AUTHENTIC TRAPPIST ALES

Chimay is an authentic Trappist ale.
That means that it is brewed within the walls of a Trappist monastery under the supervision and responsibility of the monastic community, which is involved in the entire process of making and selling the ale.  The bulk of the revenue that this activity generates is used to finance social services and cover the community’s needs.



The Chimay Red and the Blue are two classic beers from Belgium
(We also have Chimay Cinq Cents, Chimay Gold and Grande Reserve Barrel Aged in stock)

Chimay has been stocked in our stores for at least 30 years!  I cannot remember a time when it was not on our shelves.





Chimay Red Premiere Trappist Ale
Style:  Abbey Dubbel

Abbey Dubbel:  These are dark, malty, yeasty strong ales in the Trappist tradition, but produced (mainly) by secular brewers. Dubbels range between 6.5-8% abv, and have a dark brown, cloudy colour, and a palate mixing malt, a lush fruitiness, and yeast. They are typically bottle-conditioned.

Bottle Conditioned

Ingredients: Pilsner malt (French barley from Champagne); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer. Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.


Chimay Blue Grande Reserve Trappist Ale
Style:  Belgian Strong Ale
Belgian Strong Ales can vary from pale to dark brown in color, darker ales may be colored with dark candy sugar. Hop flavor can range from low to high, while hop aroma is low. The beers are medium to full-bodied and have a high alcoholic character. Types of beers included here include tripels, dubbels and ultra-strong abbey ales.

Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
