New Reblochon-style cheese from Tennessee

Fans of washed rind cheese must try this! Let it sit for 20 minutes and come to room temp to bring out the subtle walnut and mushroom notes.
Long ago, cheesemaker Nathan Arnold learned the secrets of the Reblochon style in France, and brought his Savoie training home to Tennessee. A new style was born, and became the famous Dancing Fern (6x ACS Winner, Good Food Awards Winner). But that journey led to a new perfectly sized variation on a classic well-balanced wheel. We named it after Walden Ridge, a place where you can get a thrilling view of the Tennessee river winding far below.
The name Walden might best be known from Thoreau’s quest for self-knowledge and simplicity on Walden Pond. Maybe that fits because this cheese is laid back and all set for a picnic. Follow the breeze to a ledge, and you can watch the silky clouds billow over all the nooks and coves of the Valley. Around here, just spreading the right cheese on a baguette might take you to some faraway place where everything makes total sense for a minute.--producer's notes

The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards.
Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Pineau us also found as a home-made product in the neighbouring Deau-Sevres and Vendee departements.

The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif.

This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials.

In 2007, the U.S. Senate declared the first National Bourbon Heritage Month.

Distillery feature: Hard Truth Distilling Co.
Hard Truth Distilling Co. began distilling in 2015 in the small upper rooms of Big Woods Pizza Co. in downtown Nashville, Indiana.  The tiny craft distillery quickly grew, and, by 2017, construction had begun on a new facility set on a rolling, wooded, 325-acre property about a mile away from Hard Truth’s original home.
And, in the fall of 2018, Hard Truth Distilling Co. made the move to its brand new, state-of-the-art, sweet mash distillery, where it’s been producing Hard Truth spirits ever since.
Over the past few years, our teams have continued to develop the property that surrounds the Hard Truth distillery with new tours and activities, festivals, and a major expansion at Hard Truth on the Rocks — a terraced, outdoor area with a stage for live music, food truck, and bar that operate seasonally.  The Hard Truth distilling team continues to work diligently, crafting a range of premium spirits, including popular crowd-pleasers like Maple Bourbon Cream and Hard Truth Toasted Coconut Rum and, of course, remarkable sweet mash whiskeys — the first of which, Hard Truth Sweet Mash Rye Whiskey, was released in November 2021.

Catena new releases!

We recently had the pleasure of tasting through a line-up of wines from Argentina’s most historic winery, Bodegas Y Vinedos Catena. While the tasting was mostly focused on Catena’s luxury portfolio, the two wines that stood out the most were the least expensive in the line-up. We absolutely loved the D.V. Catena Tinot Historico Red Blend (Malbec, Bonarda and Petit Verdot) and were blown away by the San Carlos Cabernet Franc. The best part is each can be had for under $25.

A hint of oyster sauce, dark mineral, asphalt and dark spices to the blackberries and dark cherries. The incredible 2019 Appellation San Carlos Cabernet Franc is super elegant, fresh, varietal, nuanced and complex. A wine like this often costs more money than the price point of the appellation range, but it feels like a bargain anyway. This is an updated version of the 2018, with precision and symmetry. It's vibrant and lively, velvety and focused. 72,000 bottles produced. It was bottled in April 2020.

It is made by Helen Keplinger, who had a short stint at Bryant Family before launching her own winery based on Rhone varietals. Keplinger has crafted her own style after being mentored by some of the greats like Heidi Peterson Barrett, Michel Rolland, and David Abreu. She was named Winemaker of the Year by Food & Wine Magazine and has made the cover of Wine Spectator.

Perfecting our process one cube at a time
High quality ice starts with high quality ingredients. We first filter our water to remove as many impurities as possible. The filtered water is then passed into our Clinebell machines, which utilizes a remarkably strong process called directional freezing that removes every last impurity and air bubble, resulting in crystal clear 300lb ice blocks. Using a combination of chain saws and heavy duty band saws, we cut and polish each and every cube by hand.

As a bartender working in St. Louis, I was always disappointed by our lack of access to this sort of ice. I took it upon myself to freeze and cut ice using a knife and hammer for our services, because I truly believed it made a difference. As the popularity of my hand cut ice grew, other bartenders began to ask if I could make ice for them. - Good Ice STL

Laws is one of my favorite distilleries in the U.S. full stop.
My introduction to them was about 5 years ago with a eye opening 4 year bottled-in-bond rye. I'm a rye fan and this was a RYE in the truest sense of the word. Bold spice and white pepper on the nose with chewy dark chocolate,
licorice, and sweet cereal grain on the palate. Laws on the mainline...amen, I was converted.Come on over to the Infamous Bar, taste the new 7 year. Rye and see why we are digging it how it should be dug.
