Another offering from our “Bones” series, featuring the fermentation of fresh fruit. In this instance California white peaches from Sanger, CA are fermented with a brett’d saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction. Santé!

Some of you may be familiar with one of our past seasonal releases – Pumpkin Chai. While we loved this beer, we decided it was time to kick it up a few notches. We increased the ABV to 9.5% and then aged this delicious concoction in Bourbon Barrels for 8 months. The sweet, strong bourbon flavors are prominent in this beer. The delicate body of this lighter beer is more susceptible to the bourbon flavors and aromas. But don’t worry, we didn’t lose the pumpkin or chai tea flavors here. You will still be hit with strong chai tea up front, followed by a smooth pumpkin finish.

This whisky was born during a time when the iconic Ardbeg Distillery name was almost consigned to the history books. During a period of uncertainty for Ardbeg in the 1980s and 1990s, when the stills were near empty and the filling store silent, a handful of young whisky enthusiasts dared to dream. Together, with hope in their hearts, they laid down a handful of casks and kept the Ardbeg spirit alive.

On the nose, luscious tropical fruits fade into sweet smoke, soot and tar. Take a sip and discover fresh green apples with a crumble topping. Notes of peppermint tea and vanilla guide you towards a long smoky finish.

The 2016 Châteauneuf-du-Pape Combe des Fous is the classic blend of mostly Grenache mixed with a small amount of Syrah and Vaccarèse. It’s a huge, unctuous effort that packs an incredible amount of blackcurrants, garrigue, pepper and dried flowers into its balanced, elegant, layered personality. It picks up a charcuterie meatiness with time in the glass, as well as the telltale melted licorice characteristic of perfectly ripe Grenache. Count me as a fan and this heavenly juice shouldn’t be missed by any Rhône lover.

More cured meats, spice, loamy soil notes, and an incredible core of kirsch and currant fruits emerge from the 2016 Châteauneuf-du-Pape Deus Ex Machina. Deep, incredibly concentrated, multi-dimensional and long, it reminds me of the 2007 at this same point in time. This cuvée is always a 60/40 split of Grenache and Mourvèdre, brought up in tank and new demi-muids, and in top vintages, needs 2-5 years of bottle age to really shine, yet I always also fine a certain accessibility given its balance and purity. It’s capable of lasting for two decades.

One of the greatest young wines I’ve ever tasted is the 2016 Châteauneuf-du-Pape Sanctus Sanctorum which is 100% old vine Grenache sourced from a single parcel in the La Crau lieu-dit. Lighter in color than both the Combes des Fous and Ex Machina, it offers a heavenly perfume of kirsch liqueur, crushed rocks, exotic spices, and graphite. This beauty hits the palate with an incredible display of opulent, decent fruit paired with an elegance and seamlessness that needs to be tasted to be believed. With building richness, no weight, ultra-fine tannins, and a finish that won’t quit, it’s released only in magnum, so it will take upward of a decade to hit maturity and will keep for 20+ years. Hats off to the Maurel family and their consultant Philippe Cambie!

Today, with the revival of Old Dominick, Domenico's great great grandsons Chris and Alex Canale are continuing the tradition. Old Dominick Huling Station is an homage to the whiskeys of 1866 Memphis, with a high-rye mash bill reminiscent of those offered by Domenico Canale in his heyday. Made from 100% Syrah, the 2015 Syrah Powerline Vineyard is much more backward, brooding, and mineral-laced, with sensational notes of blackcurrants, cassis, crushed rock, and tapenade. A true powerhouse on the palate, with terrific concentration, building tannin, and a great, great finish, it's a singular, incredible wine that does everything right. Give bottles 2-3 years and enjoy over the following decade.

2015 Wines of Substance Cabernet "Powerline"....$44.98
Wafting from the glass with notes of rich red and black fruits, cigar tobacco, petroleum jelly and spice, the 2015 Cabernet Sauvignon Powerline Vineyard is the richest, most lavish and velvety bottling in the Wines of Substance portfolio, cutting a broad swath across the palate. Full-bodied, ample and generous, it boasts plenty of savory complexity and concludes with a dry, saline finish. Dramatic and characterful, it's immensely appealing. Sadly, at 239 cases, it's the smallest of all these cuvées too.

Co-fermented with 3% Viognier, the 2015 Syrah The Beautiful is fabulous, bursting from the glass with exotic aromas of violets, blackberries, panforte, black olives and lychee nuts (fanciful though that mélange sounds). On the palate, it's full-bodied, velvety and lavishly textural, cutting a broad swath across the palate, with a deep core of dark fruit and pungent savory nuance, concluding with a fine-grained, mouthwateringly sapid finish. It's a compelling Syrah that brooks no argument.

2015 K Vintners Syrah "Cattle King"....$68.98
Another off the charts effort is the 2015 Syrah Cattle King Upland Vineyard, which is also saturated purple/black in color. Possessing a more backward, yet insanely pure bouquet of crème de cassis, black fruits, smoked earth, graphite, and violets, it’s beautifully concentrated, has no hard edges, thrilling purity, and a gorgeous, layered, awesome, multi-dimensional style. It needs short-term cellaring but is a monumental wine from Washington.

2015 K Vintners Cab/Syrah "King Coal"....$97.98
One of winemaker Brenna's favorite wines, the 2015 Cabernet / Syrah King Coal Stoneridge Vineyard is 75% Cabernet Sauvignon and 25% Syrah from a site on the Royal Slope and was co-fermented and aged in 60% new French oak. Lead pencil, graphite, currants, and tobacco notes all emerge from this pure, seamless, silky beauty that has serious power and depth as well as purity and focus. It's a beautiful, terrific, awesome wine that will keep for 15+ years.

