Holy Goat


Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.  Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.  Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Holy Goat Doom Witch BA Flanders Ale....$11.99 / 375ml
BA Flanders Red with Strawberries

Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery.

Holy Goat Lemon Crusher Wild Ale....$11.99 / 375ml
Mixed Culture Wild Ale with Sicilian Lemons

Blended from two batches of golden wort, each brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Gaining a deep citrus funk from four months aging in tank, we decided to pair this base beer with one of our favourite citrus fruits.
We manually zested, juiced and pulped over 100kg of freshly harvested Sicilian lemons (Feminello Siracusano variety). We sourced these directly from the growers Bio Agrumi Monasteri, who specialise in organic and sustainable cultivation practices.

Holy Goat Spectral Lore Wile Ale....$11.99 / 375ml
Framboise inspired wild ale with tayberries and strawberries

Inspired by the Belgian framboise, our version is primary fermented with a Brettanomyces blend which produces intense juicy stone and tropical fruit flavours. In this, our 2023 iteration of Spectral Lore, we refermented the base beer on 250g/l of Tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee where these berries were first bred.
