A.D. Laws Hordeum Straight Malt

A.D. Laws Hordeum Straight Malt...$58.99
One of the world’s first cultivated grains, hordeum, or wild barley grass, grew from an agricultural staple to ultimately reach its pinnacle in whiskey making. Every bottle of A.D. Laws Hordeum Straight Barley Whiskey is a nod to this ancestral grain and its singularity. Our atypical on-grain, sour mash style, coupled with Colorado mountain barley, imparts a unique character to this whiskey. This grain forward, single malt whiskey showcases the native terroir of Colorado.
100% Colorado-grown malted barley
Aged 2+ years in full-sized 53 gallon new American white oak barrels
Classic open air, sour mash fermentation
Distilled twice through our Vendome 4-plate pot/column still
Bottled at 100 Proof
Tasting Notes: Opens with bright apple blossom and honey on the nose with notes of toasted hazelnuts. Black tea and green apple on the front of the palate, changing to cinnamon sugar cookies and malted nuts. Finishing with seagrass and sweet tobacco.

Seven Fathoms Premium Rum is a handcrafted, artisanal premium rum that is distilled locally in small batches exclusively in the Cayman Islands. Unlike any other rum, Seven Fathoms is matured under water at a depth of seven fathoms (42 feet). This unique and innovative maturing technique creates superior characteristics and complexity. Seven Fathoms is a distinctive spirit made by meticulously aging the rum underwater in the pristine Caribbean seas giving Seven Fathoms a depth of flavor and smoothness that is incomparable. Seven Fathoms 80 proof rum, is a limited production premium rum, created in individually numbered batches. Experience the waves of flavors!

Cane & Copper: We start with the harvest of fresh organic cane at the farms of Grand Cayman’s East End. Traditional West Indian techniques and our Christian Carl copper pot still transform fresh cane juice into young rum, carefully guiding its every step by hand.

Cask & Currents: We escort the rum in American white oak bourbon casks to a secret location off the Cayman coast. Anchored at 42 feet, an exact seven fathoms deep, our hand-crafted rum enjoys underwater currents that rock the spirit gently and consistent temperatures like nowhere on land.

Chateau d'Yquem Sauternes - perfect 100 points

2015 Chateau d'Yquem Sauternes....$224.99 / 375ml
Following a very long harvest stretching nearly two months, the 2015 Château d'Yquem came in at 13.9% alcohol and 144 grams per liter of residual sugar, sporting a pH of 3.65 and six grams per liter of tartaric acid. None of these numbers, however, even remotely begin to tell you how profound this wine is. The nose opens with electric notes of ripe pineapples, green mango, orange blossoms and lemon tart with hints of fungi, lime zest, crushed rocks and jasmine. The freshness on the palate is just astonishing, permeating and lifting layer upon layer of tropical fruits and earthy notions, all encased in a sumptuous texture and culminating in a very, very long, mineral-tinged finish. Truly, this is a legendary vintage for d'Yquem. I've been conservative with my drinking window here, and I would not be at all surprised if our descendants are drinking this vintage well into the next century.

2015 Carmes de Rieussec Sauternes...$31.99 / 750ml
A wine of joy and pure pleasure, the 2015 Carmes de Rieussec is absolutely delicious. Rieussec's second wine is bright and lifted, yet shows plenty of depth in its pineapple, orange peel, mint, jasmine and lightly honeyed notes. Although the Grand Vin gets most of the attention at Rieussec, the Carmes is truly superb in 2015 and well worth taking a look at.

Citadelle Gin

We have an amazing price! (as usual!)
Citadelle Gin Original...$21.99 / Liters  (33% more than a 750ml)
Compare to $29.99 for a 750ml at Total Wine and More
The 19 aromatics that make up Citadelle are infused, according to their profile, between one and four days – a crucial time so that Citadelle can acquire its distinguished profile. It is then distilled in small copper stills over open flames in order to develop its suppleness and voluptuous character in the mouth.

