2017 Domaine Cabirau Serge and Marie...$19.99
A smaller production cuvée, the 2017 Maury Sec Serge & Marie checks in as 70% Grenache, 20% Carignan, and 10% Syrah that was brought up in a mix of foudre and used barrels. It's also the first vintage for new winemaker Marie Verges as well as the first vintage to ever see small barrels, which were purchased from Guigal in the Northern Rhône. Deep purple-colored with a smoky, meaty bouquet of black fruits, licorice, crushed rocks, and black olives, it’s rich, full-bodied, beautifully textured, and layered on the palate, with ripe tannins. This fleshy, expansive barrel sample has tons of potential.

CHEESE FONDUE
Contrary to what some may think, cheese fondue was not invented in the 1970’s in an avocado green pot! Combining wine, melted cheese and flour, and dunking hunks of bread into it, was first described by the Greek poet Homer in the Iliad. However, cheese fondue, as we know it today, originated in the Alps. Cheese and bread were made in the summer and fall to last through the frigid and snowy mountainous winters. As the cheese and bread aged, they naturally became dry and very hard. Melting the cheese with wine and flour in a pot (perhaps with some dried herbs), and swirling stale bread in it, made a delicious and nutritious meal throughout the long winter.  Serves 4

Fondue recipe
16 oz of cheese - Emmental, Appenzeller and Gruyere.  Any mix of these three works well.
2 Tbls. flour or cornstarch
1 clove garlic, halved
1 ½ cups dry white wine such as Picpoul de Pinet
2 Tbls. Kirsch (cherry liqueur-available at TWCP)
1 tsp. pepper
1 tsp. nutmeg
Cubed crusty breads (French, Italian, rye, sourdough)

Dice or shred the cheeses. Rub the two cut halves of garlic around the sides and bottom of the fondue pot; discard the clove. In a bowl, add the flour or cornstarch to the cheeses and mix to coat. Place pot on a stove burner set on medium-low, and heat the wine. Add the cheeses a little at a time, constantly stirring in a figure-eight pattern (so the cheese doesn’t form a ball) until the cheeses are melted and hot. Do not simmer or boil the mixture! Stir in the Kirsch, pepper and nutmeg, and place pot in a stand over a flame to serve.

Some tips on cooking and serving fondue:
** The crust of cheese left at the bottom of the pot is considered a delicacy ~ enjoy!
** Do not put water into fondue. If it is too thick, add more wine.
** Don’t use a non-alcoholic substitute for the wine; alcohol inhibits the cheese from curdling.
** If you don’t have a fondue pot, a crockpot can be used for serving. However, use a pot on the stove to make the fondue.
**Besides bread cubes, the following bite-sized pieces are delicious dipped in fondue: cooked chicken, ham or sausage; cooked broccoli, cauliflower, potatoes and/or asparagus; and tart apples such as Granny Smith.

2016 Continuum Sage Mountain Vineyard Proprietary Red...$246.99
The 2016 Proprietary Red Wine Sage Mountain Vineyard may very well be the single greatest vintage made here thus far. It is quite simply a stunning wine and a towering achievement from the Mondavi family. Powerful, ample and sweeping in stature, the 2016 boasts breathtaking intensity in all of its dimensions. I see the pure, vibrant fruit of the 2013, but with more finessed tannins that add to the wine's feeling of real sensuality. Bright, precise and finely sculpted with remarkable persistence and perfectly integrated tannins, the 2016 is positively stellar - not to mention one of the wines of the vintage.

Super aromas of blackberries, blackcurrants and blueberries. Hints of fresh herbs and tobacco. Iron and ink. Full-bodied, very tight and powerful, yet not too heavy. Lightly chewy and polished. So much nerve and intensity. Super length and depth. Drink after 2025, but a joy to taste now.

The 2016 Proprietary Red is blended of 46% Cabernet Sauvignon, 31% Cabernet Franc, 18% Petit Verdot and 5% Merlot. Deep garnet-purple colored, it emits an incredible array of seductive floral notes—violets, lavender and rose hip tea—with a core of warm cassis, redcurrant jelly, dark chocolate, cigar box, tapenade and crushed rocks plus hints of bay leaves, beef drippings and yeast extract. Medium to full-bodied, the palate explodes with vivacious black fruit sparked by red fruit, herbal and mineral accents. It is framed with a rock-solid line of firm, grainy, super ripe tannins and finishes with fantastic fragrance and freshness. Wow!

The 2015 Barolo Bricco Delle Viole is a delicate and pure expression of Nebbiolo. The wine shows its naked beauty with pride, provocatively semi-dressed in lacy, floral aromas of wild rose and pressed violets. At this young age, the wine exhibits a gentle mix of fruity and floral characteristics that merge into the bouquet with intrepidness. The fruit from this vineyard within the Barolo township has maintained its freshness and crispness despite the heat of the 2015 growing season. I think it would be a lovely match for a veal piccata and cream sauce, with parsley and capers.

MILLING & MASHING:  The finest barley is steeped, germinated and gently air dried. Using a traditional roller mill, the malt barley is then turned into a fine grist.

FERMENTATION:  After mashing, the natural fermentation process produces the wash (essentially beer) with over 8% alcohol.

DISTILLATION:  The traditional triple distillation method uses copper pot stills, which create and fine-tune the proper character. After the first distillation, the strength of the spirit is increased through a second distillation with a low wine still. A third distillation in the spirit still, creates a cut above 80% alcohol. This captures the heart of the spirit.

MATURATION:  Our coopers hand-select the finest former bourbon barrels in which to age our proper whiskey. Our spirit slowly ages developing through the years flavours of vanilla, honey and toasted wood.

BLENDING:  The blending of sweet Irish grain spirit and single malt Irish whiskey lies at the heart of Proper No. Twelve. Our Master Distiller selects casks that hold the rich character needed to craft Proper No. Twelve Whiskey.

The Roaring 20s - Cocktail #1 - Bee's Knees

The Roaring 20s are back!




Bee's Knees
The expression "bee's knees" was popular during the 1920s, meaning that something was the best. This cocktail was popular because it used bathtub gin - a popular Prohibition spirit, which wasn't the smoothest of alcohols. The gin's flavor was covered with sweet honey and lemon juice. Serves one.



Ingredients
  • Ice
  • 2 ounces gin (we do have the Devil's Bathtub gin in stock)
  • 3/4 ounce freshly squeezed lemon juice
  • 1/2 ounce honey simple syrup
  • Lemon wedge

Instructions
In a shaker with ice, combine the gin, lemon juice, and simple syrup.
Strain into a chilled cocktail glass.
Garnish with a lemon wedge.
