Alfredo Roca Chardonnay Mendoza....$12.99
The Roca family has been producing wine in Mendoza for 4 generations, and currently farms nearly 260 acres in San Rafael, the southernmost province of Mendoza. At altitudes of 2,300 to 2,600 feet above sea level, Roca’s vineyards produce distinct, cool-climate wines of singular quality.  Offers vibrant pear and apple aromas. Has a touch of richness, but thankfully lacks fat, buttery flavors.  Excellent on its own, but can stand up to richly sauced poultry, seafood, or creamy pasta dishes.

The coffee notes in Stone Americano Stout are bold, rich and full of American swagger. For each 120-barrel batch, we incorporated over 250 lbs. of artisanal espresso-roast beans into the mash and added in Columbus, Chinook, Amarillo and Cascade hops to invigorate the coffee taste with a slight citrus and resin hop presence. When it came time to selecting our coffee, we chose the same local roasters who contributed to our sought-after 2013 Stone ESPRESSO Imperial Russian Stout. Their fantastic beans helped us achieve this dark, hoppy and wonderfully aromatic espresso stout.

Provolone is one of the most famous Italian cheeses and is made from cow’s milk whose origins lie in Southern Italy.  Most Provolone is produced in the Po valley region, particularly Lombardy and Veneto. Provolone is grandted DOP designation by the European Union to ensure that cheese is produced under strict supervision using specific methods to guarantee the finest quality.  We have a delicious 6 month aged version in stock now at our Ballwin location.

Matured for 8 months. Gruyere has an unmistakably assertive, musty flavor. Recognizable by its dark brown to black rind. This cheese has a sharpness not found in other Gruyeres. Gruyere is a classic cheese from Switzerland. Great for melting. This one is cave aged to give it more sharpness and flavor.

Confoundingly unpronounceable yet eminently drinkable—welcome to §ucaba, an epic barrel-­aged English barley wine whose original name was undone by a two­‐bit legal challenge. Big, boozy bourbon and American oak aromas combine with soft chocolate malty undertones. Complex malt flavors are framed in oak with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. §ucaba is built to last and can age for years to come (we recommend counting the years with an abacus).

Our Napa Valley Sauvignon Blanc marks an exciting milestone for Rombauer Vineyards — the first new varietal introduced in more than 20 years and only the second white wine in our 35-year history.
VINEYARDS:  The fruit for this wine comes from four carefully selected sites in Napa Valley offering lots of sunshine yet moderate temperatures — ideal conditions for growing Sauvignon Blanc.

WINEGROWING:  2015 brought the earliest harvest in our 35-year history. Yields were down overall, but prolonged warm weather resulted in exceptional fruit quality and richly flavored wines. Sustainable farming practices throughout the growing season were tailored to each block with the assistance of aerial photos produced using NDVI (Normalized Difference Vegetation Index) technology. The fruit was hand-picked at dawn and sorted in the vineyard.

WINEMAKING:  The grapes were gently whole-cluster pressed while the fruit was still cool. Ninety percent of the juice was fermented in stainless steel tanks. The remaining juice was fermented in neutral French oak barrels to impart weight and texture to the wine. The barrel-fermented portion was blended back to tank after three months in barrel.
TASTING NOTES:  This wine is brilliant pale yellow with a bright green hue. It exudes aromas of ripe lime, grapefruit, pear and white nectarine with a subtle hint of fresh-cut grass. The palate is fresh and enticing, as grapefruit, white nectarine and deep tropical notes intertwine making the mouth water. Balanced yet lively acidity lingers on the palate inviting another taste. Boxwood on the finish gives the wine length and vibrant freshness.

Jefferson’s Ocean: Aged at Sea -Inspired by the original Jefferson’s Ocean, which was new-filled bourbon barrels, the Jefferson’s Ocean: Aged at Sea takes older bourbon barrels and brings it around the world. Stopping in 5 different continents and crossing the equator 4 times, this bourbon truly is a world beater. 

What began as a fun experiment has resulted in a more scientific approach to the maturation process of bourbon. When whiskey was first distilled in Kentucky, it received intentional extra age from travelling on rivers and seas en route to market. This was not just due to lengthy trips but also the movement of the ship which forced the liquid in whiskey barrels to be in constant motion coming in contact wit the wood more often. At Jefferson's we wanted to tip our hat to this tradition by aging bourbon at sea. We put fully matured Kentucky Bourbon on a ship and set it on its way to crossing the equator 4 times, stopping at 5 continents and over 30 different ports. This process has added a salty, caramel elements that round out the bourbon's profile to create an American treasure that has been cultured as traveled by the globe.

We have forgone the barrel aging and developed a slightly different recipe focused on the use of Molasses, Muscovado Sugar and Star Anise. This beer is a collaboration with Oxbow, our tribute to fabulous Oud Bruin of lost times. Fermented directly into used barrels of Brunello di Montalcino, this beer is beautifully tart and fruit from the influence of the Brunello wine barrels.
Brewing/production notes from Tim Adams:
"We brewed a brown base beer, part of which was fermented in stainless with ale yeast, and the rest of the wort was knocked out directly into chrysopolis barrels and fermented solely by Ducato house souring organisms and brett. Following fermentation, the beer was blended back together and all racked into freshly dumped Brunello barrels. The beer was aged for several months in these barrels, followed by a final blending process."

While this is presently backward it should be approachable after 6 to 8 years of bottle age though note that it should live for a very long time. For readers having a child or grandchild in 2012 this would be a good choice to buy in quantity at a price that won’t break the bank.

An amber with a solid alcohol content, 6.5%, that unites enthusiasm, decision and initiative! The wood aging grants the caramel malts, used in the mash, a unique edge. Aromas of tropical fruit and melon, while on the it’s delicate and velvet body finish in a finale both sour and bitter. Dry-hopped with flower hops during wood aging (barrel aged for about 6-8 months).

The beers from Sesma are fermented with multiple yeast strains, few of which are actually traditional beer yeasts. Sesma Brewing works closely with his brother Dr. David Garcia’s company, Lev2050. David has his Ph.D. in Microbiology and Molecular Biology and is also an expert in yeast and genetics. At Lev2050 he works closely with wineries and vineyards to isolate and study different yeast strains from wines and grapes and study their biological nature and organoleptic qualities. In short, Lev2050 is Sesma’s source for yeasts. And Alberto will decide, with the help of his brother, what yeasts to use in each of his recipe depending on what flavors, aromas, acidity, attenuation, etc. he is looking to achieve in the final beer. Using different yeast in each beer requires extra attention during the fermentation process, to make sure the yeast is healthy and operating throughout. Alberto is not interested in big hoppy beers, that are currently in vogue in the Spanish craft beer scene. Instead he aims to achieve subtle flavors, nuance, and harmony in his beers. Sesma Brewing may be making some of the most unique beers to come out of Spain now.

Prunus Persica Sour Ale brewed with peaches from nearby Sartaguda - famous in Spain for their peaches. The fruit comes directly from the farmer, is crushed and added during the boil. Fermentation is conducted with a special non-saccharomyces yeast. Medium-high carbonation. A refreshing beer with deep peach flavors and soft subtle sourness. 6.2% alc./vol.
