Appearance:  Intense straw yellow color, slightly amber with golden flashes. Medium-bodied.
Aroma:  Sweet cooked agave, crème Brulée, vanilla and caramel that give way to subtle aromas of cinnamon, red pepper and spices.
Taste:  Sweet and spicy. Cooked Agave, Cocoa and vanilla combined with pepper, walnut and some berries. Vegetables and Woody notes. A soft, silky and very long finish with spices persisting in the back of the palate.
Comments:  A perfectly balanced tequila; is recommended neat or in the rocks to appreciate its complexity of flavors, but also mixes very well.

Welcoming back another member of the family this year, Bourbon County Bananas Foster Stout makes its debut on the national stage. This recipe was first released in 2017 as Bourbon County Brand Proprietor’s Stout only to Chicago drinkers. Beloved by many, this release is especially near and dear to our innovation brewer Quinn Fuechsl’s heart.⁠

At the time when we first released this beer, the brewery hadn’t experimented with bananas much. However, Quinn had a good feeling that the fruit, along with almond and cassia bark, would be perfect ingredients in a bourbon barrel-aged imperial stout — indeed, he was right. Sure to bring a bit of flair to your palate, this decadent pour is well-balanced with deep caramelization, aromas of fresh baked banana bread and warm notes of cinnamon and almond.

STOUT AGED IN BOURBON BARRELS WITH MULBERRIES, BOYSENBERRIES, AND MARIONBERRIES
Feeling nostalgic this year, we dove into our Bourbon County vault and pulled out an iconic recipe. In 2013, we released “Backyard Rye” and our senior innovation manager Mike Siegel found himself hand picking mulberries off trees just steps away from our Goose Island Barrel House in Chicago. Inspired by that initial release and by his own childhood memories of picking fruit in his own backyard, Mike set to work on this year’s Bourbon County Backyard Stout.⁠
This barrel-aged stout was first aged in bourbon barrels for at least one year, and then finished and blended with mulberries, boysenberries and marionberries. Each addition of berry contributes its own distinct flavor profile, with some adding sweetness and others providing acidity and complexity. A taste of the past, this imperial stout is a balanced and nuanced play on fresh fruit, vanilla, and chocolate.

Wow, the nose jumps out - malty, woody, bread and yeast come through. Coats the palate with toffee, vanilla and spice. The whiskey lingers in the mouth. Come taste for yourself.  You can feel the warmth of the132.6 proof, but it does not overpower it at all! Fantastic!

Hard to believe that this nobly-sweet masterpiece was possible in 2022! Here is a very lush and creamy Auslese with incredible aromas of exotic fruit coulis plus a slew of tropical flowers. So much ripe papaya on the full-bodied palate! Fantastic concentration, creaminess and vitality right through the super-long and compact finish. Drinkable now, but best from 2030.

2006 Taittinger Comtes de Champagne Blanc de Blancs....$174.99
The 2006 Comtes de Champagne is striking, especially in the way it brings together elements of ripeness and freshness in a hypothetical blend of the 2002 and 2004. Smooth and creamy on the palate, the 2006 is all about texture. There is a real feeling of density and weight in the 2006, qualities I expect to see grow with time in the bottle. All the elements fall into place effortlessly. The 2006 has been nothing short of magnificent both times I have tasted it. Comtes de Champagne remains the single best value (in relative terms) in tête de cuvée Champagne. I suggest buying a case and following it over the next 20-30 years, which is exactly what I intend to do. There is little doubt the 2006 Comtes de Champagne is a magical Champagne in the making.

2012 Taittinger Comtes de Champagne Blanc de Blancs....$215.98
This is a fantastic and refined Blanc de Blancs. So layered and complex, with lemon curd, chalk, hazelnuts, pastries, baked apples and almond croissants. Structured and tightly wound, with almost imperceptible bubbles. Delicious salty notes at the end. Beautiful. Drink or hold.

The 2012 Brut Blanc de Blancs Comtes de Champagne is showing beautifully out of the gates, offering up demonstrative aromas of sweet golden orchard fruit, buttery croissants, peach and hazelnuts. Medium to full-bodied, pillowy and enveloping, it's a rich, textural, vinous Comtes somewhat reminiscent of the brilliant 2002. If it gains in tension and cut (as the 2002 did and as I suspect the 2012 will) with more time on cork, it will make this initial rating seem conservative.

2013 Taittinger Comtes de Champagne Blanc de Blancs....$224.98
The 2013 Comtes de Champagne captures all the pedigree of this great vintage in its energy, depth and vibrancy. Lemon confit, dried flowers, chamomile, spice and crushed rocks all race across the palate. Passionfruit, ginger, marzipan and mint appear later, filling out the layers beautifully. Harvest took place in October in what has become the exception rather than the norm in Champagne.

Philippe Collin, a native of Champagne, moved to Limoux in 1980 to establish his own domaine. Though his family has made Champagne for generations, the opportunities in this sought after, and extremely expensive area, were very limited.
This elegantly constructed rosé is pale salmon pink in color. Though the wine is primarily made from Chardonnay, subtle wild strawberry notes are detectable in the nose and on the palate from the Pinot Noir. The crisp, mineral Chardonnay is softened by the lush and aromatic Chenin Blanc. The result is a lively wine with a lot of character, without any aggressive or astringent notes. This is a wonderfully versatile rosé ideal for pork and salmon dishes, or simply on its own as an aperitif

This lively rosé Champagne has a fresh, breezy feel, thanks to a citrusy overtone of ruby red grapefruit. Reveals a refined mousse that carries additional flavors of white cherry, almond skin, oyster shell and tangerine, while well-knit acidity and saline tang show on the finish. St. Prefert Famille Isabel Ferrando Chateauneuf du Pape

2020 St. Prefert Famille Isabel Ferrando Chateauneuf du Pape...$99.99
Now the flagship of this estate, the 2020 Châteauneuf Du Pape is 75% Grenache and the rest Cinsault, Mourvedre, and a little Syrah. Sporting a deep ruby/purple hue, it offers a beautiful array of black raspberry and darker cherry fruit as well as lots of graphite, chalky minerality, Provençal garrigue, and spice. Beautiful on the palate as well, this medium to full-bodied effort has a layered, multi-dimensional mouthfeel, rock-solid underlying structure and concentration, building tannins, and a gorgeous finish. It needs to be forgotten for 2-4 years (although it certainly offers incredible pleasure even today) and will keep for two decades. Tasted twice.

Even within the context of the excellent 2020 vintage in Chateauneuf this is a really stunning wine. Incredible concentration of spiced plum cake with stacks of candied citrus and dried herb aromas. Giant tannin structure but this is so plush and refined, it sweeps you off your feet and carries you in its arms through the super-long finish. Drink or hold.

Beautifully textured and silky on the palate, with mineral intensity building on the palate, imparting nice persistence and length. A polished yet honest, characteristic wine. Grenache, Cinsault, Syrah and Mourvèdre. Drink now through 2032. 3,300 cases made, 1,007 cases imported.
