A lush, modern, style, with hyperdrive on the blueberry, loganberry and boysenberry fruit flavors. Nothing gets too heady though, as there's charcoal-studded grip, smoldering coffee grinds and roasted bay leaf notes all in the background for definition and further development with cellaring. Modern, yes, but firmly grounded in its terroir. Best from 2016 through 2035. 7,000 cases made.

Green Dirt Farm Dirt Lover - Missouri
DIRT LOVER
Dirt lover is a bloomy rind cheese with a light coating of vegetable ash. Applying ash to the rind of cheeses is an old-world cheese making technique that helps to neutralize the pH of the rind, encouraging the desired rind formation. The dark line from the ash makes Dirt Lover a striking addition to a cheese plate.

Dirt lover tastes buttery, lemony, and mushroomy, and becomes earthy and beefy with age. It smells of wet dirt, like working in the garden.

This cheese pairs well with rosé, wheat beer, and dried apricots. Dirt Lover makes a wonderful salad with citrus quarters, walnuts, fennel, and a simple vinaigrette. 




Green Dirt Farm Woolly Rind - Missouri
WOOLLY RIND
Woolly Rind is a Bloomy Rind aged cheese, so named from the bloom of edible mold on the rind. It is a classic lactic style cheese that undergoes progressive ripening as it ages. This means that the cheese ripens from the rind towards the center.
Woolly Rind tastes buttery, tangy, and mushroomy. With age, the cheese gains earthy and beefy qualities. Its aroma frequently evokes thoughts of forest floor, or fresh soil. It is a good option to introduce people to aged sheep’s milk cheese, as it is relatively mild.
Woolly Rind pairs well with Lambic and Saison beers, unoaked Chardonnay, prosciutto,
honey or dark chocolate.

New vintage of Taittinger Comtes de Champagne 97+ RATING!





2006 Taittinger Comtes de Champagne....$149.99

The 2006 Comtes de Champagne is striking, especially in the way it brings together elements of ripeness and freshness in a hypothetical blend of the 2002 and 2004. Smooth and creamy on the palate, the 2006 is all about texture. There is a real feeling of density and weight in the 2006, qualities I expect to see grow with time in the bottle. All the elements fall into place effortlessly. The 2006 has been nothing short of magnificent both times I have tasted it. Comtes de Champagne remains the single best value (in relative terms) in tête de cuvée Champagne. I suggest buying a case and following it over the next 20-30 years, which is exactly what I intend to do. There is little doubt the 2006 Comtes de Champagne is a magical Champagne in the making.

The best wine ever from the Domaine Barons de Rothschild (Lafite) and Nicolas Catena winery. Drink or hold.

Imperial Stout Aztec Chocolate Stout....$11.99
2015 will see us release riffs on our Smokestack Series Limited Release Imperial Stout. As a base beer, Imperial Stout serves as a ridiculously sturdy starting point for layering flavors by incorporating new ingredients or barrel aging methods. Imperial Stout has a huge grain bill featuring several types of malted barley, wheat, rye, oats, and spelt. Robust grain and chocolate/coffee flavors are counterbalanced by date and plum notes from Scottish yeast.

The second installment, Imperial Stout X – Aztec Chocolate, takes inspiration from traditional drinking chocolate referred to as Xocoatl. The ancient Aztecs held chocolate in such high regard that in addition to its place as a holy drink in ceremonies, cacao beans were a form of currency. Accounts vary, but the drinking chocolate the Aztecs consumed combined a paste of cacao beans with spices, chili peppers, vanilla and in some cases, wine or another fermented spirit.

To bring our interpretation to life, a batch of Imperial Stout was brewed that received freshly ground cinnamon during the boil on the brewhouse. This batch will be blended with tanks of Imperial Stout that are infused with dried pasilla negro and ancho chiles as well as cacao nibs. The chiles and cacao nibs were stuffed into porous bags and suspended in sanitized stainless steel tanks. Finished beer is transferred onto the chiles and nibs and allowed to rest for 24 hours of contact time. Following the infusion, the beer is transferred to a blending tank and blended with the cinnamon spiced batch. No portion of Imperial Stout X – Aztec Chocolate is barrel aged.

