Pastis is a strong local favorite in the South of France. From its original home is Marseille, the popularity of Pastis has spread throughout Provence and the Riviera, connecting friends throughout small cafes in the region. Prince Pastis is smooth and very full flavored, with a very refreshing edge, excellent in the summertime. The liqueur that we call pastis is a direct descendent of the infamous absinthe, the controversial spirit of Paris in the 1890s.

The flavor comes from licorice and the seeds of the star anise plant, an important ingredient in Absinthe. Anise liqueurs are the most popular liqueurs in France and the Mediterranean countries. Absinthe was the classic anise spirit. Unlike anise, pastis contains licorice as a major ingredient. Pastis has a clear brown-yellow hue, and turns a whitish-gray with water. Prince Pastis is an extraordinary ingredient in culinary recipes, from pastries to marinades.

Bogart's Bitters

BOGART’S BITTERS can arguably be said to have started the cocktail movement as it was the first ever mentioned bitters in the very first cocktail book published in 1862, written by the most famous bartender of those days, Jerry Thomas – a name, synonymous with the first golden age of the cocktail.

Although no bottles of the Jerry Thomas era ever surfaced, the common belief is that Bogart’s was a kind of misspelling of Boker’s Bitters at that time. Still the impact for the development of the cocktail is without  question. Before other bitters appeared in cocktail recipes around the world, there was Bogart’s/Boker’s.  A beautifully balanced and versatile cocktail bitter, it was even called for by name in the first Martini recipe, printed in 1888, where one was instructed to use “genuine” Bogart’s/Boker’s, indicating that this most popular bitters had weak imitations floating around.

And this makes sense, for if one actually tasted one of the very few remaining bottles of original Bogart’s/Boker’s bitters, they would discover that this magnificent bitter is not a cardamom bomb, but rather a beautiful mix of dark spice and chocolatey coffee, that can only be achieved by using a very expensive herb, an ingredient that others use sparingly due to cost, but also to the detriment of the final product.

The Bitter Truth have spent much time in investigating the subject over the last 10 years and is in the possession of a super rare original bottle – one of the only known bottles to have survived with genuine remaining contents, bottled around 1900.

Originally sold in iconic “lady leg” bottles made of brown glass, these bottles were defunct for about a century and have now been reproduced for this special edition. The same goes for the labels, which have been redesigned from this surviving bottle. The formula has been analysed, interpreted and changes in flavor profile, due to age, were substracted and the liquid formulated in the way it authentically resembles Jerry Thomas’ favorite bitters of more than a century ago.

The 2017 Vintage Port, not quite bottled when seen but the final blend, is a field blend aged for approximately 20 months in wood. It comes in with 100 grams of residual sugar. A step up (or two) on the 2016, this shows fine depth, more focus, vivid fruit and serious power. It's not particularly thick, austere or astringent, but this is built for the long haul. It is potentially a great Taylor's, effortlessly combining brilliant fruit and structure. It tastes great now (today, it is far more vivid than its Vinha Velha sibling), but the power makes this hard to drink today. So, have some patience. It will need some time, probably a lot more than indicated, and will likely last longer than indicated as well. As noted in the accompanying article, I don't see much point to impossibly long drinking windows. At some point, reevaluation is required.

The 2017 Vintage Port, not quite bottled when seen but the final blend, is a field blend (with typical grapes like Touriga Nacional, Touriga Francesca, Tinto Cão, Tinta Roriz and Tinta Barroca) aged for approximately 20 months in used French oak. It comes in with 98 grams of residual sugar, a little drier on paper than its Taylor sibling this year. Sappy and sensational in flavor and fruit, this seemingly has moderate tannins around the edges on first taste, velvety texture and a long finish. Despite the first impression of moderation, there is plenty of power here. As it got some aeration, it showed nothing but power and closed down fairly hard. The combination of great fruit and fine structure makes this a potentially great Fonseca, but right now it is obviously immature and not showing everything it has. I'd recommend some patience here.

