Made from 50% Malbec and 25% each of Merlot and Cabernet Sauvignon, aged 20 months in 70% new French and American oak, the 2013 De La Cava is straight up terrific, and one of the standouts in this report. Crème de cassis, licorice, smoked herbs and graphite all give way to a full-bodied, concentrated, voluptuous, yet incredibly well balanced 2013 that has a stacked mid-palate, ripe, sweet tannin and a great finish. This down right tour de force is a smoking value, even at over 40 dollars.

Another brilliant wine from this estate, it showed brilliantly from barrel and now from bottle. Black raspberries, dried flowers, exotic spice, and candied orange blossom all flow to a medium to full-bodied, spicy, elegant, seamless beauty that has building tannin, impeccable balance and a great finish. It needs a decant if drinking anytime soon and will be even better with another year in bottle.

The most suitable slope is undoubtedly the orographic left, but at not too high altitude and with adequate exposure it gives very interesting wines on the opposite side.

You don't have to take my word for it though. Just ask the farmers and chefs. Some of the nation's top culinary stars make magic with Benton's hams. Local farmers bring their personal hocks to be cured by the five-man shop that competes with industry giants. The secret? They do things the slow way—using meat-curing practices thousands of years old.
