Ségriès Lirac....

"A super value treasure trove in the southern Rhone, Ségriès is a large estate of 109 acres brought back to life over the last decade by Henri de Lanzac. The wines continue to go from strength to strength."- The Wine Advocate

2009 Château de Ségriès Lirac Rouge Cuvée Réservée....$19.99
Age of the vines: 40 years.

50% Grenache, 30% Syrah, 10% Cinsault, 5% Mourvèdre, 5% Carignan.
Deep blueberry and forest aromas precede the very long flavors of black cherry, bramble and black pepper. Muscular and packed, it finishes with drying tannins. A great value.

"More serious, structured, and meaty (than the CDR) is the 2009 Lirac Cuvee Reservee. Fifty percent Grenache, 30% Syrah and the rest Cinsault, Mourvedre and Carignan, this has more earthy, foresty notes, an opaque ruby/purple color, hints of incense, blue and black fruits, medium body and light to moderate tannin in the finish. It is just becoming drinkable yet should age reasonably well for 5-7 years. The new releases from proprietor Henri de Lanzac are all impressive."

This one arrived a few days ago and forgot to post...

Great Divide Rumble Oak Aged IPA...$9.99 / 6pk
Rumble IPA is an American IPA with subtle nuance. Brewed with heavy handed additions of Pacific Northwest hops, this beer is gently aged on French and American oak resulting in a wonderful balance of bitterness, caramel sweetness, vanilla, and undertones of pine and citrus. Very inspiring. 7.1% ABV

Odell Woodcut No.5

Odell Woodcut No.5.....$24.99
Oak Aged Belgian Style Quad Ale

A Quadruple Ale brewed with a blend of Belgian ale yeast and our house ale yeast, Woodcut No. 5 presents a rich, spicy dried fruit essence and a deep auburn color. Aggressive vanilla notes from the New American Oak complements the Special B malt with hints of cherry, raison and plum on the palate. Each Woodcut offering is a truly limited edition beer with a unique flavor that comes from select hops, fine malted barley, and our brewers’ careful aging process. Enjoy.
11.3% Alc. By Vol.
100% Bottle Conditioned
info from Odells Website

With the fifth release, Odell has gone with a bold, 11.3%ALC Belgian-Style Quad: an end-product of blending traditional Belgian yeast as well as their house ale yeast to give bold spice and layer upon layer of candied sugars. The juice is then lain to mature in virgin American Oak prior to the 750ml cork & cage encasing just as the series before. With all the chewy-yeasty goodness you'd imagine with a high ALC Quad, coupled with brilliant Oak tones and special B malt perfect for cellaring, raison and fig-fruit fans will be lining up by the gaggle for this brew in anticipation rivaling a Justin Bieber Trapper Keeper signing. - Denver off the Wagon Blog

Founders CBS

When Dave Engbers, one of the men behind Founders Brewing, was in our store this week, we asked him if CBS would make it in to 750ml Backstage Series.  He just smiled and said that we don't talk about it, but its a good guess.   I asked him the time table on the next Backstage Series release and he said a couple of months.

Well, the label just got approved last night....there is going to be a fight for this one.

From the students of Mikkel

To Øl is a new brewery from two students of Mikkel of Mikkeller.  They used to brew with him when they were in High School.   Wouldn't it have been nice to brew beer in High School.

In stock at Forsyth and online now
To Øl First Frontier IPA...$4.79 / 11.2oz
"The starting point for First Frontier is to create an IPA "the American way" without a sickly sweet malt profile that removes the focus from the IPA is really about: the potent and aromatic hops. The result is a nice dry, crisp and bitter IPA, which is hopped with the three American hop varieties Warrior, Simcoe, and Centennial, which gives a hint of citrus, peach and grapefruit. Added is a little caramel malt, which is just there to harness and balance the alcohol, which is at 7.1%.
”We all got pieces of crazy in us, some bigger pieces than others.”

Ingredients: Water, Malt, Oats, Hops (Warrior, Simcoe, Centennial), yeast.
Alc. / Vol. 7.1%. Contents: 330 ml / 11.2 FL OZ
Brewed by Brouwerij De Proef, Lochristi-Hijfte, Belgium.

History of To Øl
"In 2005, sat Tobias Emil Jensen and Tore Gynther to a party at their old high school with their teacher Mikkel Borg Mountains and spat out a pair of sickly lager. The three talked about that it was too bad that you could not get some decent beer and agreed that the only way to ensure quality was to brew it yourself. They were allowed to borrow the canteen in the school's closing and began to brew. This meant however that most of the brew was made between the hours of 22 and 6 on weekdays, which resulted in some hard school day for both the two pupils and the teacher, but the beer was appreciated by all the school (near the school canteen, who grumbled about the mess .)

