Buckle up. Bushmills Single Malt Whiskey 16 year old is truly one of the great whiskeys of the world. Aged for about 15 years in a combination of Oloroso Sherry and bourbon-seasoned casks, and then finished for about 9 months in port wine pipes (large barrels unique to making port wine.) This single malt shows its layers of flavor, juicy fruits, nuts and spice, as well as a hint of ruby redness. It’s best enjoyed neat. Okay, maybe one small cube of ice to open it up.

The Totally Unironic Return of Midori
Roughly four decades ago, a melon-flavored liqueur with an otherworldly, lurid green glow was unleashed upon New York City at disco temple Studio 54. This green Godzilla was Midori.
Previously known in Japan as Hermes Melon Liqueur, parent company Suntory renamed the liqueur for the Japanese word for “green.” It made its U.S. debut at a the launch party of Saturday Night Fever, where the film’s cast and crew quaffed brightly-hued “Japanese Gin & Tonics.”

Although it’s never gone out of stock, Midori went out of style when more “proper” cocktails came into vogue in the early aughts, replaced by classic cocktails and bitter and boozy newcomers. Today, the melon-flavored liqueur is back, showing up in serious cocktails—and not just Midori Sour riffs, either.

Midori’s comeback isn’t an overnight success story: it’s been inching back since 2012, when Suntory tweaked the neon-green liqueur to be less sweet and less artificial. “Suntory wanted to change the taste, adjusting to the modern palate in a more pleasant way,” explains Clement Reid, marketing director at Beam Suntory.

Those changes included reducing the sugar content and switching to natural flavorings (Japanese melon, muskmelon and Yubari melon), which in turn increased “favorable melon aroma/taste.” The new bottling launched globally in 2013—including in the U.S., where, in a nod to the neon green original, Midori Highballs were illuminated with glow stick stirrers at their Tales of the Cocktail debut.   - Punch

So what is going on in all these pictures!

In the top picture. The bottle on the left: we got a signed bottle from Kyle Merklein, the master distiller at Ben Holladay. This bottle is the sought after "16-Charlie-22" barrel.  This barrel they considered one of their original best barrels.  Whenever they wanted to showcase what they were doing, this was the barrel they went for to pull samples.  In blind tastings, it always stood out.     The bottle on the right, is our last unopened bottle of our first barrel pick.   It apparently was a "16-Charlie-22" sister barrel that we picked.  Distilled the same day, barreled the same day, same rick house and sitting right next to "16-Charlie-22" - that is why our first pick was so amazing.   Both ageing on floor 5.  

The next 3 pictures, we recently picked out our next Ben Holladay BARRELS!  We picked out a traditional Ben Holladay Bourbon and a Soft Red Wheat.   Apparently we always pick top floor bourbon!!  In a blind tasting of barrels, we picked the 5th floor again on our Bourbon, it is fantastic and over 7 years old.  The Soft Red Wheat, we picked a 6th floor barrel!!

We will not see those for about 3 months.  

Stay tuned for release details!!  But we for sure will give Ben Holladay supports first crack at them.

For this Pruim, we used the old plum variety Belle De Louvain, hand-picked in Limburg, Belgium. Maceration took almost four months and the lambikken for both maceration and blending originate from six different barrels and thirteen different brews of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland.
