The brewmaster often tries new recipes. He worked in September 2011 along with the American brewer Brian Stillwater to a unique beer. Stillwater is a celebrity among brewers. He is best known for his love of travel, willingness to share knowledge and his use of special ingredients such as lavender, chamomile and dandelion. Bubberman and Stillwater chose a typical Dutch ingredient: the apple. The beer is Holland's Oats "called.
Such experiments may lead to a new beer which is included in the fixed range." -- Emelisse Brewery.

Blend: Marsanne 40%, Roussanne 40%, and Viognier 20%
Tasting Notes: Château Virgile’s white is truly a classic Rhône blend. The Roussanne, with peach and apricot 
flavors, gives the wine weight, texture, and body. Next, the Marsanne adds lively acidity, a hint of minerality, and citrus fruit flavors. Finally, the Viognier adds tropical fruit flavors to the wine, as well as beautiful, floral aromatics. This is a great wine for just about any type of shellfish, especially seared scallops.


2009 Chateau Virgile  Costières de Nîmes Rouge...$11.99 
Blend: Syrah 60%, Grenache 30%, and Mourvèdre 10%
Tasting Notes: This is a rich and intense Costières de Nîmes dominated by Syrah fruit in the blend. In the nose black fruit mixes with garrigue spice. The mouth is full of black raspberry, black cherry, cassis, and white pepper. This wine shows an extraordinary amount of character and complexity for a entry-level Costières de Nîmes.
Technical Notes: This wine really shows off the great terroir at Château Virgile. The vines, situated at the edge of a plateau in very deep gravel, produce dark, concentrated wines. The Château Virgile Rouge does not spend any time in oak and is aged exclusively in tank. It is lightly fined and filtered before bottling.

Famous Burgundy producers, Anne Gros and Jean-Paul Tollot, invade the south and show off in the Minervois.   These wines are spectacular, they have taken Minervois to a new level.   These are two of the most exciting wines we have found in a long while....


2009 Anne Gros et Jean-Paul Tollot Minervois "Les Fontanilles"..$29.99
This cuvée is made of 4 grape varieties, coming from soils dominated by Assignan sandstone, which face north and west. These small plots, surrounded by scrubland, pine trees, thyme, rosemary and cistus, comprised of: 20 year old Grenache,, 20 year old Syrah, year old Carignan, 40 year old Cinsault.  Each grape variety is complete, and brings to the cuvee its own characteristics. One adds fruitiness and freshness, another adds sweetness, another depth and length, and yet another distinction and energy. (We will let you guess which is which.) This is a classic cuvée! It is fulfilling, full of harmony, and wellbalanced. Matured in casks, the Carignan and Syrah bring in a certain distinction.

"A shrubby, resinous and pungently herbal overtone suggestive of marjoram and rosemary, along with notes of blond tobacco compliment the scents and flavors of ripe, diverse black fruits in Gros and Tollot's 2009 Minervois Les Fontanilles, which offers a seamlessly ripe, texturally-refined, and luscious intensity all the way through to an invigoratingly pungent, saliva-inducingly saline finish. This ought to perform well for at least 5-7 years."

2009 Anne Gros et Jean-Paul Tollot Minervois "La Ciaude"...$31.99
Technical Notes: The Ciaude vineyard is composed of south facing limestone and clay soils. In the vineyard the blindingly white limestone of Agel helps to produce wines full of energy. The grapes are hand picked, sorted, de-stemmed, then fermented in stainless steal tanks. The wine is aged in new Burgundian oak barriques for approximately 12 months before bottling. 
Tasting Notes: This classic blend of Syrah, Carignan and Grenache combines finesse with concentration. In the nose, black fruit aromas from the Syrah mix with cherry notes from the and Grenache. In the mouth, the wine is dense and mineral, complemented by hints of exotic spice and garrigue notes from the Carignan. The minerality carries through to the long finish, supported by silky ripe tannins. Though enjoyable now, this wine should hold up, and gain complexity for many years to come.

"Suggestions of toasted walnut and hickory along with violets, lilac, and hints of vanilla and resin from toasted oak all compliment the rich dark berries displayed in Gros and Tollot's 2009 Minervois La Ciaude. This is another example of plush texture and seamless ripeness allied to a welcome sense of finishing levity and energy such as can by no means be taken for granted from the vintage in question. I suspect this will merit the better part of a decade's attention, though of course a track record for the wines of this domaine is not yet established."

The renowned Burgundy producers, Anne Gros, of Domaine Anne Gros in Vosne-Romanée, and her husband, Jean-Paul Tollot, of Domaine Tollot-Beaut in Chorey-lès-Beaune, recently purchased 14 hectares of vines in Minervois. They have constructed a modern winery using their many years of experience to design an ideal winemaking environment. Their attention to detail extends from their winery, to their meticulous work in the vineyards. At their new winery they treat their Minervois with the same care and respect that they use for their grand cru wines in Burgundy.
“The building was conceived to cultivate, receive, make, and care for these fine, terroir specific, wines. It has been designed with great attention to detail, respecting the energies, the wines and the people... A beautiful architectural structure made of simple, but noble, materials...terracotta, wood, stainless steel...Roundness is everywhere... the road, the hills, the tanks, the barrels... the wines.” 