Later Mikkel created  brewery Mikkeller , which has garnered wide international recognition, while Tobias and Tore moved their production into their parents' basement after they had gone out of high school. Here they continued to hand brew until in 2010 found that two beers were now ripe to make its first commercial brew. The rumor spread and when it came Mikkel's ear, he insisted on making a collaborative brew between Mikkeller and Two Beers, who became the first beer Two release - Overall IIPA .

Beer
Two Beer wants to make potent beer that tastes through and the character. Beer that you can not forget when you've tasted them (except if you have had too many of them). We make beer that has edge and nerve and prioritizes quality far ahead of quantity. In short, we seek to create the world's best beer.

The vision
When we started this brewery, we wrote down some visions of what we want with the brewery. We want to:

Give beer something youth - we are tired of hearing about all the breweries that have existed for over 100 years - as if it has ever done a queasy lager better that it has been brewed for 100 years! We do not brew beer according to old recipes, we brew beer based on the present moment and do not think we are better than the last beer we've made. Meanwhile, the market filled with soft sweet fruit beer 'for young people' - we believe that young love delicious potent beer (we do in every case itself).

Never in the supermarket - Our starting point for this brewery is making the best beer and not being the most widespread brewing.

Garden edge and nervous - We want to provoke and move on people ølforståelse. We also want everyone to have fun. It should never be so seriously that we forget that it is beer, not politics, we are dealing with.

Let beer be a good story - we will certainly make a lot of good stories, videos and features, but ultimately it must be the beer that is the best story.

Evil Twin Brewing from Jeppe Jarnit-Bjergsø, the brother of Mikkeller’s Mikkel Borg Bjergsø!!!

"About The Evil Twin: Evil Twin Brewing is the brainchild of Jeppe Jarnit-Bjergsø. An avid beer geek since 1997, Jeppe began home-brewing in Copenhagen, Denmark in June/’03. His first foray into the commercial craft beer scene commenced in September/’05, when he opened the now world-famous bottle shop Ølbutikken in Copenhagen. The reputation of Jeppe and his shop grew quickly, and myriad side projects began (including his collaboration with Cantillon on the Blåbær Lambik – one of this most highly regarded, highly sough-after lambics in the world). Evil Twin Brewing is Jeppe’s latest venture, and is the culmination of the vast knowledge, experiences, and relationships he’s built over the years." -- Beernews.org

Schlafly's bottle gets a new look

See the video on Schlafly's website

Posted by Schlafly on their site

1.4 Million Bottles In 3 Days

That is the number of new Schlafly Beer bottles produced by O-I at their glass plant in Lapel, Indiana from July 11th to the 13th, 2011.  The road to this production began back last summer when we began to work on a new contract for our glass bottles and realized that we had an opportunity to add to the overall design of our bottle.
schlaflypaleWe are very attached to the basic shape of our Schlafly bottles, they work well on our filling line at Schlafly Bottleworks, but we really wanted to take advantage of the opportunity to partner with O-I and their team to design and add some embossed letters to the shoulder of the bottle.  This is a subtle and simple addition, we did not want to change the label designs or overall appearance in a dramatic way.  Knowing that we were entering our 20th year we decided it would be groovy to add “EST 1991” to the bottle. We also found room to add an arc of the “SCHLAFLY” letters to the design.
We know that you honor us with purchases of Schlafly Beer because you like the taste of our beers, and we believe that our beers taste best out of amber bottles. As we move closer to the 20th anniversary, the new bottle will serve as a gentle reminder that our mission has been to do nothing more than brew great beers since 1991.  Thanks to all of our customers for making the past 20 years possible.

Sam Adams Oktoberfest....6pk

Samuel Adams Octoberfest masterfully blends together five roasts of malt to create a delicious harmony of sweet flavors including caramel and toffee. The malt is complimented by the elegant bitterness imparted by the Bavarian Noble hops. Samuel Adams Octoberfest provides a wonderful transition from the lighter beers of summer to the heartier brews of winter." -- Sam Adams

SoTier Creme Brulee

One of their most popular has arrived!!
SoTier is getting harder to get, we only have 36 bottles (I requested 10 cases), so it is not going to last long.  They must be growing too fast, I think we got 10 cases last year, but we got cut back this year.

