Our Elderflower Tonic is an updated tonic formula with more body and a bold finish that pairs well with a number of richer spirits: tequila, bourbon and rum, while still acting a classic companion to the finer gins of the world.

Because elderberry grows wild throughout Kentucky, we thought it a natural compliment to our line of mixers. We add organic dried elderflowers to our original recipe, and increased the amount of quinine to bring balance to the final product.

The Elderflower Tonic has a profile that allows G&T drinking deep into the winter months, and shows versatility in a number of different applications.

Bradley’s Kina Tonic is a fresh look at an old world product that has long since been relegated to that bland flat artificial substance your bartender shot out of a plastic gun behind the bar. This just doesn’t do our gin loving ancestors’ tonics any justice. Our Tonic, however, is made completely by hand from whole ingredients right out of the history book. Where others go for powdered quinine or “tonic flavorings,” we went right to the source and created this tonic from whole spices, real citrus oil, and exclusively imported Peruvian cinchona bark. This stuff is the real deal.

Due to the nature of the raw ingredients, there’s a much more complex and layered flavor profile than the tonics we’ve become accustomed to. The Peruvian cinchona bark lends a very warm and earthy bitterness and rounds out the subtle sweetness and acidity of this tonic which adds a layer of depth to the experience. It then finishes with the delicate flavor of real cold-pressed orange oil. No extracts here. No corners cut.

Winemaker David "Merf" Merfeld works closely with each grower to achieve specific fruit quality and yield parameters. Vines average 15 years old and yield grapes with concentrated varietal flavors of cherry and plum with elegant tannins. Fruit from more than 10 separate vineyards and 14 different blocks contributed to the blend.

Robiola Bosina aka (Due Latte)
This luscious little hunk of mild, creamy goodness is made from a perfect mix of milk from  Piedmont cows and sheep.   It is a perfect balance of flavors including salty, sweet, and mushroomy.  Robiola Bosina has a very silky interior that can run from the tender rind across your cheese board as it warms up to room temperature.  Be ready with slices of crusty French Bread (available in our freezer) and a nice glass of Bisson Glera "Prosecco".

Stop by Saturday for a taste of Robiolla with our favorite Prosseco (well almost Prosseco), Bisson Glera. This is Prosecco in all but name. In 2010 they changed from cork to crown cap closure. This speaks to the wines accessibility and youthful freshness but also disqualifies it from being DOC Prosecco. It clocks in at a low 11% abv keeping it extremely refreshing and lively.

Shropshire Blue is a blue cheese made from pasteurized cow's milk and vegetable rennet. Looking exactly like a Stilton, the major difference is the orange curd. Taste similar to Stilton with cheddar.   Great with a glass of Cotes du Rhone 


Rock Hill Location Cheese Feature
French Comte
Comté is an ancient cooked and pressed cheese made from raw milk. A wheel weighs about 80 lbs and measures 3 ft in diameter.  Comté is made in the Jura Massif of France, a region of medium-range mountains stretching along the Swiss border north of Geneva.  Montbéliarde and French Simmental cows are the only breeds authorized to produce the milk for Comté. The cows graze in vast pastures from spring to autumn, and eat local hay in the winter. All fermented feed is banned from their healthy diet.
It takes time for Comté to develop its taste. It is aged in maturing cellars for at least 4 months by law, but generally for 6-18 months or even longer. Comté is characterized by its complex aromatic richness. It is not a cheese with a uniform taste. Each wheel of Comté reveals a distinct aromatic composition that varies according the micro-region where it was produced, the local microflora, the season in which the cheese was made, the distinctive style of the cheesemaker, the cellar where it was matured… In this respect, Comté is truly a unique cheese. Rich in phosphorous, calcium, minerals and protein, Comté is a valuable food whose nutritional contents are useful in maintaining a balanced diet. Made with no additives or artificial colorants, and controlled at each level of production, Comté is a pure, healthy and natural food.

One of the greatest blues made. Gorgonzola is a great cheese for melting or adding to salads. Young gorgonzola with a creamy moist interior paste and deep greenish-blue veining. Made with pasteurized cow's milk, it has a bold aroma and a hearty robust flavor.

Old Pulteney 17 Year Old Single Malt Scotch...$105.99
Our 17-year-old predominantly features ex-bourbon maturation, with the addition of spirit that has been wholly matured in Spanish wood ex-sherry casks, predominantly Pedro Ximenez and Oloroso. This adds a subtle depth and complexity to the whisky, making for an outstanding after-dinner drink.
Old Pulteney 21 Year Old Single Malt Scotch....$159.99
As with the 17 Years Old, with this expression we marry together Old Pulteney matured in ex-bourbon casks with spirit from ex-Oloroso sherry casks. We mostly use second fill American oak, plus some Spanish oak first fill. However, there is a higher proportion of ex-Oloroso sherry cask compared to the 17 Years Old.
Old Pulteney 21 Year Old has been voted 2012 World Whisky of the Year by the prestigious "Jim Murray's Whisky Bible." Scoring a record-equalling 97.5 points out of 100, it is only the third time that a single malt has ever won the prestigious award, and we are just the second Scottish distillery to do so.
