Tasting the Schlafly Bourbon Barrel Aged Quad

Tasting beer out of the barrel!!!

Monday, November 7th, tasting at Schlafly Tap Room of Schlafly Quadrupel aged in The Wine and Cheese Place Buffalo Trace Bourbon Barrel.   

The beer has been in the barrel for just over 3 months (put in barrel August 5, 2011).   I have tasted a lot of wine out of the barrel, but this is the first beer that I have ever tasted out of a barrel.   It is very exciting, I think you are going to love this beer once it is bottled.   It was tasting pretty damn good to me.   The general consensus with the brewers at Schlafly (Stephen, Brennan, and Augie) was that it could be bottled now, but we are going to wait a little longer and see what happens.

Release Date:  Yet to be determined.   Schlafly Brewmaster, Stephen Hale, will taste periodically and decide when it is ready for release.  He predicted anywhere between 3-6 months of barrel aging.  Currently it has been in barrel for about 3 months already!

Production:  Very limited production.  Depending on evaporation we should see 20-22 cases of 750ml bottles of beer.

Price: Yet to be determined ($11-$14 / 750ml)

Delicious wine from the unknown grape of Jacquère...

This wine is produced on the French side of the Alps (Savoie Region) right across from Switzerland and is very similar to Swiss white wines but we think it is even better and much better priced (Swiss wines tend to be expensive).    It is made from 100% 
Jacquère. and is unoaked.   It is great with cheeses including of course Tomme de Savoie from the same region.  Plus if you want a white wine with Raclette, give this one a try.

Raclette Season is here! 
"Raclette, a semi-firm cheese from the Swiss and French Alps, is a fun and different way to enjoy cheese at a friendly get-together on a cool fall or cold winter night. Raclette, which means “scraper,” is traditionally hung on a fork in from of a fire so that the face of the cheese softens. As it melts, it is scraped off the cheese slab and eaten with boiled new potatoes, pickled onions, and cornichons. Today there is an easier way. Electric raclette melters are available for borrow (for free) or for sale from The Wine and Cheese Place, along with properly sliced French or Swiss raclette. Slices of raclette are placed in individual melting trays for a few moments, and then spread on fresh slices of French bread. This is an easy and delicious alternative to fondue ~ no mixing and heating ingredients ahead of time! The texture of raclette is very smooth, and seems to melt in your mouth even without heating. The taste is rich, reminiscent of wine and fruit, with a pronounced tang. Thinly sliced dried ham, such as prosciutto, iberico or serrano is an excellent accompliment. Raclette, thin ham slices, bread, boiled potatoes, pickled onions and sour gerkins, make for a light and festive supper for friends or family. Serve with a great hearty red like Segries Cotes du Rhone.
