Every so often I’ll come across a whisky that seems genuinely interesting to write about for one reason or another. Maybe I tried it because of an exceptional circumstance or maybe it came recommended by a friend. Or a sample just showed up - one of the advantages of writing about whisky is that happens, too.

That's the case with this one, a new travel-exclusive release from the Tobermory distillery on Mull. Full disclosure: I tend to not like most Tobermories. The standard 10-year old doesn’t do much for me, and I’ve never been blown away by independent bottlers' releases of Tobermory. I’m also not a fan of Tobermory’s peated line, Ledaig.
Give me a peaty Islay or Talisker instead, please.

However, it's been a while since I’ve tried either Tobermory or Ledaig, mainly because there are plenty of other Scotches to drink. So I figured this would be a good chance to reacquaint myself with the distillery and decide if I should revisit my opinion. As a result, this whisky needed not only to be good, but also to overcome my natural bias against its provenance. Asking a lot, I know.

First, on paper this is as interesting a Tobermory as I’ll ever get to try. A 42-year-old whisky, it's available only in airport retail shops, so it’s not easy to find. A limited edition of only 650 bottles sourced from a single oloroso sherry cask, it’s bottled at cask strength. That means a significant amount of the alcohol originally poured into the cask was lost to the angels over the years. (Spirit that will mature into whisky starts at 60%-68% alcohol)

Bottom line of this review: It’s fabulous. A complex blend of citrus, ginger cake, and grapes on the nose, the taste is wonderfully dry, even more than usual sherry cask whisky. Rather than fall deep into the dark fruits that sherry casks are normally associated with (prunes, raisins, and such delights), the sweetness combines with a rich mix of leather and velvet. A good whisky to dab on your neck for cologne, but with a £2,500 price tag, you’re better off buying cheap cologne and drinking this slowly, enjoying every precious sip.

Clearly, it’s time to rework my way through the Tobermory range.

Our 25 year old has also been re-introduced as an un-chillfiltered spirit, with natural colour, a higher strength of 46.3% and is delivered in a smoked oak glass bottle. Its labelling is on aged parchment and it finds its bed in an Alder wooden box lined with Hessian and closed with solid brass fittings.
This 25 year old has an amber gold colouring with quite a sherried nose, at first, that introduces a stunning sweet caramel dessert aroma, beautifully entwined with subtle suggestions of oak and polished leather. Francisco Jose Fernandez Perez “Don Pancho” was born in Cuba more than 76 years ago.
50 of those dedicated to learn, research, develop, and make rum. He learned the tradition of Cuban style rum from his Mentor Ramon Fernandez Corrales, and graduating as a Bioquemist and Microbiologist, at a time where the title “Masterblender” did not existed, he was the head of research and development for the Cuban brands; his input was fundamental during the transformation and upgrading of the Cuban rum Industry in the 70´s.

After establishing in Panama where he found love and the perfect condition to grew the sugarcane the way it was done in his homeland, he started to produce small batches of aguardiente that later became the Carta Blanca and eventually his aged reserves. For years he collaborated with renowned industries in the development of new brands of rums and in the reformulations of some classic ones without betraying the principles learned years ago.

But after fifty years of making rums for his customers, and see how diverse the market had become, he felt the call of his Origins; with a life devoted to his rums and as one of the depositaries of the Cuban tradition of rum making, respecting every aspect of it, from his distillery in Las Cabras de Pese and in partnership with his longtime friend and business associate Carlos E Esquivel, he envisioned and developed his true and only signature line of rums: Don Pancho Origenes.

The 30 YO Reserva Don Pancho evokes the true orthodox school of Cuban rum, a product not intended for mainstream, in fact a product only for connoisseurs. The result is a mellow, delicate shoyu with a touch of sweetness that stimulates all of the senses.


