Urban Chestnut Forest Park Pilsner
PRE-PROHIBITION PILSNER
For the past 30 years, Forest Park Forever has been dedicated to keeping St. Louis’ beloved Forest Park one of America’s greatest urban parks. As a “Prost!” to the organization’s anniversary festivities, Urban Chestnut chose to brew this Pre-Prohibition Style American Pilsner, a style that was popular in the US at the time of the park’s opening in 1876. And like Forest Park itself, this beer has a fine, noble character and is accessible to all.

Deinde Repedo Sour Saison w/ Blueberries
A tart, barrel-fermented blueberry saison collaboration with Call to Arms. The name, Deinde Repedo, loosely translates to "Next Step". NextStep is an organization that aims to revolutionize the quality of healthcare for the physically-challenged. The beer's release today is timed with the conclusion of The Snow 2 Sand Charity Ride to raise awareness and support for NextStep. The bike ride started in Denver (at Call to Arms) and ended in Anaheim at Bruery Terreux for the beer's release.

Cube Cuvée #1 represents the first in a new series of beers for us. Two years ago, we began stashing beers away in barrels to use in the production of blended sour beers that would include significant aging character. We finally have enough of these old barrels that we can begin to include them in blends. For this first release, we have selected barrels of 16 month old brown sour ale and 4 month old golden sour. Something in the ballpark of a Flemish Red, CC1 is refermented in the keg for a soft carb, and shows beautifully balanced dried fruit notes and a complex, oaky tartness. Lagunitas Sucks "Brown Shugga' Substitute"
This sad holiday season we didn’t have the brewing capacity to make our favorite seasonal brew, the widely feared BrownShugga’ Ale. You see we had a couple of really good years (thank you very much) and so heading into this season while we are awaiting the January delivery of a new brewhouse we are jammin’ along brewing 80 barrels of IPA and PILS and such every 3 hours. A couple of months back we realized that since we can only brew a mere 60 barrels of Shugga’ every 5 hours, that we were seriously screwed. For every case of Shugga’ brewed, we’d short 3 cases of our favorite daily beers. It’s a drag. This year, we brewed something that we think is also cool and brews more like our daily brews. The new brewhouse will help insure this kind of failure never happens again. It’s a mess that we can not brew our BrownShugga’ this year and we suck for not doing it. There is nothing cool about screwing this up this badly and we know it. Maybe we can sue our own sorry selves. There is no joy in our hearts this holiday and the best we can hope for is a quick and merciful end. F*@& us. This totally blows. Whatever. We freaking munch moldy donkey butt and we just want it to be all over...
So this substitute beer is a ‘Cereal Medley’ of Barley, Rye, Wheat, and Oats…. Full of complexishness from the 4 grains, and weighing in at 7.85% abv, Then joyously dry-hopped for that big aroma and resinous hop flavor.

2014 Newsprint Cabernet Sauvignon...$23.99

Newsprint Cabernet is a serious show- stopper! This wine features big and bright blueberry notes and hints of fresh herb on the nose. Swirl and take a deep sniff, you’ll get secondary notes of vanilla, black cherry, cassis and red currant. This wine has some serious body, but the soft tannins give it a lovely texture. There is some good acid here, keeping things super fresh.

Struttin’ and a Cuttin’
Another Funked Up Belgian style saison finished with
Brettanomyces. The grain bill includes Pilsner, Vienna and
Munich malts. The addition of spelt provides a crisp, dry finish
and 60# of honey gives it a complex sweetness and lighter body.
We fermented with a Belgian Saison yeast and then tucked this
away for 6 months in steel wine barrels where we added the juice
of hundreds of pounds of cantaloupe and honeydew melons. Then
inoculated the barrels with a wild yeast, Brettanomyces
Bruxenellenis to eat the extra melon sugar and produce funky
flavors. If that is not interesting enough we bottle and keg
conditioned (naturally carbonated) the entire batch using only
yeast, more honey and melon juice (that’s crazy stuff there folks).
The resulting beer is fresh, fruity and funky.

What's the first thing you need to do when you start a brewery? Develop your logo, of course. With any potentially decent brewery, your logo must be a skull, it has to be a skull, you'll be laughed out of the room if you don't have a skull. So we went hunting in the area where all the great skulls have come from and were shit out of luck. By those fateful dumpsters all we found was this deformed neanderthal type deal, or maybe it's from an ape, and a big ol' pile of face. To celebrate our lack of success in finding a really cool skull, we are embracing another required cliché by brewing this American IPA. A modicum of simple malts provide the mediocre backbone to the mountain of various hops that are utilized and rotated throughout the brewing process. Look for dank overtones supported by various citrus and heirloom fruits. It's the straight forward fuckin' IPA that you always wanted from us. You lucky bastard.

Ahh Dey Ahh Dey, RRRRico Ahh Dey Ahh Dey Saaaauvin!
An India Pale Ale featuring Nelson Sauvin hops. Named after the Sauvignon Blanc grape, is a variety of hop developed and grown in New Zealand. It has a strong fruity flavor and aroma that is described as resembling white wine, or fresh crushed grapes or gooseberries. Some reviewers of this hop perceive the fruitiness as being very tropical with descriptions including passion fruit, tangerines, and grapefruit. These hops are organic and are about 4 times as expensive as our normal American varieties, hence the footed glass only.