Southern Tier Creme Brulee...$7.49 / 22oz
"crème brûlée Imperial Milk Stout -- “a stout of great contention”
We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition. By comprehending the labyrinthine movement of time, one would not think it strange to trace the errant path of an ordinary object such as a cream dessert only to discover that it has been the cause of cultural disputes since the middle ages. The British founders of burnt cream and from Spain, crema catalana, both stand by their creative originality and we respect that, but it was the French Crème Brûlée, amid the strife of contention, that survived to represent our deliciously creamy brew." -- brewery

A new Quad...

Staffe Hendrik Quadruppel....$4.49 / 12oz btl
Staffe Hendrik Quadruppel....$16.99 / 4pk
Straffe Hendrik Quadruppel is a rich and intense dark Belgian ale. It is brewed with a subtle blend of specialty malts, which give the ale an extremely dark color and a chewy, malty complex character. This quadruppel combines a clean dryness with a warm full bodied mouth feel and essences of fruit. Secondary refermentation in the bottle creates a living ale that can be aged and will have an evolution of taste profiles over time.

It is brewed by the last active brewery in the historical city of Bruges. The town archives first mention the brewery in 1546. Since 1856, the famous brewing family Maes-Vanneste has owned the brewery.

Fresh cheese just arrived today also...

We just got in Fresh Bufala Mozzarella and Burrata back in stock and fresh today at Forsyth

Burrata Cheese
Burrata is the ultimate a fresh Italian cheese. It is fresh Mozzarella that is wrapped around a mixture of cream and more mozzarella. The best way to serve is to just slice the top of the cheese with an "X" and then pour on a little olive oil, pepper, and sea salt. Great with your favorite greens like arugula or on crostini. (this one we have is made in Wisconsin)

We also have Fresh Italian Mozzarella di Bufala in stock now!

And something new for us at Forsyth
Bellwether Farms Crescenza - Come in for a taste
It is a domestic version of Stracchino, which is a very fresh Italian Cheese.

"Family owned and operated, Bellwether Farms is located in Sonoma County, California, about an hour north of San Francisco, and a few miles from the Pacific Ocean.  Our cheeses are used by chefs in many of the finest restaurants across the country, and are regularly featured in The New York Times, Martha Stewart, Sunset Magazine, and gourmet food publications everywhere. You see, good taste always travels well."  -- Bellwether

The recipe for our Crescenza was learned on a trip to Northern Italy in the spring of 1996. One of our customers, Carlo Middione, recommended we try this cheese. We were introduced to a small cheese maker a little west of Milan who processed about 100 gallons of milk at a time and made a variety of cheeses from each batch. Her creamery was a two person operation located on her family’s dairy. The dairy was large and sold most of its milk to some large customer but she ran the small creamery and cheese shop herself. We spent the day with her and were able to help her make her cheeses. After returning to the US, I began working on the Crescenza. It took about 6 months before I was able to adjust the recipe to account for the higher butterfat and solids of the Jersey cow’s milk we were using. The secret of this cheese is balancing the acid development with moisture level in the correct he cheese to have it ripen properly.

Here are some recipes -- click here

We will be receiving some of the small production Pinot Noirs from Papapietro soon.

"Ben Papapietro, 60, and Bruce Perry, 65, met 40 years ago while working together in the San Francisco newspaper trade...But it was meeting coworker Burt Williams that turned the pair into winemakers.  Williams was the winemaking half of Williams Selyem, and Perry and Papapietro watched (and sometimes helped), as Williams Selyem became a leader in California Pinot Noir.....the two created a ripe, rich style that evolved into their first commercial release in 1998, with the support and guidance of Williams." -- Rising Stars, The Wine Spectator

2008 Phelps Insignia

One of the most amazing wines from California year after year....

Pre-Arrival
2008 Phelps Insignia Napa Valley Red.....$147.99 net

"The blend of the 2008 Insignia, 89% Cabernet Sauvignon, 7% Petit Verdot and 4% Merlot, is not terribly different from the 2007. However, I suspect the production will be a lot less given the frost damage in early spring. The color is an inky/purple and the wine shows lots of cassis, blueberry, graphite and floral notes, good acidity, stunning concentration and purity, and a long finish. Another great success for Phelps, the 2007 and 2008 Insignias may be the best back-to-back vintages they have produced since 1995 and 1994. The 2008 has some tannins to resolve whereas the 2007 has already assimilated them. It appears the 2008 will require 2-3 years of bottle age, but should last for three decades."
