The combination of fruits and citrus from the hops and the round coffee aromas plus the warmth of the alcohol makes this a clash of a IIPA, Black IPA, American strong and Barley Wine. Cheers.

Black Maria is an American inspired Black IPA. It is black as a stout and hoppy as an IPA. The beer has been brewed with a good amount of highly roasted Carafa Malts, but with a relatively low amount of caramel and chocolate malts. This way we get the burned bitter and delicate chocolate notes in the beers, that goes well with the bitter and fruity aromas of the hops. The lack of caramel and chocolate results in less residual sweetness that you normally pick up from an Stout. For the hops we wanted some hops that could stand up against the Carafa malts. Therefore we used a mix of Columbus, Centennial, Galaxy and Cascade for the hop profile.

The label shows the inner yard of the Copenhagen Police Yard folded out on 4 pictures with a quote and a name merged together. The shitty tree on the neck-wrap stands in contrast to the main labels monumental expression. The police is as fake as the quality of the wood. The label is dedicated to police commander Bjarne.

Punk Rauch is a smoke lager in the old Bavarian tradition introduced to modern barrel aging.    It offers a scent of earthy hops on a background of wood and smoked ham.  The taste, light and crusty, provides a short sensation of sweet malt, quickly instigating a lively scrap with toasty resinous smoke, reminiscent  of a tasty brew around the campfire.

Belgian-style Tripel with Citra Hops

This beer was brewed in the Belgian Tripel style... with much exageration! An enormous amount of Citra hops was used, giving to the beer a powerful bitterness and obvious hops aromas. This beer had been fermented with our Abbey-style Belgian yeast, but at low temperature in order to limit the production of fruity and spicy esters. Aromas of mango, cantaloupe melon and passion fruit exhale all along the tasting, and match without complex with the strong alcohol content and hops.

According to the legend, the Herbe à détourne is a plant that makes you loose your way if you step on it. This beer finds its roots in the tradition of the Belgian Tripel style, but was designed in the New World way. Citra Hops is used without restraint, giving the beer an intense bitterness. Aromas of mango, cantaloupe melon and passion fruit exhale all along the tasting, and match without complex with the strong alcohol content and hops.

This very unique beer was born in 2009 from a special collaboration between Dieu du ciel! and Shiga Kougen, a brewery from Nagano, Japan. Black in color, it is an hybrid between an Imperial Stout and a Belgian Saison. It presents predominant bitterness and roasted malt flavours, balanced by strong alcohol content. The finale is dry, complex and spicy, a typical signature given by Saison yeasts.

Gose – the lactic and salty specialty ale associated with the German cities of Goslar and Leipzig – has a chronicled history dating back over a thousand years.

But not so long ago, it was virtually extinct, known only to a shrinking base of locals and the odd beer tourist who made the trek to the few Leipzig pubs that still served the quirky specialty.

Today, with interest in sour ales soaring , “new-traditionalist” brewers in Germany, the U.S., and beyond are recreating the style – generally with a nod towards a sweeter, more “drinkable” palate, or to a relatively simplified, aggressive lacticity.

Ritterguts Gose is the real thing, the one example still made to the traditional recipes – boldly sour and funky, but with the elusive old-German qualities of balance and complexity. Once we tried this beer in Leipzig, we were both amazed and delighted that no one was importing it. But we didn’t dwell on that for too long!

"This grim little verse belongs to one of the oldest of English folk tunes. It depicts the cultivation of barley as a series of abuses and indignities committed upon pour little John Barleycorn, who eventually triumphs, reborn as beer and whiskey. Our Harvest Dance Wheat Wine is a celebration of John's cousin wheat, the great staple crop of Middle America. Wheat wines are a somewhat recent stylistic development, akin to barleywines in strength, but brewed with a large portion of wheat malt, which provides a soft mouthfeel to balance the big body of these warming brews. Our vermouth, hand-made by Martínez Lacuesta since 1937, is held to be one of the finest aperitifs. The “botanicals” (in Italian language called “Conzia”), or herbal extracts (herbs and aromatic plants cold-macerated in white wine) are first aged in American oak barrels and then added to the white base wine along with sugar, citric acid, caramel and alcohol.
On the nose it is highly aromatic, evoking the macerated herbs used: vanilla, chamomile, gentian and others. In the mouth it is a perfect balance between bitterness, sweetness and acidity with a long finish.

This series is all about experimenting with unusual brewing ingredients. Tripel Café uses green coffee beans, orange peel, and coriander – brewed with Belgian yeast for an 8.8% Belgian Tripel. This is the fourth in our 750ml Belgian Style series.

In this beer, we wanted to experiment with green coffee beans. The unroasted coffee beans bring a light coffee bitterness to compliment the citrusy hops, spicy phenols, and yeasty floral esters. Tripel Café is light, with a delicate body and a rounded, soft bitterness. Classic Belgian lacing gives way to pale straw color and highly effervescent mouthfeel.

Of course, because the 750ml bottle is conditioned, some haziness is to be expected. When pouring the bottle, be aware that some sediment may be present. Pour carefully to avoid this, or don’t. The choice is yours.
