"Podge Belgian Imperial Stout (10.5% ABV) Brewed at the request of English beer connoisseur Chris "Podge" Pollard (a CAMRA activist and craft beer authority), this strong stout is black in color and has a rich, silky mouthfeel and slightly spicy flavor, but very low carbonation and no head at all "for the English taste". Made with Pilsner plus six other malt varieties, crystalized sugar and dark candi sugar, and hopped with English Challenger and East Kent Goldings hops. Grape: MourvedreMourvedre (Monastrell in its native Spain, Mataro in Australia and California) is a black-skinned variety that has been grown in vineyards all around the western Mediterranean for centuries. Thought to have originated in Spain, it is now grown extensively throughout the Iberian Peninsula, southern France, California and South Australia.

Mourvedre's meaty, herby aromas are very distinctive, as are its strong tannins. These qualities make it a potent ingredient for blending, most often with vibrant, rich Grenache and structured, spicy Syrah (see Grenache – Mourvedre – Syrah). Single-variety Mourvedre or Monastrell wines are not particularly common, but as the curiosity of the average wine consumer increases, so more and more producers are experimenting with making wines from 100 percent Mourvedre.

STYLE: DOUBLE IPA ABV: 8.2% IBUS: 95
India pale ales harness the inherent flavor characteristics of hops to bring forward familiar flavors of pine, resin, spice, and citrus. In some cases, those botanicals are so potent, they exactly mirror specific edibles. Such is the case with Centennial hops, which hail from the Great Northwest and come across on the palate like a mouthful of citrus fruit. That sensation is amplified with this, the first beer introduced via the Stochasticity Project–a double IPA brewed with Centennial, Chinook and Magnum hops as well as an immense dosing of fresh grapefruit peel. The result is over-the-top bittersweet grapefruit intensity that is at once refreshing and bracing in its citrusy bitterness.

Overall
The essential oils and the monoterpenoids like geraniol and citronellol that are found in hops often provide aromatic components that are described in professional sensory panels as "citrusy" and are reminiscent of the flavors of grapefruit, lemon, or lime. For that reason, the potential synergy of specific hop varieties with citrus fruit is something that brewers who research unique ingredients, and who focus on combining the brewing art with brewing science, have been experimenting with for a while.

This particular beer combines the lemony and piney aspects of the Centennial hop with the intensity provided by dry grapefruit peel, which is added as a dry hop along with the hops.

The brew is converted in the brewhouse using a temperature rest profile designed to accentuate dryness and fermentability. The resulting Real Degree of Fermentation is high, the attenuation limit is low, the residual dextrin content is low, and the dryness helps accentuate the hop flavors that emerge from the glass.

The end result is an intensely citrusy brew, aromatics at the first turn of Centennial hops, with subsequent evaluations resulting in an ever-increasing grapefruit presence. The bitterness provided by the hops, well over 90 IBUs, or International Bitterness Units, adds a large component of bitterness that blends exceptionally well with the light pithy character of the grapefruit. A remarkably refreshing beer.

The 2011 Pingus has a gorgeous, pure black cherry, cassis and blueberry scented bouquet interlaced by orange blossom and apricot. The oak is beautifully assimilated into the aromatic profile. The palate is full-bodied with a decadent entry. The tannins are ripe and rounded, imparting great tension and focus. There is both dimension and grace to this formidable Pingus that should blossom once it finishes its gestation. This is an outstanding Ribera del Duero wine. Drink 2020-2035+.

Wine of the Week - Terres Falmet Mourvedre

2011 Terres Falmet Mourvedre...$14.99
Yves Falmet worked for Marris Wines in Australia, Mantanzas Creek in California, and Neudorf Winery in New Zealand. The grapes are all grown on steep hillside vineyard.
The grapes for this wine are 100% hand-harvested. The vines are all planted on a single hillside in the appellation of Saint-Chinian. The grapes are crushed, destemmed, then undergo a long maceration in tank. This wine is vinified and aged in tank, and there is no oak ageing.
This is a deep, dark-colored wine, with beautiful black fruit aromas. The wine is supple and sweet in the mouth, full of black cherry, plum, fruit with a smoky undertone. Silky blackberry fruit complement the round tannins in the finish. Though Mourvèdre is known for its age-worthiness, this is such an enjoyable wine now, it will be hard to resist drinking it in its youth. 

Potato, Onion, and Cheese Frittata


Potato, Onion, and Cheese Frittata

Serves 4
  • 1 small potato, peeled and cut into small dice (about 1 cup)
  • 2 tablespoons extra-virgin olive oil   ***
  • Salt  ***
  • 1/2 onion, cut into small dice (about 1/2 cup)
  • 6 Dry Dock Farm Fresh eggs, thoroughly blended   ***
  • 1/2 cup shredded Tillamook cheddar cheese (or Gruyere works great)   ***
  • Freshly ground black pepper   ***
  • 5 strips cooked Benton's Bacon, chopped   ***

Preheat the broiler.
In a medium nonstick fry pan, combine the potatoes and olive oil over medium-high heat and stir or toss them in the pan to coat the potatoes with oil. Add a three-finger pinch of salt, just to coat the surface. When the potatoes are lightly browned, add the onions, salt to coat the onions, and continue to cook until the onions are tender, stirring or tossing the potato and onion.

Place the eggs in a medium bowl and add the cheese, along with ½ teaspoon salt and several grinds of pepper, and stir to combine and disperse the cheese.  Stir in bacon.   Pour the egg mixture over the potatoes and onions and reduce the heat to medium, swirling the pan so that the eggs even out. Cook until the edges are set, a couple of minutes depending on the heat level, checking to make sure that the eggs aren't sticking. Place the pan underneath the broiler until the eggs are just set, a minute or two depending on your broiler. When the top is set, invert the frittata onto a cutting board  and cut into wedges. Serve.