Cluck Cluck! The Chiquen has come home to roost!
An amber ale brewed with rye malt and aged in rye whiskey barrels. Our first barrel aged beer here at Against the Grain is the Kentucky Ryed Chiquen. Named so because it was made in Kentucky, has a lot of Rye in it and was aged in rye barrels and it's not Chicken. As we all know (or should know) Chiquen refers to anything that is not chicken.
Now that we have all that straight, we will talk about what is in this beer. Brewed with Maris Otter from the UK and rye malt and caramel rye from Germany, imparting a spicy, fruity and dry flavor. Then hopped with enough English Nugget and Kent Goldings just to balance and fermented with our house ale yeast. After fermentation we moved the entire batch into the AtG private dining room and into used Redemption Rye barrels from our good friends at Strong's Spirits. There it aged for 5 weeks until we felt it had picked up the right amount of residual bourbon character and oak flavors. We then transferred it to our serving tank, carbonated it and the end result is on tap now, a balanced drinkable and complex barrel aged beer.

Urbangang (Belgian Lager) brewed with Brewery Ommegang
Florian & Phil are old brewing friends so it was only a matter of time before these Master Brewers came together to create two completely new beers. Ommegang brewed our German-style Doppelbock & fermented it with their Belgian house yeast, while we brewed Ommegang’s Belgian-style Dubbel & fermented it with our Zwickel yeast. Our expression… Urbangang… is a balanced combination of malt & spice aromas with a clean Lager finish. ABV: 9%

Xaver (Wheat Ale) brewed with Karmeliten Brauerei 
Thomas Eichenseher, Braumeister at Germany’s Karmeliten Brauerei, collaborated with UCBC to brew this Old Bavarian-style Wheat beer. Xaver, featuring a prominent banana aroma combined with a nutty, caramel malt flavor, is the first of many future collaborations with European breweries, helping us pay Reverence to our old-world roots.

2016 Rombauer Napa Valley Sauvignon Blanc...$23.99
WINEMAKING: The grapes were gently whole-cluster pressed while the fruit was still cool. Ninety percent of the juice was fermented in stainless steel tanks. The remaining juice was fermented in neutral French oak barrels to impart weight and texture to the wine. The barrel-fermented portion was blended back to tank after three months in barrel.
TASTING NOTES:  This wine is brilliant pale yellow with a bright green hue. It exudes aromas of ripe lime and lemon, grapefruit, pear and white nectarine with a hint of fresh-cut grass. The palate is fresh and enticing, as grapefruit, white nectarine and passion fruit intertwine with Meyer lemon and lime, making the mouth water. Balanced yet lively acidity lingers on the palate inviting another taste. Boxwood on the finish gives the wine length and vibrant freshness.

The usually peaceful St.Vrain River snakes out of the Rocky Mountains, winding mischievously towards our brewery. Named after Ceran St. Vrain, an 1800’s trapper and trader in the valley, St. Vrain is our version of a classic Belgian Tripel. Light in color and lightly hopped using Celeia hops, a touch of malt sweetness contrasts the warm spiciness hidden within. What at first appears benevolent can manifest into a mighty serpent in waiting.

2014 1000 Stories BOURBON BARREL Aged Zinfandel...$16.99
The mighty buffalo is an iconic symbol of American heritage, a heritage woven with a thousand stories, unique traditions and a pioneering spirit. Our country’s history of hard work and tenacity lives on today in each of us and continues to be at the essence of America’s character. This is the inspiration for 1,000 Stories, a unique wine aged in new bourbon barrels - a reflection of our winemakers’ pioneering spirits. It wasn’t a quick process, but creating something by hand to meet exacting standards seldom is.

1,000 Stories is produced in small batches, much like premium bourbon. Select parcels of Zinfandel were sourced from Mendocino County, some of which came from vineyards with family histories dating back to the 1880’s. Each individual lot started the ageing process in traditional American and French wine barrels. The next step was the introduction of the wine to bourbon barrels. Part of the blend was aged in new bourbon barrels from the Independent Stave Company. This process is similar to ageing in wine barrels, but with a flavor profile unique to the charred bourbon barrels – vanilla, dried herbs and a hint of caramel. The final step of the process was the most grand: the blend completed its barrel ageing in old bourbon barrels from famed distilleries such as Heaven Hill and Four Roses. Some of these barrels were 13 year old, single-use barrels, used to make the highest quality bourbon.

A New Twist on an Old Tradition!
This special brew was designed with the help of our Freistaat Bayern brothers who also built the brewhouse upon which we brewed it. It's a new twist on an old tradition!


In far-away 2006, in a beer hall in Philly, at the end of a long road, we share our first beer with a Friestaat Bayern Brewer enharmonically named; Wolfgang. At stake, over a Pils, was whether or not Lagunitas would purchase from him a new 80bbl brewhouse. It was a lot of money. Playing Sileus to my Brewery’s chariot, together- with the benefit of the lager- we forded the emotional-economic crevasse and commissioned the brewhouse. Unforseeable at the time would be the need for even more brewing capacity today. So, for the umpteenth time in our short history, we lurch down that increasingly familiar road towards new brewhouses, fermentation tanks, and the like. The actual installation bears a strong resemblance to a heart transplant, on an awake patient, performed on the backside of a galloping horse, or at very least in tow behind Dionysus’ trustworthy Silenus.