It’s still sweltering outside at the moment, but we know Fall is just around the corner. Luckily, you can be stocked and ready for those first crisp breezes with our popular Cranberry Wheat Beer, available in cans for the first time ever! This Saturday we are releasing our Cranberry Wheat seasonal and kicking off our October “Drink Pink” program.

This is how we used to do it! Ryan and Lindsay would take turns blending and cooking the cranberries in tiny batches.

We really wanted to create a unique beer amidst the pumpkins and apples, and were inspired by the tart and festive cranberry. We started with a Witbier base, very similar to our Blood Orange Wit. While we use blood oranges for our Blood Orange Wit, we felt using traditional orange peel this time would help the cranberries shine. We use a pound of orange peels and almost 17 pounds of cranberry puree per barrel of this bright wheat beer. That’s a whole lot of fruit! Our brewery is glad people love this style, but owners Ryan and Lindsay are probably the most grateful. Back when this was a new baby beer, they had to make the cranberry puree by hand using a blender and camp stove. Thankfully, we now buy it by the barrel.

The final product is a beautifully festive, rosy-hued brew. It has the dry, crisp, and slightly spicy flavors you love in a classic wheat style, but with a bright, tart cranberry note on the finish. Perfect for every joyful occasion of the coming seasons, from tailgating to bonfires, and all the holidays in between.

While the beer itself is delicious, the cause it benefits makes it all the more enjoyable.
1 in 8 women are diagnosed with breast cancer every year. It affects all of us in some way and is a disease that hits close to home at Six Mile Bridge. Owner Ryan Sherring’s mom battled breast cancer back in 2001 and after months of treatment from skilled and caring physicians, she has been cancer free for 18 years! The experience left an impact on Ryan and this beer is a tribute to those whose lives have been affected by breast cancer.

We are thrilled to donate a portion of proceeds of all Cranberry Wheat beer sold across Missouri and Kansas to two local organizations doing incredible work for those undergoing treatment for breast cancer. We are excited to also announce that our donations will go even farther as both of our distributors, Major Brands and LDF have pledged to contribute as well!

All sales made in Missouri will benefit Gateway to Hope, an organization whose headquarters are just down the road from the brewery. We spent a lot of time talking with breast cancer survivors and friends before choosing this partner which received overwhelming praise for their work. Gateway to Hope’s mission is to remove barriers to affordable, timely, quality healthcare, empowering people with breast cancer to face the disease and focus on healing.

2016 Diamond Creek Gravely Meadow Cabernet Sauvignon $224.99
The 2016 Cabernet Sauvignon Gravelly Meadow is made up of 88% Cabernet Sauvignon, 8% Merlot, 2% Cabernet Franc and 2% Petit Verdot. Very deep purple-black colored, it sashays out of the glass with beautifully provocative black cherries, blueberry compote and warm cassis scents followed by candied violets, molten chocolate, licorice and fallen leaves plus hints of black olives and lavender. Medium to full-bodied, the palate reveals explosive energy wrapped in a silken carpet of exquisitely fine-grained tannins, finishing with amazing freshness and perfume. Gorgeous.

A blend of 84% Cabernet Sauvignon, 13% Cabernet Franc and 3% Merlot, the 2016 Cabernet Sauvignon Dancing Bear Ranch was aged for 22 months in French oak, 60% new. Very deep purple-black colored, it is profoundly scented of crushed blackcurrants, warm blueberries, plum preserves, Black Forest cake and charcoal with nuances of unsmoked cigars, forest floor, truffles and star anise plus wafts of violets and stewed tea. Medium to full-bodied, the palate is super intense and yet wonderfully graceful, featuring a beautiful frame of very fine-grained, very firm tannins and bold freshness supporting layer upon layer of black fruit and earthy flavors, finishing with epic length and depth. This is simply a stunning expression of one of Napa’s great, great sites—it should age incredibly!

