Leopold Raffin started making cognac in 1889, but it is unfortunate that we have heard that they have gone bankrupt and are no longer producing.  We have some left of this amazing Cognac.

A blend of 30 cognacs from the finest crus comprise the fabric of our XO. It spends at least a decade in Limousine oak and is marked by a bouquet of caramelized peach, toasted almonds and candied fruit with spices, vanilla, chocolate and baked apple showing on the palate. Our XO then spends a final 6 months in a Meursault cask a vessel that has aged sweet Meursault wines produced from the Chardonnay Beaune Subregion of the Burgundy area. This second wood finish adds rich spicy flavours, toasted almonds, layers with a richness of creamy toffee notes and traces of oak and depp vanilla.

Our XO is the result of a blend that has been aged for at least a decade in Limousin oak casks to reach maturity revealing a full bouquet of rich caramelized peach, toasted almonds and candied fruit. Aromatic richness evoking provocative perfumes of spices, vanilla and liquorice blending together with hints of chocolate and baked apple. Complex, rich, supple, balanced and long lasting on the palate. A blend of 30 cognacs all aged for a minimum of 10 years.

2013 Black Slate Porrera Priorat $18.99
Another of the single-sector Priorat wines from importer Eric Solomon, the 2013 Mas d’en Compte is a blend of 60% Grenache and 40% Carignan aged in a combination of concrete tanks. Large wood foudres and smaller French oak barrels. The wine offers loads of licorice and black raspberries and seems to represent the quintessential style of Priorat in its opulence – floral, blueberry and black raspberry fruit, intense minerality and silky, lush tannins. This medium to full-bodied wine should continue to drink well for another 5-8 years, possibly longer.

The NV Grand Siècle Grande Cuvée is a Grand Cru Brut based on 55% Chardonnay and 45% Pinot Noir from a total of eleven villages. The youngest release is a blend of the (declared) vintages 2002, 1999 and 1998, and has a yellow-golden color that opens beautifully with a clear, deep and complex bouquet. It is pure, ripe and very elegant, mixing pain-aux-raisin and honey flavors with pure chalk. Ample, highly elegant, beautifully matured and fruit-intense, with fine caramel, honey and torrone flavors, this is a well-structured Grand Siècle with great finesse and delicate freshness. Awesome.

The wort is spiced with coriander, black peppercorns, and sweet and bitter orange peel before beginning a mixed fermentation with ale yeast and an array of Brettanomyces and Lactobacillus strains. This batch has been bubbling happily away in oak since February. Tart and spicy at the beginning, Funky Wit has a fluffy mouthfeel and ends with a lingering sweet coconut imparted by the oak.
