We opted for a high rye mashbill to showcase the multifaceted contribution this flavorful grain brings to a bourbon recipe. Series Two brings together pot still production and generously high rye mashbill, resulting in a flavorful and complex spirit. Barrels were distilled at M.B. Roland. The mash is fermented for three-four days using Christian County, Kentucky water and industry standard yeast. It is then double pot distilled and collected at 110 proof. The undiluted distillate is then matured in wood-fired Kelvin Cooperage American White Oak barrels. Barrels rest on property, and once matured, are filtered only for sediment before bottling. Located in Pembroke, Kentucky, M.B. Roland was the founding distillery of the Kentucky Bourbon Craft Trail.

Based on the 2018 vintage, complemented by reserve wines aged in magnum dating back to 2009, Bollinger's newly released NV Brut Blanc de Noirs PN AYC18 was disgorged this year with six grams per liter dosage. Foregrounding the village of Aÿ, a commune crucial to Bollinger's distinctive style, the wine wafts from the glass with aromas of golden orchard fruit, honeycomb, buttered toast, freshly baked bread and dried white flowers. Medium to full-bodied, pillowy and vinous, with an ample core of fruit that's girdled by lively acids and animated by an elegant pinpoint mousse, this suave, charming Champagne concludes with a chalky finish. This has turned out beautifully.

D. is beautiful, unwinding in the glass with aromas of crisp orchard fruit, citrus pith and white flowers mingled with hints of honey, orange oil, buttery pastry, English walnuts and delicately spicy bass notes. Full-bodied, vibrant and incisive, it's unusually elegant and structurally fine-boned for what is routinely one of Champagne's more muscular tête de cuvées, with a bright spine of acidity that's cloaked in vibrant, concentrated fruit, complemented by a pearly pinpoint mousse and concluding with an intensely sapid finish. Long and penetrating, this is a tightly coiled R. D. that will reward bottle age.

Vinification: This Champagne Rosé was made with 100% Pinot Noir grapes coming from Bouzy Grand Cru (90%) and Ambonnay Grand Cru (10%) in the Montagne de Reims. The base wine is from the 2014 vintage and aged for 7 months in stainless-steel vats. The 2020 White Cuvée, bottled on April 9, 2022, and tasted on May 25, 2022, is the very first release of a white wine from Andremily. "I couldn't decide whether to make a Chardonnay or a Rhône," proprietor Jim Binns says. "So, I ended up making a blend." This first iteration is composed of 41% Roussanne, 36% Chardonnay, 15% Viognier and 8% Marsanne. Fruit comes from the Slide Hill Vineyard in Edna Valley and the Stolpman, Duvarita and Zotovich Vineyards in Santa Barbara County. It was fermented entirely in oak, underwent full malolactic conversion and was matured for about 18 months in 60% new and 40% used French barriques. The White Cuvée has intense aromas of baked peaches, beeswax, toast, dried herbs and matchstick and layers of savory nuance that emerge as it airs in the glass. The medium-bodied palate is broad and expansive, with savory flavors, seamless acidity and an oily texture that draws out the perfumed, alluringly herbal finish.

Deep garnet-purple in color, it has sprung to life since I last tasted it, prancing out of the glass with showy red currant jelly, black cherry compote and warm cassis notes plus hints of cinnamon toast, wilted roses, unsmoked cigars and fragrant earth. Full-bodied, the palate is rich and impactful, featuring layer upon layer of red and black fruits with loads of mineral sparks. The structure is rock-solid with firm, rugged tannins that are beginning to come into line with the flamboyant fruit, finishing with great length and a lively lift.

I was lucky enough to be able to taste a small vertical for this report. Starting with the 2015 Estate, this is still youthful and unevolved, but wow, it’s nevertheless a brilliant wine. Gorgeous notes of currants, mulberries, and black cherry fruits as well as lots of tapenade and leafy herb notes define the bouquet, and it hits the palate with full-bodied richness, sweet, polished tannins, and a great finish. It can be enjoyed today but won’t hit prime time for another 3-4 years. It should evolve for decades.

THE BREWERY

This starts with the approach to recipe development taken by our Head Brewer, Chad Thompson. Contrary to beginning with a style guideline in mind, then moving forward – Chad starts with a flavor and experience in mind, then works backward. And since we’ve decided to not be bound by style guidelines, he’s free to use any ingredients and amount along with the his special techniques to create a new beer experience.
To enable this philosophy and to enhance our creativity, we created a custom built brewhouse that allows us to make the beers we want to make.
