Skyr is an Icelandic cultured dairy product, similar to strained yogurt. It has been a part of Icelandic cuisine for over a thousand years. While Greek yogurt derives its thick texture from being strained; Skyr is thickened with a few drops of rennet, which puts Skyr somewhere between a cheese and a yogurt. Traditionally, Icelandic Skyr was made with sheep milk, although with the modernization of Iceland’s dairy industry, most skyr is now made from Cow milk. Fortunatly, the Icelandic sheep at Star Thrower Farm were up for task!

Star Thrower Farm is home to a flock of pasture raised, purebred Icelandic sheep and their guardian llamas. Pastures are a combination of native grasses, wildflowers and alfalfa. This nutritious forage adds complexity to the flavor of the rich sheep’s milk cheeses produced at the farm’s creamery. Icelandic sheep do not give a large quantity of milk but do produce a very high quality milk that is excellent for cheesemaking.
