Wild blackberries are native across the Atlantic and Pacific coasts of the United States. They grow bountifully throughout summer and ripen to a plump juicy black color in August. They belong to the rose family, as you might expect from their thorny brambles, along with raspberries, strawberries, the stone fruits, and almonds.

In the early 19th Century, John McIntosh noticed a young apple tree growing on his property in Ontario near the U.S. border. Delighted by the delicious fruit produced by the tree, he sold seeds to his neighbors hoping to popularize the new type of apple. It took him years to realize that apples do not grow true to seed and that varietal propagation could only be achieved through grafting. Today, the McIntosh is commonly grown in New York, Canada, New England, and Michigan. The aromatic McIntosh with its distinct white flesh and vinous flavor is coveted for fresh eating and cider production. Notably, Apple Inc.’s Macintosh computer is named after this well-loved apple.

15% SyrahThe Grenache vines range from 55 to 100 years old. The Carignan vines are 82 years old, while his Syrah vines range from 30 to 50 years old.  This in an unusually rich and complex Côtes du Rhône. Each year Vincent has incrementally increased the percentage of Grenache in his Côtes du Rhône. This year the wine is now 70% Grenache. This blend further accentuates the bright red cherry fruit in the wine. His old vine Carignan adds a complex peppery spice component, while the adds rich black fruit flavors. 

2015 Roche Audran Cotes du Rhone Villages Cesar...$24.99

The vines for the César range from 55 to 100 years old, and grow in very complex soil formed by the same geological upheavals that created the Alps. The grapes are hand-picked by parcel, with very low (25-35 hectoliters per hectare) yields. Though the Cuvée Cesar falls under the Côtes du Rhône Villages appellation, it is a wine that outshines many wines with a more prestigious pedigree. His very old Grenache vines produce a wine packed with black raspberry, black pepper, with hints of cassis fruit, all supported by firm ripe tannins. In the nose plum, red and black cherry, and garrigue spices mingle together. While the “Cuvée César” is a relatively lush and generous wine, it is also a wine built for the long term. So drink it now with a nice steak au poivre, or wait a few years and try it with venison or duck breast.

After nearly 10 years of these texts, we could probably spare you the introduction, but the newbies will hopefully appreciate a brief review: botanical curiosity, the hunt for exotic aromas, numerous expeditions, Species Rara ... You guessed it – it’s time for another edition of Monkey 47 Distiller's Cut in all its wonderful facets!

This year, that good old wanderlust led us not into the depths of London, but to a place entirely above ground: a souk in the United Arab Emirates. Amidst the intoxicating scents, intense colours, and other hallmarks of the Orient, we met our old friend Ryan Clift (alias: Chef Ryan) , who served as more than just a companion on our most recent search for distinct distillates.

Ryan Clift's culinary career began at the age of 14 at a Michelin-starred restaurant near his hometown of Devizes, Wiltshire (UK). Immediately drawn to the high energy and atmosphere of the kitchen, Ryan worked his way up from washing dishes to become a young protégé. After graduating from culinary school, he moved to London, where he landed a position in the restaurant of London's most prestigious hotel, Claridge's. Over the course of his 20-year career, Ryan has worked with some of the world's best chefs, including Marco-Pierre White, Peter Gordon, Emmanuel Renaut, Shannon Bennett, and Raymond Capaldi. In 1999, he moved to Australia, where he excelled as head chef of Vue de Monde,one of the country’s most acclaimed restaurants. “We sail tonight for Singapore / We're all as mad as hatters here…” Inspired and encouraged by Tom Waits’ eponymous mid-80s classic, Ryan then moved to Singapore in 2008 to start his own venture of culinary madness and take modern food and cocktail pairing to a new level. Essentially, the mission was as simple as it was challenging: Have one big chef’s table that would draw the customer into the kitchen and bar to experience all the magic of the creative process. With that, the Tippling Club was born. Mission accomplished! Cheers, Ryan – we’ll catch up with you and all the other hatters the next time we’re in town

For the moment, however, let's focus on our need for something special and truly beguiling – the Orient and Occident in sensory symbiosis, if you like. Our wide-ranging culinary ventures soon broadened our botanical horizons in a manner that far surpassed our expectations. Spurred on by Ryan’s own inquisitiveness, we spent days experimenting before coming to a unanimous decision: Ladies and gentlemen, we're pleased to present the aril (covering) of the nutmeg seed, Myristica fragrans!

For this version of Stone Enjoy By IPA we thought: “We don’t always have a filter, so why should our beer?” By skipping a step and letting this devastatingly fresh, golden-hued double IPA go un filtered, the beer takes on a hazy appearance and its peach and tropical fruit hop aroma are intensified. So though it may sound like it, this missed step was no misstep.

Like the other IPAs in this series, this version is brewed specifically NOT to last.

In 2015 Boon Brewery presented Oude Geuze Boon Black Label for the first time. This Oude Geuze suited the consumers’ palate very well and in May 2016 it won the gold medal at the ‘World Beer Cup 2016’. Because of the success it was decided to make a new blend, Black Label Second Edition. It was bottled at the beginning of 2016. The result is yet again a bone-dry geuze which tastes –although smoother and having more of an old lambic character – similar to the previous edition. This Oude Geuze is made from a selection of lambic from oak casks, foeders, with the highest degree of fermentation. This makes Oude Geuze Boon Black Label bone-dry while keeping it full-bodied. As inspiration for the label on the bottle, the 40 year old design of the first label of ‘Oude Geuze Boon’ was used. The thick white letters ‘Geuze Boon’ will probably be recognized by fans of Geuze Boon from back then.
