Tempus Fugit Spirits Crème de Noyaux is a classic 19th-century French liqueur made with distilled apricot and cherry pit kernels, combined with bitter almonds and other botanicals. Its complex, nutty, tree fruit-sweet aroma and flavor has a slight touch of balancing bitterness on the finish. Many years of research and tests were needed to finalize the production techniques and secure local sources of the natural ingredients required by the original protocols. The garnet-red color comes from the addition of cochineal, as directed by the original formula. 30% ABV

TASTING NOTES:  Its flavor offers a complex "marzipan" note with sweet cherry undercurrent of aroma and flavor with a slight touch of balancing bitterness on the finish.

Due to the high average altitude, the olive tree does not need a specific antiparasitic defense.

Starlight Distillery’s Carl T Bourbon is now available! Appropriately named after the Grandfather of 6th generation co-owners Greg & Ted Huber, the Huber’s felt it only fitting to title this signature blend after their 4th generation grandfather “Carl T” who had a love for bourbon.

This signature blend of bourbon is comprised of 58% corn, 27% rye, and 15% malted barley. Distilled in Huber’s 80 gallon copper pot still from Germany and then transferred to 53 gallon charred, American White Oak barrels from three different cooperage companies and four different barrel styles, continue to add quality and complexity to this signature blend.

What's the first thing you need to do when you start a brewery? Develop your logo, of course. With any potentially decent brewery, your logo must be a skull, it has to be a skull, you'll be laughed out of the room if you don't have a skull. So we went hunting in the area where all the great skulls have come from and were shit out of luck. By those fateful dumpsters all we found was this deformed neanderthal type deal, or maybe it's from an ape, and a big ol' pile of face. To celebrate our lack of success in finding a really cool skull, we are embracing another required cliché by brewing this American IPA. A modicum of simple malts provide the mediocre backbone to the mountain of various hops that are utilized and rotated throughout the brewing process. Look for dank overtones supported by various citrus and heirloom fruits. It's the straight forward fuckin' IPA that you always wanted from us. You lucky bastard.

"Philip Togni wines have been one of my favorites for years and I will always have a fondness for the wines.  It was the first winery that was not already distributed in St. Louis that I called directly and asked them to come to our store.  Before that, we just bought everything the local distributors had to sell.   I think it was the 1990 vintage that scored 96 from Robert Parker.  I talked to Philip Togni personally on the phone and he said yes.  We were the only place carrying Philip Togni in St. Louis for many years..  After that, Philip Togni would call me every year to offer me my allocation for the year and tell me about the new vintage." - Paul  

For those new to Philip Togni wines, our ten-acre vineyard is planted as 82% Cabernet Sauvignon, 15% Merlot, 2% Cabernet franc and 1% Petit Verdot. We use only the grapes that we grow here and farm ourselves at 2000 feet elevation to make both our Cabernet labels as well as our sweet Ca’Togni. Most vintages have proved to be exceptionally long lived.

We always buy Bedrock and Carlisle wines as soon as they are released. If they haven't been rated we know they will be and we know the ratings will be high, especially in great vintages like 2014 and 2015. So it comes as no great surprise that 8 of the top 10 rated 2014 and 2015 Zinfandels in The Wine Spectator are either Carlisle or Bedrock. These wines are truly great expressions of the Heritage Vineyards of Sonoma Country.

Great cheese starts with great milk. At 5 Spoke Creamery all of our cheeses are hand made in the farmstead tradition (produced on site with a closed herd) from the raw milk of grass-fed cows. Our milk comes from Holstein cows that are free of pesticides and hormones. We milk the cows at 4:00 A.M. and make the cheese at 9:00 A.M. A cross between a Cantal Fermier (Le Salers) and an aged Cheddar, this semi-hard cheese shows its true form after 12 months in the cave. Tumbleweed pares beautifully with a bold Reds, we also like to serve it with figs – fresh when available – or try it with our Sweet Sophie Barrel Aged Maple Syrup

Brooklyn Brewery Lager

In the late 1800’s Brooklyn was one of the largest brewing centers in the country, home to more than 45 breweries. Lager beer in the “Vienna” style was one of the local favorites. Brooklyn Lager is amber-gold in color and displays a firm malt center supported by a refreshing bitterness and floral hop aroma. Caramel malts show in the finish. The aromatic qualities of the beer are enhanced by “dry-hopping”, the centuries-old practice of steeping the beer with fresh hops as it undergoes a long, cold maturation. The result is a wonderfully flavorful beer, smooth, refreshing and very versatile with food. Dry-hopping is largely a British technique, which we’ve used in a Viennese-style beer to create an American original.

Fortem is a new-age imperial IPA that draws upon a range of influences, all while exhibiting DNA from our own forays into the IPA style. As such, it blends newer hop varieties from the Pacific Northwest and Hallertau, Germany along with pale malt, wheat malt and flaked oats for a full body and rounded mouthfeel. Fortem presents an expressive mix of aromas, including mango, blueberry, raspberry, lime zest and lychee. After time in the glass, it opens up to reveal stone fruit blossoms and mandarin oranges, finishing with just enough bitterness to encourage your next sip. Fortem has been left unfiltered for a hazy appearance and full hop impact.

Funky Wit, our wild take on a traditional Belgian Witbier! The wort is spiced with coriander, black peppercorns, and sweet and bitter orange peel before beginning a mixed fermentation with ale yeast and an array of Brettanomyces and Lactobacillus strains. This batch has been bubbling happily away in oak since February. Tart and spicy at the beginning, Funky Wit has a fluffy mouthfeel and ends with a lingering sweet coconut imparted by the oak.

Big changes at our Ballwin location





We are proud to introduce Adrian Davis as the new manager of our Ballwin location.   We are sorry to see Kevin move on and we wish him the best of luck in his new endeavors. In this new chapter for our Ballwin location, we are excited to have Adrian lead the store for many years to come.  Adrian starts at Ballwin on Tuesday, make sure you go in and meet him.  He has been an integral part of The Wine and Cheese Place Forsyth location for the past 6 years and the customers have grown to trust his knowledge and recommendations, we know the Ballwin customers will too.   He will be missed at our Forsyth location, but his promotion is well deserved.   He will be able to take care of all your wine, beer, whiskey and cheese needs.        
     We have been in the process of remodeling our Ballwin location and now have a tasting bar set up.  Adrian plans to significantly increase the wine, beer and whiskey tastings at that location.   He has also set up a twitter account for the Ballwin location in an effort to keep you more up to date on what is going on at that location.  He will announce all the exciting new releases in wine, whiskey and beer (including bottle shares), plus keep you informed about all the tastings.  Make sure you follow him on www.twitter.com/TWCPBallwin.  He plans to increase the rotation in the beer department, he will constantly rotate in and out new beers.  Keeping the selection fresh each week.   The excitement and the ideas are flowing right now, stay tuned.   Watch for exciting new wines, whiskey and spirits at our Ballwin location.
