This expression of Mount Gay Rum is a pot still distillation of local molasses – giving a heavier rum with more flavour – which has then been aged in oak barrels.

Tullabardine Single Malt Scotch 225 Sauternes Finish...$51.99
For about 12 months, Tullibardine Sovereign has been finished off in Chateau Suduiraut Sauternes Casks, which are 225 litres in size. This creates a wonderful golden whisky with interesting citrus flavour, cereal notes and vanilla. There is a touch of pineapple and orange peel on the finish, which is medium to long.

For about 12 months, Tullibardine Sovereign has been finished off in Chateau de Chassagne Montrachet Red Burgundy Casks, which are 228 litres in size. This creates a delightful ruby colour to this whisky with vanilla, light chocolate flavours, a creamy richness and hints of red summer fruit.

For about 12 months, Tullibardine Sovereign has been finished off in Sherry Butts, which are 500 litres in size. This has created an intense, dark, rich brown whisky. There are hints of toffee and apples with an edge of cereal notes. On the palate, vanilla and toffee abound with dates and spice.

GRAPE: Carignan

Carignan:  (Cariñena in Spain) is a black-skinned wine grape variety, most likely native to the Aragon region of northern Spain (specifically the town of Carinena). The variety goes by a number of distinct names, depending on its precise locality. The most famous wines in which Carignan plays a role are those from Rioja, where it is known as Mazuelo.   In France Carignan was the most-planted grape variety from the 1960s-2000. Around three-quarters of France’s Carignan is located in the Languedoc-Roussillon region. Carignan is only rarely made as a varietal wine, but the best examples can show characteristics of dark and black fruits, pepper, licorice, and spicy and savory accents.

2010 La Font de L'Oliver Carignan VV Cotes de Thongue...$17.99
The grapes are all manually harvested, de-stemmed and crushed, and then allowed a long cool maceration. The Carignan vines used to make this wine are a minimum of 75 years old, with average yields of 30 hl/ha. Amazingly Bruno’s oldest vines are over 130 years old. This wine is aged exclusively in tank, and spends no time in oak.
Tasting Notes: The La Font de l'Olivier Carignan is a classic example of the grape variety. In the nose exotic sandalwood, white pepper, and garrigue spices mingle with briary fruit aromas. The spice follows through to the mouth, complimented by black raspberry, plum, and coco notes. . Ultimately, silky ripe tannins fill out the very long finish. Though this is a concentrated wine, it does not lack in elegance.

Situated in Minervois, one of the oldest wine-producing areas in the Languedoc, Château du Donjon has been in the Panis family for 500 years. Jean Panis took the reigns from his father, Guy, in 1996 and has taken the estate to new heights, with the historic 1998 vintage marking the beginning of a golden era that continues to this day.
Tasting Notes: Donjon’s Flagship bottling. Powerful primary aromas of ripe black fruit and hints of strawberry/raspberry. Very dense on the palate, with black fruit and red cherry flavors. Firm, structured and exceptionally rich.   Excellent with strong cheeses, grilled meats/vegetables, or rich poultry dishes such as duck.

2012 Chirsitan Moreau Chablis...$23.99
Bottled a few weeks before my June tasting, the generic Moreau 2012 Chablis displays tart-edged but succulent apple, white peach and white currant wreathed in wintergreen, its tartness harnessed to juicy refreshment and displaying an unmistakable if subtle expression of salt, stone and iodine characteristic of its genre. The sense of lift – even at nearly 13% alcohol, a figure typical for the Moreaus’ vintage collection, but on the high side for wines of this vintage – delightfully complements the cooling, downright thirst-quenching character of this fine value and remarkably eloquent exemplar of its modest appellation. Enjoy through 2015.

This is our main Estate wine which represents the essence of Pence Ranch, with grapes sourced from each block of our vineyard all of which are on rich clay soils. It is blended as an approachable, friendly wine and intended to over-deliver at a reasonable price. At the
same time, the Estate Pinot Noir retains the seriousness of its underlying terroir, with great depth and character. As our flagship wine, it represents our best effort to capture all the distinct flavors from the various clones and climats available to our winemaker and meld them
into one delicious blend. It is enjoyable now, but will certainly age. Fermented as 20% whole-cluster. 14.2% alcohol. 515 cases produced.

2011 Pence Ranch Vineyards Pinot Noir Uplands...$39.99
Uplands is from three specific blocks at our highest elevations and is planted on calcareous rock and clay. The row orientations are north/south; however the sun aspects and slopes vary considerably because of its pinnacle location with 360˚ of exposure. This micro-site within the vineyard is also far more wind protected than the west blocks, resulting in a subtle, nuanced wine with distinct minerality emanating from the calcareous soils. It is a deeper, more focused effort designed for aging. Fermented as 20% whole-cluster. 72 cases produced.

Westslope is blended from our steepest, oldest and most wind exposed blocks that require rigorous and intensive farming practices because it is such a challenging environment. Our steel vine posts in fact are breaking in half due to the force of the winds. Fortunately, these west-facing blocks posses rich clay soils, providing superior hydration capacity and nutrients. This dichotomy of stress and support creates a perfect environment for growing grapes of profundity and pure expression, and creates a very unique terroir expression. With its intense, concentrated fruit and tannins, the Westslope is destined to age gracefully, yet its lushness encourages early consumption. Fermented as 20% whole-cluster. 71 cases produced.

The Yoichi Single Malt, made in the Yoichi Distillery, conveys strength, softness and delicacy. This single malt whisky is stored and matured for 15 years or more, is characterized by its mature and ample nose and smooth, silky palate.
About the Distillery- YOICHI:
The Yoichi Distillery is located 50 kilometers west of Sapporo on the island of Hokkaido. It combines tradition with an aesthetic that only the Japanese can achieve.   Yoichi has an underground water source that is filtered through peat; the best water there is for whisky production. It has its own kiln topped with traditional pagoda-shaped chimneys. The pot stills are still heated by naked flame, a traditional method that has been abandoned by most of the Scottish distilleries.   The Yoichi distillery is located just one kilometer from the sea contributing to the complex character of this whisky, with its salty and slightly medicinal notes.

Wood Hat Bourbon Whiskey Rubenesque...$36.99 / 750ml

We diligently control every step of the process to produce a full-bodied flavor.  By keeping the grains whole all the way to the end, a bigger robust flavor was created. It did not need much oak to finish it off.  Then, by selecting 3 year old, air-dried wood for the barrels, the flavor blossomed without the tannic bite ‒ a process only possible with a small batch, pot distilled, single barrel, field-to-glass creation. Aged 4 months.