Why Rye? This assertively flavorful grain is more often associated with whiskey than beer. Even in that arena, it has largely been eclipsed by corn and barley, the sources of Bourbon and scotch. But when we procured some seasoned barrels from our friends at Templeton rye, we asked ourselves, "Why not? Why not brew a rich, tawny rye ale, then mellow it in the warthm of charred oak rye whiskey casks? Two kinds of malted rye provide a spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Perle, Magnum, and Saphir hops before easing into a dry, lingering finish." -- back label

Boulevard Snow & Tell – Oak-Aged Scotch Ale...$8.99 / 6pk
Snow & Tell, our newest winter seasonal beer, is being released to coincide with the change in the weather that occurs in the Midwest as we transition from crisp fall days into cooler, brisk nights. A malt blanket of sorts, Snow & Tell is our interpretation of a Scotch Ale or Wee Heavy. Ranging in alcohol from 6% up to 10% in more extreme examples of the style, Scotch Ales typically feature rich, caramel malt sweetness punctuated by spicy/herbal hops.

At 6.3 ABV, Snow & Tell is composed of our base pale malt, crystal/caramel malt, amber malt and just a touch of Beechwood smoked malt from Germany. At just under 1% of the total malt bill, the smoked malt lends subtle complexity without overpowering the layers of caramel and toffee flavors contributed by the crystal malt. Hopped with Magnum, Chinook and Styrian Goldings, Snow & Tell sees brief aging on medium toasted oak chips at the end of fermentation.

Opening with aromas of fig, raisins and caramel/toffee Snow & Tell stretches out, enveloping the palate with a lingering malt sweetness that transitions into spicy/herbal hop flavors coupled with a drying, oaky character. The hops are fairly minimal at 25 IBUs, but serve to keep Snow & Tell from becoming cloying. A great sipper on a cool night, we suggest pairing Snow & Tell with heavy meat dishes, strong aged cheeses, chocolate and shortbread.

At Glenglassaugh, in addition to the traditional production, we also produce a very limited quantity of whisky using richly peated malted barley as the cereal varietal. The malted barley has been dried in the traditional way, over peat infused kilns, giving the whisky its unique smoky flavour. Glenglassaugh ‘Torfa’, with its peaty, phenolic nature, is a unique expression, and is quite different to the usual style of whisky produced in the Highlands.

Colour: Gleaming yellow gold.

Nose: Vivid, sweet, sooty campfire smoke and sea air infuses zest of lime, apricot jam and ripe soft fruits; all gently warmed by hints of stem ginger and cracked black pepper.

Palate: An eloquent, sweet coastal peat smoke engulfs candied peel over melon, pineapple and roasted red apples. Oat biscuits, hints of heather honey and a gentle cigar box spice all combine to give a terrific balance to the expressive smoky character.

Finish: A heady, yet elegant, harmony of distinct coastal peat and striking spiced fruit flavours.

The Brasserie des Géants, or Giant Brewery, is housed in a medieval castle in the town of Irchonwelz, in the French-speaking south of Belgium. The Géants Christmas beer came out in 2007, and it’s their best one yet. Rich and warming, and just a bit spicy (thanks to the delicate addition of a special aromatic herb from the region of the brewery), this festive ale has everything you want in a Belgian beer – but not the cheap sugary flavor that the more commercial breweries use to reel in a less sophisticated crowd.

Rated 8’s and 9’s (out of 10) by the authors of The Beers of Wallonia. As the label says, really just a richer version of La Moneuse, using a little caramelized malt and maybe more hops. The malt flavor of the Special is a little darker, roastier, and certainly sweeter, which must somehow distract attention a bit from the earthiness which is so notable in La Moneuse. The Beers of Wallonia authors opine that the Special Winter offers more "character" than the regular La Moneuse, but we don’t entirely agree. The beers share a lot of the same characteristics, but in different proportions. Like La Moneuse, the Winter is rather fizzy." - importer

It combines some of the best elements of those other two beers – with a fine balance of malt and hops, complex character, a refreshing dryness, and a gorgeous cellar aroma – but is distinguished by its festive copper color.