The 2016 Cabernet Sauvignon Pritchard Hill has a very deep garnet-purple color. To smell the nose is like hearing angels trumpeting at the pearly gates! The most incredible and evocative scents come spilling out of the glass, conjuring notions of freshly crushed black raspberries, wild blueberries, red and black currant compote and raspberry leaves with subtler hints of roses, violets, tilled soil, cigar box and fragrant earth. Medium to full-bodied and achingly graceful in the mouth, the perfumed black and red fruits seemingly dance on the palate with a very firm yet beautifully fine-grained texture and just the right amount of freshness, finishing with epic persistence. Hallelujah—this is perfection!!

2016 Comte Vogue Musigny V.V. Grand Cru...$749.99 / 750ml
The 2016 Musigny Vieilles Vignes Grand Cru was damaged 70% by the frost: a significant proportion of the entire Grand Cru given that Comte de Vogüé owns most of it. Matured in 30% new oak, it has a broody bouquet that is not as immediate as the Bonnes Mares at the moment, in fact, you would think there is a small amount of stem addition even though there is nary a stem. The word that springs to mind nosing this Musigny is “rocky,” maybe basalt? The palate is medium-bodied with fine tannin. There is plenty of blackberry and wild strawberry fruit infused with minerals that segue into a strict and correct finish that leaves you with a persistent stony aftertaste. It is more of a cerebral than sensual Musigny, one that will require eight to ten years in bottle. I was not quite captured by this Musigny but I suspect that it will show better once in bottle

(production was down between 60% and 70%): Bright ruby-red. Serious, deep scents of blackberry, blueberry, cassis, licorice and menthol convey an old-vines richness. By far the densest, sweetest and most concentrated of this series of 2016s, with dark fruit and licorice flavors lifted by pungent minerality and a piquant note of pomegranate. The least candied and most classic of these '16s, conveying terrific density and depth. Finishes with substantial broad tannins and sneaky rising length. Serious juice!

If the Bonnes-Mares was a reluctant host in November, the 2016 Musigny “Vieilles Vignes” was delighted to have visitors! This is a great wine in the making, with the bouquet wafting from the glass in a very promising blend of black cherries, black raspberries, raw cocoa, complex minerality, a touch of blood orange, woodsmoke, incipient notes of gamebird and a deft base of vanillin oak. On the palate the wine is deep, full-bodied, pure and sappy at the core, with gorgeous focus and balance, outstanding backend mineral drive, fine-grained tannins and a long, vibrant and ripely tannic finish. This will be a great wine in the fullness of time. (Drink between 2032-2100)

2017 Caruso & Minini Perricone Naturalmente...$19.99
Bright medium red. Pungently perfumed nose offers violet, lavender, Szechuan pepper, lemongrass, blood orange and small red berries. Then juicy and very fresh flavors similar to the aromas, plus a building licorice note, linger impressively on the medium-bodied mouthfeel. Closes with magical, persistent inner-mouth perfume and truly exceptional clarity and cut. This sees no oak whatsoever, and therefore the wine’s magical perfume is really allowed to shine through. A real knockout of a wine, and easily one of the two or three best Perricones I have ever tried.

A little about the Perricone Grape:
Perricone is a little-cultivated red wine grape variety grown in Western Sicily. It is most commonly used in blends with the island's dominant grape, Nero d'Avola, where it offers up texture and a deep pigment. Perricone is permitted in a handful of Sicilian DOC titles, including Eloro, Contea di Sclafane and Monreale. In practice, however, varietal Perricone wines are usually labeled under the island's IGT title.

Despite bearing no relation, Perricone is often described as being quite similar to Barbera, with high acidity and characteristics of red berries, earth and herbs. However, Perricone has strong, noticeable tannins that can accentuate the bitterness many people find on the palate of these wines. It is tamed in this regard by Nero d'Avola, its traditional blending partner, but Perricone has the potential to make interesting, highly aromatic wines by itself
