From his humble beginnings in the small farming town of Termonfeckin in Ireland’s County Louth, to his work as the North American representative for one of Ireland’s most beloved and storied products, Tim’s life and career have been marked by the kind of passion, warmth and love of whiskey that typifies the Irish True character.

Combining an easygoing, jovial demeanor with an almost unrivalled passion for food and drink, Tim has spent his career dedicated to furthering Irish agricultural interests. Whether as an egg farmer, where he was responsible for 80,000 hens, or as a representative of Irish Food Industry Strategic Growth Committee or as the representative of Ireland’s most beloved spirits, Tim has spent a life devoted to bringing the products, personality and spirit of Ireland to life for audiences across the globe.

Perhaps unsurprisingly, Tim’s passion for whiskey was ignited in the cozy bars and pubs of his hometown. A natural raconteur, aficionado of useless trivia and self-proclaimed bar game expert, Tim found himself at home in these unique surroundings, where he was drawn first to the conviviality, spirited discussions and regular toasts. A true all-rounder, Tim’s work with Cooley allowed Tim to not only spread the gospel of Ireland’s water of life, but also led to him furthering his category expertise, developing a keen nose and palate which eventually led to him taking an active role in all aspects of the process, right down to cask selection and blending. His current role as Tullamore Dew Brand Ambassador sees him bringing his career to a new level, as he travels the country, educating, entertaining and sharing his passion for the most Irish True of Whiskeys.

As at home as he is on a sports field as he is in his favorite Irish True bars, Tim is a fan of rugby (a real man’s football), football (which he now begrudgingly calls soccer) and recently ran his first Marathon in Paris, in a blistering 4hrs 20minutes. But as Tim says, it’s not about the race, it’s about raising a few glasses afterwards. Slainte!

For Summit Unchained 9, brewer Eric Blomquist created a genuine Dunkel Weizen – an often-overlooked German wheat beer style. Sneaky Pete is a blend of five hop types: Simcoe, Glacier, Centennial, Vanguard and Hallertauer, with Simcoe playing the dominate role at 30%. In addition, three separate malts were used: Honey Malt, Rye Malt, and Munich Malt. The brew has a copious aroma of white grapefruit, citrus overtones, a complex rich middle and long flavors in the finish; a real beauty. Finished with wild clover honey. 89 IBU’s, 10% ABV.

With all the fresh Bells and Firestone Walker coming in today, I was already debating what to take home tonight.
I made my decision....

The reason I bring this up is the often commented on why we don't sell everything as singles.  The reason I always tell people is freshness.  We keep a small selection on the mix a six rack, but its always going to be fresh.  I load it down with customer favorites like Bells, Firestone Walker, Founders, Schlafly and so on.    We used to sell everything as singles and that just was out of control for containing freshness.   Somebody would always want some random beer as a single and the other 5 bottles would just sit for who knows how long.  We might have a small selection on our mix a six rack, but I can guarantee they are FRESH!!   We are extremely concerned about keeping our selection FRESH on the singles and the 6 packs.  
(we do have a number of higher end beers sold as singles on the regular shelves also like Boulevard Smokestack Series and Odell 4pk beers).


Also, we do the same for our 6 packs, we might run out of Bells Two Hearted frequently, but that is part of our mission to stay fresh.   When Bells comes back into stock, we could by 50 cases to get us through to the next batch, but then we lose the freshness.  We would rather run out than sell old beer.  There are so many choices now that if we are temporarily out of Bells Two Hearted or another IPA, we always have another good choice for you that will be FRESH!  We could have bought more Bell's Oberon on the first batch, but now we have a very fresh batch at our stores.

History.
700 years ago, in 1295, the Augustijner-abbey of Gent was created with the help of the ruling Borluut family. That's the reason why 1295 is printed on every bottle of our delicious AUGUSTIJN Abbey Ale. The origin of our Augustijn goes back to this abbey, where today only 7 monks are left. More than 20 years ago the monks licensed the recipe and the century-old yeast-string for that delicious beer to Brewery Van Steenberge, situated a few miles north of Gent in a small village, called Ertvelde.

In 1295, the Augustijner abbey of Gent was the first abbey of the Augustijner-order in the Netherlands. Modern Holland and the Flemish part of Belgium and France were one nation at that era and were called the "Netherlands". The abbey of Gent became one of the most important religious, political and cultural centers of Europe in the 14th and the 15th century. In 1582, the abbey was completely ruined by the Calvinists (Protestants). But shortly after that revolution, the abbey resurrected and became again an important religious and cultural center, until the French revolution, when the monks were expelled and the abbey was sold to the highest bidder.

Napoleon, the French dictator or Emperor, needed the money to pay for all his wars and he found and stole the money from the wealthiest power at that time: the Catholic Church. After the revolution, the abbey was reestablished but it never gained it importance back. In 1995 and 1996, the abbey is open for the public and shows all its artifacts. Important celebrations and exhibits are taking place all year round.

Tasting note: A highly seductive nose speaks of black cherry and liqueur of red raspberry that dissolves into vibrant, rich and impressively concentrated flavors that possess a tender mid-palate but firm up quickly on the focused, intense and palate staining finish. This is not as complex as the two old vine Gevrey cuvées but it's, not surprisingly, finer.

Tasting note: A relatively expressive nose of wild red berries, blue berry liqueur and earth undertones that are also reflected by the bigger and notably more robust medium-bodied flavors blessed with ample amounts of extract and an attractive touch of minerality on the seriously long and ever-so-mildly austere finish. A knockout at this level.

AGING: Aged for 20 months in 60% new French Oak barrels
WINEMAKER NOTES:
The 2009 vintage was a long, mild growing season which delivered fruit with bright acidity, relatively low potential alcohol, dark color, and expressive aromatics. As the year was relatively cool for Napa Valley standards, Merlot performed particularly well. For the 2009 Mad Hatter, we blended fruit from our estate with grapes from other valued sources in the Napa Valley, to create a wine that is soft, rich and generous. Cabernet Sauvignon adds a regal, classic quality to the wine, while smaller percentages of Cabernet Franc and Petit Verdot provide a depth and aromatic complexity that makes the wine even more compelling. After a short decanting, the wine comes alive, with deep, ripe notes of blackberry, black tea, and forest floor. On the palate, a solid tannic framework supports the rich fruit flavors, accompanied by subtle notes of gravel and minerals. This wine will easily age for a decade or more, but should probably be consumed now, in its youth, to enjoy all of the bright, fresh fruit character it shows now.

Andy has worked with some of Napa Valley’s premiere wine producers, including Newton Vineyard, Spottswoode, and Harlan Estate. He was the winemaker at Staglin Family Vineyard for the 2001 and 2002 vintages. Since that time Andy has taken on several winery clients, including Screaming Eagle, Dalla Valle, Arietta, Ovid and Dancing Hares Vineyard.
