"Scotch Ales are strong ales, also known as "Wee Heavy." In the 19th century Scotland, they'd also be known as 160/-, a nomenclature based on the now obsolete shilling currency. Scotch Ales traditionally go through a long boil in the kettle for a caramelization of the wort. This produces a deep copper to brown in colored brew. Compared to Scottish Ales, they'll be sweeter and fuller-bodied, and of course higher in alcohol, with a much more pronounced malty caramel and roasted malt flavor. A low tea-like bitterness can be found in many examples. Best served in a "thistle" glass." -- Beer Advocate

“Deep amber brown with a dense off-white head, Dunkelweiss 30° rediscovers Hefeweiss beers through a Belgian brewer’s lens. Envisioned by our own Matty ‘Smooth’ Gilliland, this beer opens with sweet clove and banana notes that give way to a chocolaty warm finish with a peppery tingle across the palate. ‘I thought it would be fun to make a German wheat beer; we’ve explored the Belgian wheats pretty thoroughly,’ said Gilliland. ‘Since this is Lips of Faith – and part of what makes that program fun is to make beers that are really unique and different – making a big, strong, dark Weiss beer sounded pretty folly-licious. It’ll still showcase all of the flavors that a Hefeweiss beer would have, but add in the burly body and extra punch. Think of it as a Grand Cru Dunkelweiss."

2009 Chateau Puech-Haut Prestige....$16.99
"I’m infringing on David Schildknecht’s territory, but he has not yet tasted this wine. From a bio-dynamically farmed estate, this 2009 is a blend of 55% Grenache (from 60- to 75-year-old vines) and 45% Syrah (from 40-year-old vines), all planted in limestone soils, and aged completely in concrete tanks. This remarkable offering is a naked expression of the vivid terroir and excellent fruit found in this region. The incredible aromatics consist of forest floor, spring flowers, sweet black currants, raspberries, licorice, and incense. With a pure, velvety, seamless, full-bodied texture and a finish that lasts 30+ seconds, this wine possesses a stunning integration of acidity, tannin, and alcohol, suggesting this 2009 will age nicely for 3-5 years, possibly as long as a decade. However, it will be hard to resist given its current performance. Bravo!"

Wine/Beer Cheese Pairing #2

Week Number 2


New for 2011 at The Wine and Cheese Place

Join us each Saturday at our Cheese Counter and taste the weekly pick of a cheese paired with a wine and a beer*. Each Saturday we will feature a cheese in our award winning cheese department at all 3 TWCP locations and have a wine and beer to taste that we feel is a great match.

It will be fun and informal just come in for a taste at the Cheese Counter.

Pairing cheese with wine or beer is an age old excercise and everybody has an opinion. First of all, there are no wrong answers. It is all about what you like. There is no sense in buying a cheese that you don't like because "an expert" said that it is the best match. The perfect match is the wine/beer you like and the cheese you like! But we will hope to give you a few guidelines and ideas to start your journey through the matching process. Join us each week for a new match.

Pleasant Ridge Reserve is an American artisan cheese from Wisconsin. It is modeled after Gruyere from Switzerland and Beaufort from France. It is a nutty, rich, slighty earthy and flavorful cheese -- click here to read more about the cheese

Wine: We are going to match a great Cotes du Rhone which has big fruit and a touch of spiciness to play off the richness of the cheese.

Beer: We are going to match it with a palate lifting Saison. It has great aroma (almost spicy), and good carbonation to cleanse the palate and it adds a whole new dimension to the taste.

"Most breweries have at least one piece of equipment that’s just a bit persnickity. Here at Boulevard it’s fermenter number seven, the black sheep of our cellar family. Ironically, when our brewers were developing variations on a traditional Belgian-style farmhouse ale, the perfect combination of elements came together in that very vessel. You could call it fate, but they called it Tank 7, and so it is. Beginning with a flavorful surge of fruity aromatics and hoppy, grapefruit notes (Amarillo hops), this complex, straw-colored ale finishes long, dry and spicy."