Citadelle Gin exudes delicate aromas of fresh flowers highlighted by more assertive citric scents. Once served, it emanates more intense, herbaceous notes of juniper and anise; then, the spicy cinnamon side softens the nose, bringing a very gourmand dimension to the gin. On the palate, the juniper cedes to a long, voluptuous, spicy fragrance.

But while Citadelle offers complete aromatic richness, its three character traits remain:
– Juniper, its signature, the key base of Citadelle
– Citrus, the complementary note that underlines the juniper
– Exotic, offering an additional level of enjoyment with touches of pepper, nutmeg and cinnamon.

Beautifully balanced, it is elegant, soft and and long in the mouth, with an alcohol content of 44%. A perfect equilibrium between intensity and finesse.

Citadelle has won more than 60 medals, among them “Spirit of the Year” at the 2017 World Spirit Awards as well as “World’s Best Gin” and “Gin Grand Master” in London. Its bottle hasn’t escaped attention either; it was awarded a gold medal at the Spirits Design Master 2017.

Thanksgiving is coming!

Thanksgiving is coming!!!
As I have mentioned many times in the past Thanksgiving is my favorite Holiday and certainly my favorite wine holiday. But let's not focus just on Thursday with family often in town all week, or at least from Wednesday through the weekend you are going to need drinks at the ready for at least 5 days. My family usually kicks off the festivities on Wednesday night and goes strong through the weekend, then hitting the running trail of course on Thursday morning to make room for dinner. Below is what I have planned for the week(end) of great drinks, others will take care of the food" -- Aaron, wine manager (Forsyth location)

Wednesday:
A simple meal is best for Wednesday, people are often traveling or just getting off work around dinner time. We usually have roast tenderloin, as the main with a simple salad and roasted vegetables on the side. Start things off on the right foot with Sparkling Wine/Champagne, remember don't save the best for last, enjoy that special bottle of Champagne early on and finish off with some solid Sparklers from outside of Champagne or a nice glass of whiskey.

Thursday:
Turkey Day! Get up early and head out for some exercise because it's going to be a great day of eating and drinking. The cooking and family fun usually starts up around noon at our household, with most just snacking throughout the day on left overs from the night before. If there is football on you might as well have a beer. Our Side Project Merci is a wonderfully tart beer to share with your out of town guests. It will prime the pallet for the feast to come. As for the main event don't stress about the wine pairings there are so many flavors on the table that whatever you want to drink is bound to pair with something. Our family tends to lean towards lighter reds and whites for the meal but that certainly doesn't mean you have to. Below are some of my favorite Thanksgiving wines.

2016 Hugel Gentil $16.99
2017 Lancyre Roussanne $19.99
2016 Roland Laventreaux Chablis VV $29.99

What a fantastic Rhone Value. Sometimes a deal isn't too good to be true. We weren't sure how the 2013 Gassier Nostre Pais White would be holding up so we ordered a case to check. I have to say it is still lovely, over time this wine has developed a wonderful nose, just a hint of petrol, while maintaining a bright fresh fruit profile in the mid pallet and finishes as crisp and clean as the day it was released. Don't hesitate to stock up on this great closeout opportunity.
Check out this price!

2013 Michel Gassier Nostre Pais White....$7.99
Lowest price online is $18.99

One of my favorite whites from the region, as well as a year in, year out value, the 2013 Costières de Nîmes Nostre Païs Blanc is 60% Grenache Blanc (always from the same parcel) and the rest Clairette, Roussanne and Viognier. Fermented one-third in barrel and aged eight months on lees, it offers fabulous notes of stone fruits, buttered citrus, white flowers and honeysuckle to go with a medium-bodied, fresh, lively and pure style. While it doesn’t skimp on texture, the focus is more on freshness and purity.

Otra Vez Aged in Reposado Barrels

Sierra Nevada Trip in the Woods Tequila Otra Vez...$19.99
Otra Vez Aged in Reposado Barrels

For this limited offering we pushed beyond the typical barrel-aged beer theory. We got our hands on some Reposado Tequila oak barrels and then aged our new Otra Vez Gose with Lime and Agave. This Trip in the Woods starts out tart yet juicy, with hints of lime. For the finish? The unmistakable silkines of a classic Reposado.
