Wine doesn’t get any better. Incredibly rich and concentrated, yet ethereal and even graceful, it boasts off-the-hook aromas of blackberry, licorice, spice-box, smoked meats and underbrush that continue to change and develop in the glass. Massive and decadent on the palate, yet again, with no weight and a seamless texture, this brilliant effort needs a handful of years in the cellar and will live to see its 30th birthday in fine form. The 2012 John C. Sullenger Vineyard Cabernet Sauvignon opens with bright fruit aromas that jump from the glass. Plum and cherry fruits harmoniously pair with hints of chocolate, earth, and herb to make the wine rich and full. Toasty vanilla and cedar from the oak add depth, but the signature of this wine is its luxurious mouthfeel that expands on the middle palate.


2012 Nickel & Nickel Cabernet Sauvignon C.C. Ranch...$88.99
The 2012 Cabernet Sauvignon C.C. Ranch is from the Rutherford sector over near the Silverado Trail. The color is opaque purple – slightly darker than the Hayne or the John C. Sullenger. Very concentrated, with almost a confit of black cherries, blackberries and dusty earthiness underlying the fruit, this profile is not surprising as this vineyard is grown in gravelly, loamy soils. With a full-bodied mouthfeel, super density and richness, I found it a very youthful, vibrant, backward and foreboding style. This should be very long-lived, but require 4-5 years of patience. I won’t be surprised to see it keep for two decades.

Deep purple-black in color, the 2008 Grange puts forward a very complex nose packed with aromas of mulberries, layers of baking spices, cloves and cinnamon with nuances of minced meat, anise, potpourri and whiffs of dried mint and chocolate. Medium to full-bodied, taut and very spicy in the mouth, it shows touches of sandalwood and Chinese five spice complementing the layers of dark fruit flavors. It is framed by firm, grainy tannins and a refreshing acid line before finishing very long with aniseed and lingering blackberry preserves notes. This is clearly a wonderfully opulent and a magic vintage for this label. Drink it from 2018 to 2035+.

IN 1805 THE MITCHELL merchant family commenced trading on 10 Grafton Street, in the heart of Dublin city as purveyors of confectionery, wines and fortified wines.

In 1887, this entrepreneurial family expanded into the whiskey bonding business whereby they sent empty wine, sherry and port casks via horse and cart to the local Jameson Distillery which were then filled with whiskey and returned to the Mitchell’s cellar warehouse on Fitzwilliam Lane. There, beneath the cobble streets of Dublin, the whiskeys matured for many years under bond until they were ready to be bottled.

The Mitchells sold a range of whiskeys under their ‘Spot’ brand name. This rather peculiar name originated from their practice of marking casks of different ages with a daub or spot of coloured paint. There was a Blue Spot, Red Spot and even a Yellow Spot, but Green Spot emerged as their most popular whiskey and is one of the few “whiskey bonder brands” to survive to modern day.

GREEN SPOT is a non age statement Single Pot Still Irish whiskey and is comprised of Pot Still whiskeys aged between 7 and 10 years. The whiskey has matured in a combination of new bourbon and refill bourbon casks as well as sherry casks. Only small quantities of Green Spot are bottled each year. No real reason why. Drink some more and we'll bottle more.

NOSE:
Fresh aromatic oils and spices with orchard fruits and barley on a background of toasted wood.

TASTE:
Full spicy body. A hint of cloves along with the fruity sweetness of green apples, rounded off with toasted oak.

Another fabulous effort, the 2012 Zinfandel Papera Ranch is composed of 96% Zinfandel and 4% Carignan that achieved 15.4% alcohol. One of my favorites in the tasting (although that’s splitting hairs), it exhibits a beautiful black fruit-scented nose with spice, pepper and a roasted meaty-like character. Dense, rich, full-bodied, beautifully balanced and impressively pure as well as layered, there are around 700 cases of this stunning Zinfandel made from vines planted in 1934. Introducing Doug Margerum’s Amaro

If you fancy yourself a bon vivant, consider starting the New Year by changing the way you end your meals. Digestifs have settled restless post-feast bellies for centuries in Europe, and now, thanks to Wine Cask co-owner and winemaker Doug Margerum, there’s a locally sourced, but Italian-inspired, version to make your regular nightcap.

Called Amaro, Margerum believes that his fortified blend of sangiovese raisin juice with various herbs, barks, woods, and roots is the first amari — the genre of sweetly bitter Italian liqueurs whose best known brand in the States is Fernet Branca — ever made in North America.

“I’m proud to be the first domestic producer of amaro, and it’s really good,” said Margerum, whose second batch ever — tantalizingly tonic with medicinal spices, yet smooth on the tongue like strong chocolate syrup — clocks in at 23 percent alcohol and is on sale for $50 at the Margerum Wine Company tasting room on Anacapa Street. “Like all the wines I do, these are things I drink.”

Though he’d heard of Fernet — which was all the rage with sommeliers and bartenders a few years back, in part because no bar owners ever checked the obscure bottles for missing liquor — Margerum fell in love with amari during time spent with his sons in Italy. When he found himself with a bunch of sangiovese raisins during the 2008 harvest — plus a garden full of herbs at his former Happy Canyon home — he made 11 cases’ worth. He ramped up the second batch to about 100 cases, but that doesn’t include the remaining juice in barrels that will serve as a steady base for the next harvest. “I think I got a pretty good recipe down,” said Margerum. “Batch two is better than batch one. It’s a little more bitter and a little less sweet, and I really like the balance in it. It should be a consistent product from here on out.”

Though he’s not divulging exact proportions, Margerum’s Amaro is powered by sage, thyme, marjoram, parsley, lemon verbena, rosemary, dried orange peels, caramelized simple syrup, undisclosed roots, and bark from red oak and other trees. It’s then aged outdoors in barrels, where the sun cooks it all together in a process known as “maderization.” In addition to drinking it after big meals and right before bed, when it’s designed to ease digestion, Margerum claimed, “It’s a great component to the perfect Manhattan.”
