Wine and Cheese Pairing #8

Week #8

New for 2011 at The Wine and Cheese Place

Join us each Saturday at our Cheese Counter and taste the weekly pick of a cheese paired with a wine and a beer*. Each Saturday we will feature a cheese in our award winning cheese department at all 3 TWCP locations and have a wine and beer to taste that we feel is a great match.

It will be fun and informal just come in for a taste at the Cheese Counter.

Pairing cheese with wine or beer is an age old excercise and everybody has an opinion. First of all, there are no wrong answers. It is all about what you like. There is no sense in buying a cheese that you don't like because "an expert" said that it is the best match. The perfect match is the wine/beer you like and the cheese you like! But we will hope to give you a few guidelines and ideas to start your journey through the matching process. Join us each week for a new match.

Saturday, March 19 (12-4pm)
Featured Cheese:
Manchego
Forsyth: Manchego
Ballwin: Manchego
Rock Hill: Manchego

Extra info about Manchego

Manchego is made from Sheep's milk cheese from the La Mancha area of Spain. It is one of our best selling cheeses in the store. It has a great texture, a distinctive flavor, but not strong.

Wine: To match with this Manchego we are going to use a fruity red from its homeland..
Forsyth: Montebuena Rioja
Ballwin: Montebuena Rioja
Rock Hill: Montebuena Rioja

Extra info about the wine
Montebuena Rioja

"The 2009 Montebuena is 100% Tempranillo. Dark ruby-colored, it offers an appealing perfume of spice box, leather, tobacco, and blackberry. On the palate it is packed with ripe fruit, has outstanding concentration, and impeccable balance. It is a great bargain that offers a sneak preview of the great 2009 vintage in Rioja and northern Spain in general. It should drink well for 6-8 years. " -- Rated 90/100 The Wine Advocate

Beer: To match with Manchego, we are going to use a Pilsner..
Forsyth: Schlafly Pilsner
Ballwin: Schlafly Pilsner
Rock Hill: Schlafly Pilsner

Extra info about the beer
Schlafly Pilsner: St. Louis' own Schlafly makes one of the best craft Pilsners. It is often overlooked when thinking of a great Pilsner.

FOUNDERS KBS coming 3/15

It is sold out. We are getting so many phone calls with people upset that they missed it and some people yelling at us and calling the owner to complain? We tried to be as fair as possible and I kept giving notice on when it should arrive. It is always March 15th and always very limited. Sorry, but there is just not enough for everybody. Trying to be fair is way more trouble than just putting it on the shelf and making it a free for all...which we would rather not do. Sorry, there is no easy way if you missed it.

Firestone Walker Nectar Hemp Ale...$8.49 / 6pk
"Affiliated with the Nectar Ales experience through shared origins at Humboldt Brewing Company, Hemp Ale is a one-of-a-kind brew that boasts an incredibly rich profile and unique herb-accented flavor that is attributable to the incorporation of hemp seeds into the brewing process. A wonderful brown ale full of complexity Hemp Ale is great with food or by itself. American hops create a perfect balance to the darker malts used in this brew. This brown ale is the Gold Medal winner for first place in its category at both the 1999 and 2000 California State Fair Craft Brewing Competitions."

Firestone Walker Nectar IPA....$8.49 / 6pk
"Our IPA is created from a base of Pale and Crystal malts and is aggressively hopped throughout the brewing process with a final hop addition in the conditioning vessel.A beautiful flowery hop aroma will greet you as you dive into this hop lover's dream. A middle caramel malt presence balances high hop bitterness with hop flavor end to end... learn to love hops!"

Firestone Walker Double Jack Double IPA...$6.99 / 22oz
"Double Jack IPA is our first ever Imperial IPA. It features a big malty middle to cloak the high alcohol and mouth puckering hop bitterness. Huge tangerine, grapefruit and juicy fruit aroma blossom over the herbal blue basil and malt earthiness of this aggressive beer. Best enjoyed in moderation."

Firestone Walker Walkers Reserve....$5.19 / 22oz
"A singularly distinctive beer that represents our finest brewing efforts, Walker’s Reserve is a elegant dark ale featuring robust flavors of toffee, caramel and bittersweet chocolate. This brew employs five specialty malts, as well as oat and barley flakes, for added complexity and flavor"

If St. Louis supports all of these great beers from Firestone Walker we will hopefully see some of their other beers like Union Jack and many more.

2007 Catena Malbec Argentino...$94.99 / bottle
"The 2007 Argentino Malbec is a blend of the Nicasia and Adrianna cuvees. Since I have been tasting the Catena wines, this has generally been my preference because it seems to have an extra dimension of complexity. So it is with the 2007 vintage. The Argentino offers a similar aromatic and flavor profile, but with just a bit of extra nuance. It will be most enjoyable to taste these 3 wines side-by-side in another 10 years (or, to be truthful, at any time)."
Rated 97/100 The Wine Advocate

Rated 94/100 The Wine Spectator

2007 Catena Malbec Adrianna...$94.99 / bottle
The 2007 Adrianna Vineyard Malbec is a similar purple/black in color with an expressive bouquet of sandalwood, Asian spices, incense, mineral, black cherry, and black raspberry. Opulent on the palate with serious extraction, great depth of flavor, complexity, and impeccable balance, this loaded, potent effort will evolve for at least 5-7 years and see its 20th birthday in prime condition.
Rated 96/100 The Wine Advocate
Rated 95/100 The Wine Spectator

2007 Catena Malbec Nicasia....$94.99 / bottle
The single vineyard Malbecs begin with the 2007 Nicasia Vineyard Malbec. It was barrel-fermented and aged for 18 months in 100% new oak including a racking into a second set of new barrels (the so-called “200% new oak” treatment). A glass-coating opaque purple/black in color, it offers up a splendid nose of toasty new oak, earth notes, exotic spices, black cherry and black raspberry. This is followed by a plush, layered, intensely flavored wine with potential complexity, precision balance, and a seamless finish. Give it 4-6 years of cellaring and drink it through 2027, probably longer, these wines have no track record of longevity.
Rated 95/100 The Wine Advocate
Rated 96/100 The Wine Spectator

2007 Catena "Zapata"...$94.99 / bottle
The flagship, the 2007 Nicolas Catena Zapata, a blend of 70% Cabernet Sauvignon, 20% Malbec, and the balance Petit Verdot and Cabernet Franc. It delivers an enthralling aromatic array of pain grille, pencil lead, mineral, espresso, mocha, incense, lavender, black currant, black cherry, and blackberry. This leads to a full-bodied, powerful yet elegant effort with great depth and volume, precision balance, and a voluptuous personality (a D-cup of a wine). It conceals plenty of structure and will effortlessly evolve for 6-8 years, drinking well through 2032 if not longer.
Rated 98/100 The Wine Advocate

Firestone Walker Abacus
"Abacus is a barrel aged Barley Wine. Big boozy bourbon and American oak aromas combined with soft chocolate malty undertones. Complex malt flavors framed in oak, with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. This is definitely a sipping beer, best served in a brandy snifter. Abacus pairs well with dark chocolate and sturdy cheeses"

Firestone Walker Anniversary #14
Since founding our brewery in 1996, we have specialized in the rare art of fermenting beer in oak barrels. In the fall of 2006, we released a limited edition, oak-aged strong ale called “10” to commemorate our 10th anniversary, thus beginning an annual autumn rite.
This year, we present 14, our fifth release from our barrel aged program. 14 was crafted from separate lots produced over several months and years, then carefully blended into this truly unique and complex brew --