2015 K Vintners Syrah "Motor City Kitty"...$34.98
The 2015 Syrah Motor City Kitty Old Field Boushey Vineyard comes all from this site (planted by Brennon and Dick Boushey in 2007) in 2015 and will come from this site going forward. The site is 8 acres consisting of Phelps, 383, 174 clones that are all co-fermented in concrete uprights. It offers crazy notes of smoke tobacco, charcoal, ripe black cherries, currants, and pepper. With medium to full-bodied richness, a lively, pure, pretty style on the palate, and fine tannin, it should put on weight with 2-3 years of bottle age and keep for a decade.

2012 K Vintners Syrah "The Hustler"...$114.98
Still in barrel at the time of this tasting, the 2012 Syrah The Hustler is a blockbuster-styled Syrah that's overflowing with notions of sweet red and black fruits, toasted bread, cured meats and cedar. Only made in special vintages (it was previously made in '03, '07 and '09) and aged 38 months in French oak, it's full-bodied, decadent and layered, with a weightless, elegant, seamless feel. Coming all from the Morrison Lane Vineyard (it's actually the Morrison Lane Syrah with extended barrel aging), it should be ready to go on release and dish out tons of pleasure over the following decade or more. The extended elevage has given this a more upfront feel, yet I suspect it will also allow it age more slowly as well.

The 2016 Croft Vintage Port has a taut bouquet at first that demands a good 20 or 30 minutes to get into its stride. It eventually reveals scents of blackberry, bilberry, chimney soot, clove, and just a hint of scorched earth in the background. The palate is spicy and vivacious on the entry: black fruit, clove, white pepper and curry powder (almost like a Balti!) I love the personality imbued into this Croft, a Vintage Port that seems to be wearing its heart on its sleeve. Excellent. Production is 3,050 cases.

The 2016 Vintage Port is a field blend that was set to be bottled about a week after this tasting. It was the final blend, aged for 20 months in wood. It comes in with 104 grams of residual sugar. Tight, powerful and very intense, this is a big boy with the firmness you expect from fine Vintage Port, although the Fonseca is even more powerful. Showing good concentration and a fresh, lifted finish too, this is impressive at the outset. Initially, I was wowed by this. A few more tastes with more air made me think I'd like to see it prove some things in the cellar. It's not hot, but it seems a bit more alcoholic than its Fonseca and Taylor siblings. Still, there's a long way to go before making a final call.

Ripe, structured while also fruity, this intense, perfumed Port is opulent while also elegant. Its tannins and great fruit are finely integrated and are rich with potential. Black fruits, berries and a juicy aftertaste add freshness to the wine. Drink from 2028.

In 2016 Taylor's began picking in Vargellas on 17 September, followed by Pinhão Valley estate on 23 and 26 September. The 2016 Vintage Port has an aristocratic bouquet with tight wound aromas of blackberry, bilberry, crushed stone, black olive and a light, marine-tinged element, perhaps almost peat-like. The palate is just beautiful with fine, chiseled tannins and a perfect line of acidity. There is that almost "arching" structure one always seeks in a great Taylor’s with a gentle but insistent grip towards the finish. It is everything you really want from a Vintage Port. Production is 6,200 cases.

The 2016 Vintage Port is a field blend set to be bottled about a week after this tasting. It was the final blend. It was aged for 20 months in wood and comes in with 102 grams of residual sugar. The Croft might be as rich—although I don't think so; we'll see as they age—but this is more expressive right now. The most delicious of the three Fladgate Group offerings, this has the sexiest fruit, although the Fonseca seems to have more pure power. Even allowing that it had a fair bit of air, this was showing surprisingly well for young Taylor's. That is speaking relatively, of course, because this still has power and energy. Personally, this year I'd definitely pick Fonseca, though. Fonseca just seems to have a little more upside potential. With Port, of course, things change over the decades. This is a first look, not a final word.

Neisson Rhum Agricole Blanc


Neisson Rhum Agricole Blanc...$29.99 / liter
Clear rhum agricole distilled from fermented fresh sugar cane juice. Rested at least two months in accordance with AOC regulations.

The superior rhum agricole blanc from Martinique is the result of meticulous attention to detail from the selection of the sugar cane through cultivation, cutting the cane at maturity and getting that freshly cut cane from the fields and into the cane mill and subsequent juice into the fermentation vats in less than a few hours. Fermentation takes place in stainless steel tanks with a proprietary yeast strain cultivated from natural yeast strains propagated in France by a champagne yeast maker. Gregory Neisson, grandson of the founder, monitors every drop of this rhum as it is distilled to about 72% ABV in the modified Savalle still. From the aroma through the body and finish, fresh sugar cane is evident as it should be and belies the 100 proof alcohol content of this fine spirit.

This blend of aged Demerara rums is bottled at 86 proof to bring the full flavor to tiki and other cocktails that call for Demerara rum. Rich flavors of dark, stone fruit, smoky wood, burnt cane, treacle and brown spice. A blend of light, very light and heavy pot still rums from the Worthy Park Estate where rum has been made since 1670. Colored with double-strength black sugar-based caramel, this pot still rum embodies the heavy aroma and flavor of Jamaican rum. Over-ripe bananas dominate the aroma and yield to spice, sugar cane and ripe fruit in the body. The finish is reminiscent of the aroma with ripe bananas and vegetal notes.
