tropical profile and a selection of 6, 7 and 10-year-old barrels vatted for their complex, old, woody character. These two sets of barrels were slowly blended over three months. A small group of spice driven 7-year-old barrels with notes of cinnamon toast, coffee bean and chocolate were then carefully added to complete the blend. The result is a decadent and rich bourbon with layers of spice and nuttiness.

This barrel features a mash bill of 51% corn, 45% wheat, and 4% malted barley, emphasizing its wheated profile. A "very special and very old Wheated barrel with amazing depth and complexity. The high wheat content is evident in the caramel, vanilla, and honey nose along with a gentle spice and a creamy mouthfeel. You also get flavors of dried fruits, and hints of baking spices.
