Nueske’s Introduces Wild Cherrywood Smoked Bacon at 2009 National Restaurant Association Show. New no nitrites or nitrates-added bacon now available to foodservice industry.
Wittenberg, Wisc. – Nueske’s Applewood Smoked Meats - a family-owned and operated producer of premium quality Applewood Smoked ham, bacon, sausage and poultry since 1933 - announced today that it has expanded its product line to include Wild Cherrywood Smoked, No Nitrites or Nitrates-Added Bacon.

The new product was unveiled at the 2009 National Restaurant Association Show, where attendees had a chance to be the first to sample the Wild Cherrywood Bacon.

In response to customer requests to produce a no nitrites or nitrates-added bacon, Nueske’s dedicated more than two years to the development of an artisan product that would meet consumer demands and far exceed taste expectations. Prepared with a blend of sea salt, Turbinado sugar and celery juice, Nueske’s Wild Cherrywood Smoked Bacon delivers a robust flavor and a longer shelf life than many no nitrites or nitrates-added bacon products currently on the market.

Nueske's has built a nationwide following among individuals and chefs who enjoy and appreciate superior quality foods. With this addition to the product line, the company hopes to turn even more people into Nueske’s enthusiasts.

“Our Wild Cherrywood Smoked Bacon will allow chefs and restaurateurs to expand their menu offerings to include a smoked bacon flavor that was not available until now,” said Tanya Nueske, company spokeswoman and granddaughter of Nueske’s founder Robert Carl Nueske. “In addition to meeting the demands of consumers looking for bold tastes, our Wild Cherrywood Smoked Bacon will assist foodservice operators in reaching new audiences by satisfying consumers who want products without added preservatives.”

Nueske’s smokes the Wild Cherrywood Smoked Bacon over an open fire of Wild Cherrywood logs for 24 hours, nearly five times longer than the smoking process of other bacons on the market. Smoking over Wild Cherrywood logs results in a tangy, smoked taste.

The Wild Cherrywood Smoked, No Nitrite/Nitrate-Added Bacon is currently available to foodservice operators and distributors, with an introduction at retail targeted for fall 2009.