"Shoyu is a soy sauce, which is a dark brown liquid made from soya beans that have undergone a fermentation process. Natural shoyu employs the use of a centuries-old method of fermentation involving a special koji (Aspergillus oryzae), which converts hard-to-digest soy proteins, starches and fats into easily absorbed amino acids, simple sugars and fatty acids. Most commercial shoyu is made by a chemical process in which cereals and soybeans are mixed with acids.

Bainbridge Yama is the first-ever non-Japanese whiskey to be aged exclusively in hand-crafted barrels made from rare Mizunara oak harvested from the Japanese island of Hokkaido.

THE BAINBRIDGE YAMA PROJECT
Bainbridge Yama Single Grain Japanese Mizunara Cask Whiskey takes its name from the village of Yama, founded on Bainbridge Island in 1883 by Japanese immigrants coming to Bainbridge Island to start new lives and realize new opportunities. The small Yama village was a thriving place, with a traditional Japanese teahouse, Japanese baths, Buddhist temple, a hotel and shops and populated by Japanese families with lots of children. The closure of Port Blakely Mill in 1922, an employer for many of the men living in Yama, caused village residents to relocate to different parts of the island where they took up farming or opened shops and other small businesses.

More than 90 years later the Yama village site, overgrown and reclaimed by nature, represents the last undisturbed Issei (First Generation Japanese immigrant) village site in the United States not destroyed by development. Bainbridge Organic Distillers' founder Keith Barnes first envisioned Bainbridge Yama Single Grain Mizunara Cask Whiskey as a way to draw attention to this piece of history from the distillery's Bainbridge Island home. To this end the bulk of the profits from the sale of Bainbridge Yama Mizunara Cask Whiskey will support ongoing efforts to document and preserve the unique Japanese and American history and heritage of the Yama village site for future generations. BAINBRIDGE YAMA JAPANESE MIZUNARA CASK WHISKEY
Bainbridge Yama Mizunara Cask Whiskey begins its journey from grain to glass in the fertile fields of Washington state's Skagit Valley where organic Full Pint and Alba barley is grown on a family farm near the saltwater confluence of the Skagit River and the Puget Sound. After harvest the barley is trucked 77 miles to Bainbridge Organic Distillers facility, where the un-malted grain is milled, mashed and fermented.

After fermentation the mash is double-distilled. Cuts are made "by hand" and based on the qualities of the spirit as it flows from the still. After the second distillation the whiskey is diluted to 126.5 proof in preparation for being introduced into the virgin Mizunara casks.

Bainbridge Organic Distillers' Mizunara casks begin their life in the forests of the northern Japanese island of Hokkaido. A very small number of Mizunara oak trees (Quercus crispula) are hand selected for harvest based on the vitality of the tree and the straightness and quality of the wood. After harvest the Mizunara oak is quarter-sawn and then air-dried in Japan for at least 3 years. When the rough wood has fully seasoned Bainbridge Organic Distillers imports the wood to the United States.

After inspection the rough sawn wood is sent to a small 4th generation family-owned barrel cooperage where it is expertly fashioned into 10 and 15 gallon barrels. Bainbridge Organic Distiller's Japanese Mizunara oak casks are made from some of the most rare and celebrated wood in existence today.

After barreling Bainbridge Yama whiskey will rest in 100% virgin Japanese Mizunara oak cooperage until it is mature and ready for bottling. The combination of small barrel size, oxidation encouraged by the porous nature of Mizunara oak and storage in the warm stillhouse within sight of the copper still creates what we think are the perfect conditions for maturing whiskey in this incredibly unique and special wood. The finished whiskey bears this out. Ruddy copper in color, Bainbridge Yama Whiskey is un-chill filtered and free from additives, flavor enhancers and coloring agents, and bottled at 90 Proof or 45% ALC./VOL.
TASTING NOTES
Bright aromatics of mango, vanilla, toasted sandalwood, tropical flowers, marzipan and star anise. Flavors open on nutmeg and clove, pear and toasty wood notes, settling out to honeyed vanilla and toasted marshmallow. Finish is warm and lingering with fading spice and a pleasant oak grip.
