Usually the best things we find for our store are products that don't come looking for us, they are products that we go looking for them.  Durham's Tracklements Custom Smoked Provisions is one of those products.  In fact, we have been trying for months to sell their salmon in our store.  They kept telling us that they cannot keep up with demand at this point and they are not taking on any more accounts.  Our begging finally paid off and we our on our 3rd shipment,  Supply is limited.

"I'm sure many of you have heard about our collaboration with Sierra Nevada Brewing Company! This 2 year, 2 brewery, 2 family project is about to hit the streets and hopefully make it to a bottle shop near you! Set for National Release in July (I bet you thought you would never hear me say something like that!), BRUX was brewed in Chico (at Sierra Nevada) and will go through their distribution channels, which will, of course, greatly increase your chances of getting a couple of bottles. BRUX is a "domesticated wild ale", or an ale fermented with Belgian yeast, finished by a secondary bottle fermentation with Brettanomyces bruxellensis. It's a little more than 8% alcohol, very dry, earthy, spicy, and tasty. But wait, there's more! About 99% of BRUX was bottled in 750 ml bottles, so there will be almost none available on draft. Almost none, meaning that our brewpubs, Russian River and Sierra Nevada, will have it available on draft in July! The Russian River BRUX draft release is set for July 5th at 5pm at our pub in Downtown Santa Rosa. We will have no bottles or growlers available to go at our brewery due to state liquor laws. Then we move to Chico for Sierra Nevada's release on July 9th where they will have plenty of bottles for sale. Not sure about those details other than Vinnie and I are planning to attend! I do hope you get a chance to taste this exceptional collaboration with our friends at Sierra Nevada!

SINGLE HOP IPA: SORACHI ACE LIMITED RELEASES
Our brewing team is passionate about ingredients. This series was created to celebrate, and to acknowledge the wide variation of hops. The same ingredients and process go into each IPA from the series, with only one difference- what type of hop is used. “This is a great series for both beer aficionados and novice beer drinkers,” comments Brewer Greg Filippi. “It gives the drinker an appreciation of each hop type. They can really pick out the individual flavors in other beers once they taste the hop on its own.”

Varieties will change seasonally. Could be Citra, Admiral, Galaxy, Nelson Sauvin, Galaxy, etc.

Current varieties are:

Sorachi Ace: a Japanese hop known for its characteristic citrusy lemon flavor. Sorachi Ace is the third release of the series this year, following Ahtanum and Citra. Brewmaster Peter Licht is excited about the latest batch. Licht says,”Sorachi is an extremely interesting hop- lots of unusual fruit flavors including lemon and lemon zest. It is also the only hop to come from Japan. One of the reasons we started the single hop beer series was to get to use exotic hops like Sorachi Ace.”

ABOUT HERMITAGE
Established in 2009 Hermitage Brewing Company is located in San Jose. Along with producing its own label of small batch beers, Hermitage contracts with beer and soda clients to produce their products. Hermitage is regarded as a professional and reliable go-to contract brewer for many regional and state brewers.

Hermitage is also the bottling source for all Tied House beers. When Tied House closed down its iconic downtown San Jose location in mid-2009, they transferred all their brewing equipment down the road, to South 7th Street, where Hermitage is today. Hermitage soon added a bottling line, complete with disco ball and audio of ABBA’s greatest hits, which automatically starts when the bottling line is turned on.

The Wine and Cheese Place Bourbon Barrel Beer Update

October looks to be a big month for bottling for The Wine and Cheese Place barrel age program...

Here is a sneak peak at the Bourbon Barrel Aged Killer Whale - Buffalo Killer Ale!  The label has not been approved yet, so some changes might be needed.


This one is Six Row's Killer Whale ageing in a Buffalo Trace Bourbon Barrel since June 11.   This one is almost ready to be bottled watch for it soon -- probably released sometime in October.  


I also went down to 4 Hands Brewing today and tasted the 100% Vermont Organic Maple Syrup that we put in a Jefferson 18 Year Old Bourbon Barrel - wow, you are going to love this syrup.  Should be bottled also sometime in October.  Then the barrel will be filled with some 4 Hands Beer -- stay tuned.

Also, the 4 Hands Brewing Company Bona Fide Russian Imperial Stout brewed with Goshen Espresso and Whole Vanilla Bean that was filled on February 13, 2012 into an Elijah Craig 12 year old barrel should be bottled within weeks also.

Brouwerij De Troch is renowned the world over for it’s wide variety of fruit lambic beers. After tasting aging lambic from the oak casks at his brewery, brewer Pauwel Raes carefully blends together these spontaneously fermented beers with natural fruit juices. The results — a family of unique and delicious fruit beers!

In Wambeek, Belgium – a small town in the bucolic countryside west of Brussels – the De Troch-Raes family has been crafting lambic beer since the early 1700s, and in the same farmhouse continuously since 1860. Today, Pauwel Raes – a seventh-generation brewmaster – ably continues his family’s artisanal tradition. Brouwerij De Troch is unique, even in the rarefied world of lambic brewing: It is an independent, family-owned concern that brews, ages, blends, and bottles under the same roof.

Lambic Beer
Lambics are the oldest continuously brewed style of beer in the world. Their distinctive flavor is the result of “spontaneous fermentation” – utilizing the wild yeasts and microflora in the natural environment. To earn the appellation “lambic” this process must occur at one of a handful of peer-recognized breweries in Belgium’s Senne River Valley, all of whom follow traditional methods.

De Troch releases their output exclusively under the brand name Chapeau, offering the most extensive and diverse selection of fruit lambics, including flavors such as Banana and the pineapple juice flavored Exotic, alongside the classic cherry-fruited Kriek and other traditional fruit blends.

 Flensburger Brauerei is an independent, family-owned brewery that has brewed beer since 1888 in Flensburg – Germany’s northernmost city.

Beginning more than 700 ft. below the ground, with water from the underground glacier streams of Northern Scandinavia, Flensburger sources only outstanding ingredients, and uses state-of-the-art brewing technology under the direction of experienced master brewers.
