HB Rosé comes from vineyards planted on clay and limestone hillsides called "costières" bordering the Etang de Thau. This coastal lagoon is situated between the port of Sète and Cap d’Agde.
Limpid and shiny colored wine with a beautiful bright salmon pink hue. Possessing a very expressive, charming and complex bouquet, the wine offers intense notes of ripe citrus and fruit candies. The palate is balanced, delicate, fresh, generous and ample, developing beautiful aromas of small red fruits (strawberry, red currants) and a long lasting mouthfeel balanced between roundness and freshness.
Excellent as an aperitif, a great match with salads, fish and seafood, salmon carpaccio, white meat in sauce, goat cheese.

If you’re in the wine business and your surname is Mondavi, people might assume you’re making Cabernet. But the decision by some members of the clan to pursue Pinot Noir has been rewarded. Brothers Carlo and Dante Mondavi spent 10 years looking for vineyard sites in the extreme coastal areas of Sonoma; by 2013 they had made their first wine at RAEN. Now with a decade-plus of vintages under their belts, the Mondavis, along with winemaker Melanie McIntyre, have established RAEN among the vanguard of producers driving the qualitative surge for California Pinot Noir. This bottling is named in honor of the brothers’ grandfather. Sourced primarily from their Bodega Vineyard, it’s made in a brisk, lithe and fresh style, with a backbone of pinpoint acidity and marine-influenced minerality. Native yeast fermentation and ample use of whole clusters add to its distinction.

Infinite Entropy (DIPA) combines portions of Sand City's Brewery Infinite series with the scientific principle of Entropy, which deals with disorder, randomness, or uncertainty. In order to adapt the concept to the actual beer, we rolled a set of dice to randomize the dry hop schedule for this recipe.
We started off with a base of flaked oats and flaked wheat and a whirlpool of Mosaic and Galaxy. A roll of the dice dictated the dry hop schedule and ratios, so we used Mosaic, Galaxy, and Rakau. Infinite Entropy pours a hazy and deep yellow with aromas of mango, syrupy orange slices, and lime. Flavors start off creamy and lead into pops of papaya, mandarin orange, passionfruit, and complex berry, along with watermelon and lime fun dip candy and our EQ Juice finish. Sip on this one and ponder... Was this beer meant to be Is anything in the universe truly random, or is there always an underlying order? Delta S positive!

Using a base of 2-row, white wheat, and chit malt, we utilized an all Galaxy whirlpool before the Mosaic, Citra, Galaxy, Sabro Lupomax, Amarillo, and Nelson dry hop. Pouring a saturated tangerine yellow, deep flavors of mango juice, creamy tropical fruit, white grape, papaya, fresh squeezed OJ, and lemon lime soda mingle with a hint of berry skin before wrapping up with a hoppy blast and our bright melon EQ juice finish.

Baijiu (pronounced bye-j’yo) means "white spirits" in Mandarin. The secret ingredient in baijiu is qu (pronounced "chew"), a naturally harvested culture of airborne yeasts and other microorganisms. It makes the taste and scent of every baijiu highly specific to the place it was created. Qu also allows Chinese distillers to ferment and distill grains in a solid state, which creates incredible complexity of flavor. There are nearly a dozen distinctive regional styles of baijiu, but there are four major styles: strong aroma, light aroma, sauce aroma, and rice aroma.
