STORY
For musicians, amps and equalisers maintain critical balance at high volume by fine-tuning musical frequencies – at Highland Park, our Master Whisky Maker, Gordon Motion, does a similar job.

FULL VOLUME was created using 100% ex-bourbon casks rather than our traditional sherry-seasoned ones. During 1999, a combination of 481 casks – 200 litre barrels and 250 litre hogsheads – were filled at strengths of between 63.6% and 63.7%. The whisky was filtered at just over 4oC and delivers flavours of creamy vanilla and sweet citrus fruits from the bourbon casks, balanced by Highland Park’s characteristic aromatic smokiness.

2012 La Mission Haut Brion Blanc -- RARE STUFF!!

This blend of 84% Semillon and 16% Sauvignon Blanc is from the vineyard that used to be known as Laville Haut-Brion. Bursting with aromas of candle wax, honeyed tangerines, exotic melon and lychee nut-like notes, it exhibits terrific minerality along with a full-bodied mouthfeel, exceptional concentration, great acids and a long finish that lasts 40+ seconds. This killer dry white wine should drink well for 30-40+ years.

Tasted blind at the Southwold 2012 tasting. The 2012 La Mission Haut-Brion Blanc has a very intense Sauvignon Blanc nose offering gooseberry, kiwi fruit and smoky scents, although it does not seem to possess the complexity of the Malartic-Lagravière Blanc. The palate is balanced with a smooth entry, quite phenolic compared to its peers with a waxy, almost honeyed finish that feels creamy and yet needs to muster more complexity. I suspect this is just entering a dumb phase (just like Laville Haut-Brion had a habit of doing!). Like the Haut-Brion, my mark reflects the fact that this wine has closed down since bottling, but it will warrant a far higher score in line with its barrel showing after 10-15 years. Tasted January 2016.

This is very clear and precise with limes, lemons and sliced pineapple. Full body, tangy fruit and a dense, caressing, textured finish. Racy. Needs three to four years to soften.

A warning: Between the caffeine buzz, and the 9% alcohol by volume of this singular brew, you may find yourself a little disoriented. Black ale with aromas and flavours of vanilla, dark chocolate, bourbon and roasted malt. The vanilla and cocoa marry nicely, without out-competing each other, to produce a surprisingly well balanced beer. This beer is mildly hoppy, but the cocoa introduces a touch of bitterness. Its colour may be intimidating, but it is a very smooth beer within reach of most beer drinkers. This highly appreciated dessert beer is brewed with organic fair-trade cocoa and first rate vanilla beans.

This Viura-Chardonnay blend displays aromas of green apple, citrus and vanilla. The palate is juicy, citric and clean, with tangerine, lemon peel and white grapefruit flavors. This is an ideal quaffing wine.
Las Valles (translates to “The Valleys”) is produced by Bodegas Virgen del Águila, a modern, progressive cooperative near the town of Paniza. The bodega offers a wealth of vines (nearly 5,500 acres!) planted in prime terroir (more than 2,500 ft above sea level!) nestled against the Iberico mountain range.   Offers aromas of citrus fruit, pineapple and wild flowers. Dry and extremely refreshing on the palate. Ideal as an aperitif, or paired with salads or delicately-flavored seafood or white meat dishes.

Horchata Turbodog is based on one of Abita’s most popular brews, with a definite Latin twist. This robust dark ale is brewed with pale, caramel and chocolate malts, then fresh cinnamon sticks and vanilla beans are added during aging giving it a traditional horchata flavor. This gives the brew a rich body, dark color and deep flavors of chocolate, toffee, cinnamon and vanilla.



Abita Bourbon Street Bourbon Barrel Aged Maple Pecan...$8.49 / 22oz
Bourbon Street Maple Pecan is a nut brown ale that is aged in Bourbon barrels. Our Maple Pecan is brewed with a combination of pale, munich, biscuit, and caramel malts. Roasted pecans are also added to the brew for a nutty flavor and aroma. We add maple syrup in the brewhouse as well to give the beer a sweet flavor and full body. After fermentation and aging the beer is transferred into the bourbon barrels. It is then aged for another 8 weeks to absorb all of the flavors from the barrels. The result is brown ale that blends the light flavors of nuts, maple syrup, and baking bread from the beer with the warming flavors of wood and vanilla from the bourbon barrels.

Master Coopers in Alsace for 5 generations, the Hauller family began growing wine in the early 20th century, and presently farms 25 acres in the Bas-Rhin on the slopes of Dambach-La-Ville, Blienschwiller, Epfig, and Itterswiller. The estate and winery are currently managed by Louis Hauller and his grandson Claude.  Manual harvest. Sourced from granite-based terroirs.Vines average 15 years in age.
Tasting Notes:  Blend of grapes from Alsace.  Bone dry. Offers a primary nose of fresh fruit, with delicate citrus, apple, and floral notes. Rich and round, but well balanced and very refreshing.
