Speaking of Unicorns, there was only one barrel of the 2010 Pegau Chateauneuf Du Pape Inspiration produced and it was bottled only in Magnum. “There’s a single barrel of this full-bodied, deeply concentrated elixir and I’ve no doubt it will be very hard to come by. In addition, this cuvee is only bottled in magnum. Nevertheless, it is spectacular, and I suspect will also have close to three decades of longevity.” (98-100) The Wine Advocate

Pasteurized cow's milk cheese, Auvergne. Paste is moist and semi-soft. The veining is bold and deep blue and thoroughly caverened through the paste. The flavor is big, pungent and less salty than other blue cheese. Great crumbled on salads, on bruschetta and also perfect on a cheese board.

First of its kind to incorporate all four grape varieties that seriously come into question for this cuvee – in order of prominence here: Grenache, Carignan, Syrah and Mourvedre – the 2011 Le Cirque red delivers a slightly reduced aromatic display suggesting red and black raspberries with a smoky, sweaty, sage-scented overtone. The reduction here happily translates into positive tension and invigoration on a sappy palate, tart-edged in its berry-concentration and pungently herb-tinged, leading to a mouthwateringly salt-tinged, gripping and stimulating if faintly rustic finish.

Our Coffee Stout is a classic combination of a traditional stout and premium French roast coffee from St. Louis roaster, Kaldi’s Coffee. Roasted barley and coffee dominate the aroma, with the sweetness from the stout balancing the acidity of the coffee. We use a unique cold toddy extraction process to brew a less acidic coffee for the beer.

In the 1990’s, Kaldi’s staff started visiting the Schlafly Tap Room, asking for a pint of stout and a shot of espresso. Both Schlafly and Kaldi’s realized this was a match made in beer heaven, and soon started working together to find the perfect coffee blend to mix with our Oatmeal Stout. This collaboration continues today, with regular tastings to perfect the Coffee Stout.

Appearance
Deep amber with a cherry wood sheen.

Nose
A delicate mix of ripe autumnal fruits - notably blackberries and red plums. Rich Oloroso sherry and candied orange segments. Spiced oatmeal biscuits and toasted oak fragrances bring excellent weight and balance.

Palate
Resolute flavours of fine Oloroso sherry and bitter chocolate sauce, which has been spread liberally over homemade plum pudding. This is all infused with fabulous spicy notes - cinnamon, allspice and nutmeg. Full bodied with smooth tannins.

Conclusions
Long and lingering.

Laphroaig 15 year old was first created 30 years ago. Barrels were individually selected for their particularly mellow rounded flavour, then batch bottled at the higher export strength of 43% ABV. The resulting flavour soon became a firm favourite winning many awards. Its highlight was being chosen for the famous ‘Erskine Charity Bottling’ in 2000 when 270 bottles were drawn from a single 15 year old cask signed by HRH The Prince of Wales for this charity of which he is a patron.

Our 200th Anniversary edition has been created in exactly the same way as the original. We very much hope it will be a delight both to those who have enjoyed it in the past and for many of you for whom it will be the first opportunity.

The Story:
Attention coffee lovers! This special spirit was designed to give you a better start to your day by combining two of St. Louis’ favorite things: whiskey + coffee! Therefore StilL 630 is proud to present this delicious collaboration with the fantastic people at the world-renowned Kaldi’s Coffee!

We did several cupping using over 15 different distinct coffee beans of impeccable origin from the greatest coffee growing farms across the world. Then we finally selected the bean variety from Columbia Monserrate whose fruity notes paired best with our Big Jake White Whiskey. But that was just the beginning…

Using one of our newly-emptied RallyPoint Rye Whiskey barrels, the green coffee beans were barrel-aged for weeks to absorb those delicious whiskey aromas. Then they were roasted to perfection by the masters at Kaldi’s Coffee, before being transformed into a toddy concentrate.

We then infused just the right amount of toddy concentrate into our Big Jake to showcase the complimentary flavors of the two products in a harmony of taste. So take a tip from Big Jake and follow the goat; enjoy Big Jake’s Breakfast Brew, whiskey is for breakfast again!

"The vibrant aromatics and flavors that are derived from the use of exuberant amounts of fresh flower hops are what helps create and set apart this most unique beer. New this year (besides the kick-ass new logo) is the fact that 100% of the Fresh Hops are grown right here in Colorado – from Rising Sun Farms in Paonia, CO (there are a few other varieties from our hop farm here @ the brewery, as well as from local growers right here in our area, but the majority are Cascades). We use Warrior hops for bittering, and Goldings for dry hopping. True to our fundamental belief system, the strong hop character is balanced by a strong malt foundation, allowing for an approachable, drinkable IPA that finishes amazingly clean. The beer is full-bodied, bronze in color, and tips the scales at 6.6% alcohol by volume and 60 IBU’s. Available in 22 oz. bombers and kegs. Modern Brewery Age’s December 2007 edition said “Warrior IPA takes no prisoners. It slays lesser brews…superb in every respect.” -- Left Hand

Why Rye? This assertively flavorful grain is more often associated with whiskey than beer. Even in that arena, it has largely been eclipsed by corn and barley, the sources of Bourbon and scotch. But when we procured some seasoned barrels from our friends at Templeton rye, we asked ourselves, "Why not? Why not brew a rich, tawny rye ale, then mellow it in the warthm of charred oak rye whiskey casks? Two kinds of malted rye provide a spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Perle, Magnum, and Saphir hops before easing into a dry, lingering finish." -- back label




Boulevard Smokestack Imperial Stout X – Tart Cherry....$11.99 / 750ml 
As a base beer, Imperial Stout serves as a ridiculously sturdy starting point for layering flavors by incorporating new ingredients or barrel aging methods. Imperial Stout has a huge grain bill featuring several types of malted barley, wheat, rye, oats, and spelt. Robust grain and chocolate/coffee flavors are counterbalanced by date and plum notes from Scottish yeast. For Imperial Stout X – Tart Cherry, our brewers blended in over 24,000 pounds of cherry puree and 1,600 gallons of brewhouse soured beer to lend cherry flavor and a tart, refreshing acidity.
