Aged in a Jefferson 18 Year Old Bourbon Barrel
Serving suggestions: as a glaze for salmon, pork or bacon, as a sweetener for coffee, oatmeal, granola or yogurt, pour over ice cream and bananas, make exotic cocktails and of course on pancakes and waffles.  
The possibilities are endless.


As part of our 30th Anniversary this year, The Wine and Cheese Place started buying our own barrels of Bourbon.  After the bourbon was bottled, we sent the spent barrels off to local breweries to age beer for us (click to read more).    Currently we have 5  Bourbon Barrel aged beers have that been released and sold out and we have another 15 barrels in the works.  
What was the next step?
How about ageing some  Maple Syrup in a Bourbon Barrel!!!!
So we took a rare Jefferson 18 Year Old Bourbon barrel and delivered it to 4 Hands Brewing Company to be filled with Maple Syrup.
We ordered a 55 gallon drum of 100% Organic Pure Vermont Maple Syrup and hand pumped it into the barrel back on August 8th and let it age until October 30th - almost 3 months.  On October 30th, it took 3 of us almost 10 hours to bottle 708 bottles of this delicious golden nectar.  We had to hot bottle it at 190 degrees, what a sticky mess.  We are currently over the next couple of days hand labeling and hand dipping each bottle in wax to seal the top.   On the label, it says Batch #1, but it was a ton of work, not sure if there will be another batch or not.   


Right now we have about 280 bottles waxed and labeled.  
Should have the rest ready next week.

Sour mash in a beer? Yep, you read that right.
Brewer Eric Harper has gone old school for Summit Unchained #11. As in, Old 152. Inspired by the Kentucky Common beer style that was popular before Prohibition, it actually uses a sour mash of maize and rye in addition to traditional malts and Cluster hops (just about the only hop available in the U.S. back then).
The results are anything but sour, yielding a chesnut-colored brew with a slightly spicy floral aroma, biscuit, caramel notes and crisp, clean bitterness.

Black Xantus (pronounced Zantis) is truly a unique bird. An Imperial Stout aged in American oak barrels, infused with fresh organic/ fair-trade coffee from our local coffee roaster, Jobella Coffee Roasters. This special, limited release beer bursts with bourbon and espresso aromas leading into chocolate and black cherry flavor. It’s 11% ABV is softened by time in barrels which also contributes to the beer’s appeal. We are very proud of this new addition to the Nectar Ales family.

Beer news...

Well, well well...spent the day hand bottling 700+ bottles of bourbon barrel aged maple syrup down at 4 Hands Brewing today.  Thanks to Kevin Lemp and the gang  for letting us destroy the place with this sticky mess!  We had to hot bottle it at 180 degrees.  The syrup tastes incredible but it was a lot of work for 3 of us from 9am until about 6:30 tonight.  It is all bottled but now we have to hand label and hand wax the tops.  

While we were doing that, a ton of new beer came in today. 
I will work on the posts later tonight hopefully....
