A few years ago Mr.Kiuchi acquired 16 seeds from the Department of agricultural history in Japan. He started to plant those 16 seeds {on a 2 sqft area!} about 5 years ago. After the first harvest they planted all new seeds again....and did the same the next year and the following .
Last year’s harvest yielded {for the first time} enough “Kanego Golden Malt” to brew the first batch of “Ancient Nipponia” {along with the historic Sorachi Ace hops}" -- importer

1½ oz. Hiram Walker Rock and Rye cordial

1 slice orange, to garnish
1 brandied cherry, to garnish

Gordon Ramsay's Scrambled Eggs and Smoked Salmon Crostini:
(Adapted from Christmas with Gordon’ by Gordon Ramsay)
While most of America knows Chef Gordon Ramsay as screaming mad Brit who makes a fool of himself and others on various TV shows he is actually quite the chef and I am always willing to give one of his recipes a try. I’ve often found the most simple dishes to be the trickiest because you don’t have a lot of extra flavors to hide behind but when you start with great ingredients you have nothing to worry about.


Ingredients
  • 1 Tri Becca Baguette sliced on a bias ½ inch thick   ***
  • Sea salt and freshly ground black pepper    ***
  • 12 large eggs    ***
  • 1/4 cold unsalted butter, diced 
  • 4 tbsp Persian Feta (the original recipe calls for cream but I prefer the slight tang and savory notes of the feta with the salmon)   ***
  • 1–2 tbsp snipped chives   
  • 3/4 pound smoked salmon (If you haven’t yet please try our Smoked Salmon from Durham’s Trackelments, easily the best I have ever had)    ***

Method
1. Slice the baguette on an extreme bias in order to get longer slices. Drizzle sliced baguette with olive oil and season with salt and pepper place in a 350 degree oven and bake until golden brown, about 8 minutes. 

2. Break the eggs into a cold heavy-based non-stick saucepan; do not season. Place the pan over a low heat and add a few knobs of butter. Using a wooden spoon, stir the eggs frequently but not constantly, just to combine the yolks and whites.

3. As the eggs start to scramble, take the pan off the heat and use a spatula to scrape the egg from the sides and base of the pan. Return to the heat and keep stirring and scraping the pan until the overall texture of the eggs is like soft curds. This should take 5–6 minutes. Don’t overcook the mixture – it should be moist and soft.

4. When the eggs are nearing the end of cooking, take the pan off the heat, add another knob of butter and then season well. Return to the heat and stir in the Persian Feta. Once the butter has melted, remove from the heat and fold through the chives.

5. Spoon the scrambled eggs onto the toasted croistini, drape the slices of smoked salmon on top and serve immediately.

"To some ears, the term, "imperial pilsner" might sound like an oxymoron.  How can a style as cleanly balanced and refined as a pilsner be "amped up" to imperial status?  Pilsner is arguably, just fine the way it is.    Where do you go from there?  The answer, of course: You go to eleven.
With its classic recipe and impeccable craftmanship, Reverb Imperial Pilsner echoes our Collaboration Number 1 Imperial Pilsner, produced in 2009 when with esteemed Orval brewmaster Jean-Marie Rock.  Like its predecessor, this new Summer Seasonal release is a study in delicately balanced contrasts.  A strakly simple recipe, using only Pilsner malt and Saaz hops, combined with a painstakingly complex brewing process, produce a beer of subtle elegance.  The venerable technique of "first wort hopping," -- adding hops at the beginning of the boil and allowing them to steep for a much longer time---gives the beer a refined hop aroma and flavor.  Pilsner malt makes a clear yet restrained statement up front, answered by try steady, harmonious hum of hop bitterness, traces of which linger in the dry, crisp finish.   Our Reverb Imperial Pilsner pairs melodiously with grilled seafood or chicken, or a wide variety of cheeses.  Really, though, it goes great with whatever is being served backstate.

Celastrina, or Hops Blue, is a tiny blue butterfly found living on wild hop plants along the Front Range of Colorado. Little is known about this rare species, but we hope to change that. Celastrina Saison pays tribute to this winged creature with delicate hints of banana and clove-like flavor, typical of a traditional Saison, that flutter with a subtle spice character derived only from the hops used. $1 from each bottle sold will go to the Colorado Natural Heritage Program to help fund research of the Hops Blue butterfly.

2010 Paul Hobbs Russian River Valley Chardonnay
The 2010 Chardonnay is rich, creamy and expressive. Lemon, green pears, white flowers and crushed rocks all take shape in this deeply expressive, gorgeous wine. First and foremost, the 2010 stands out for its nuance and class. This is a great showing from the straight Russian River bottling, not to mention a textbook wine for the appellation. The 2010 spent ten months in oak (45% new) and two months in steel. Anticipated maturity: 2013-2018.

2011 Paul Hobbs Russian River Valley Pinot Noir
A delicious, entry-level wine, the 2011 Pinot Noir is also a great example of the year. Sweet floral notes, red berries, mint and anise are some of the notes that woven together in the glass in this expressive and beautiful wine. Juicy and radiant, the 2011 captures the very best qualities of Sonoma Pinot Noir in this cold vintage. It is a terrific showing. Anticipated maturity: 2014-2021.

2010 Paul Hobbs Napa Valley Cabernet Sauvignon
The 2010 Cabernet Sauvignon Napa Valley wraps around the palate with mocha, chocolate, violets and new leather. Despite its explosive personality, the straight Napa Valley bottling is pretty approachable for the vintage. I especially like the focus of the finish. In 2010, the Cabernet Sauvignon includes 6% Cabernet Franc. The vineyard sources are State Lane, Stagecoach and Mast. Anticipated maturity: 2015-2025.