About Our first vintage (2008): “We expected a racy style, laced with minerals, and freshness. However, we got a lot more - A very good balance of sugar and acidity! What is the reason for such a result? Slow ripening, cool nights, and temperatures around 17 degrees Celsius (63̊ Fahrenheit) during the harvest... This reminded us of the standard conditions in Burgundy... Harvest was from September 18 to October 5. This first vintage came to life with anxious anticipation, and it did not disappoint! It is vibrant. Each plot and grape variety was vinified separately in order for us to get acquainted with their individual expressions. We waited a year to discover their nature, and to decide on how best to blend them together.”

For wine lovers, Domaine Anne Gros et Jean-Paul Tollot offers a unique opportunity to rediscover the wines of the Languedoc through the eyes of great Burgundian winemakers. What makes their wines so unique and interesting, is not only their expertise as winemakers, but their extreme sensitivity to the terroir in Minervois.

“We chose the area of Cazelles for the diversity of its soil, made of limestone, clay and sandstone; to discover the 4 main grape varieties (Carignan, Grenache, Syrah and Cinsault); for the quality and the wide age range of its vines; and for the privileged environment at the foot of the Montaigne Noir (Black Mountain), its altitude of 220 meters is identical to Vosne-Romanée.”

It isn’t easy splitting their time between Burgundy and the Languedoc, but both Anne and Jean-Paul agree that the extra effort has expanded their horizons, and has changed the way they approach winemaking in Burgundy and in Minervois. It took a few years for Anne and Jean-Paul to complete the purchase, build the winery, and for the first time – make wine in Minervois. Their 2008 showed all of the finesse of Bugundian winemaking, combined with the kind of spice, complexity, and the promise of untamed terroir that only the Languedoc can offer.

As I have stated many times, the best products in our stores did not find us, we found them. Don't get me wrong, we are presented 100s of wines each week and we find some very good wines through this "normal" method.   This is the "easy" method and these are the same wines that are presented to every shop in St. Louis.  We are not satisfied with the "easy" method.  We go out and aggressively find wines that are not currently sold in Missouri.   Think about it, the best products don't have to be sold to you or pushed on to you, they are desired and sell themselves--you have to find them.

We found United Estates, they did not find us.  When I first talked to Patrick Allen (founder and owner of UE along with his wife) a few months ago, he said that he had not planned any expansion and had no plans to come to Missouri.   We asked him to send us some samples and samples he did send.    The quality of the wines was amazing.   Our whole staff tasted the wines and we were shocked by the quality.   We immediately had him start the registration process with Missouri because we had to have these wines in our stores.   While we waited these past months for the red tape, we tasted more wines from him and the high quality of the whole portfolio is off the charts.   We are very excited to finally introduce these wines to Missouri!     United Estates Wine Imports follows a long line of wines and wine importers that The Wine and Cheese Place "found" and introduced to St. Louis and the state of Missouri**.  


UNITED ESTATES WINE IMPORTS Ltd. is a company dedicated to importing handcrafted, high-quality wines, from artisan estates in France.

Before starting their business, the husband and wife team of Patrick and Connie Allen spent many years living in France and New York. During that time they worked for many major players in the wine business including Becky Wasserman, Neal Rosenthal, William Deutsch, and Michael Skurnik.
After crafting a business plan over many long walks through Central Park they “took the plunge” and in the spring of 2002 moved to France. Their goal was to establish an importing company dedicated to promoting French country wines from villages far off the beaten track.

Frédéric Mistral once wrote: “the people of … Provence, generally yearned for the white flag with the fleur-de-lys. "Gose is traditionally bottled in a flattish, near semicircular bottle, with a tall, narrow neck. The neck was designed to trap the foam of fementation and thus produce a natural bung. Gose is incredibly difficult to find, unless you visit Leipzig or Goslar." -- The German Beer Guide



"Leipziger Gose actually originated in the smallish town of Goslar {state of Lower Saxony , Germany}. Leipziger Gose was already first mentioned around 1000 AD under Emperor Otto III. Like many other beerstyles {such as English Imperial Stouts and German Bock biers} the Goslar breweries of Leipziger Gose had to look elsewhere for a bigger market. They found those in the trade towns of Halle and Leipzig, about 100 miles East, where Leipziger Gose appeared around 1738 for the first time. By 1900 Leipzig boasted over 80 Gose houses.The spread of the bottom-fermenting pilsner style as well as economic decline of East Germany under communist regime contributed to the demise of the Leipziger Gose which was last brewed in the mid 1960s.On July 20, 2000 Thomas Schneider {no relations to the Schneider Wheatbeer brewery in Kelheim, Germany} revived the brewing of the Original Leipziger Gose in the famous “Bayerische Bahnhof” in Leipzig. Leipziger Gose is a top-fermenting wheat beer {60% wheat, 40% barley malt} with coriander, salt, and lactic acid bacteria added in the boil. It is a 4.5% alc/vol eclectic beer whose name evokes a close relationship to the renowned Lambic/Geuze breweries in the Valley Senne nearby Brussels, Belgium." -- importer

"History: Huguenots may have originated the style as they traveled through France to Flanders, having first mentioned it in the 1600s. During their time, there were said to be seven hundred weissbier breweries in Berlin. Later, in 1809, Napoleon and his troops identified Berliner Weisse as the Champagne of the North. He requested the beer be served w/syrup to cut its extreme level of acidity. “1809” is a very traditional interpretation of the “Berliner Style” Weisse with an intense blend of lactic tartness and complex fruitiness. It is bottle-conditioned with lactobacillus delbrueckii, unfiltered and unpasteurized. "1809" will age beautifully in a dark and cool location. Its complex fruitiness and tartness will most likely develop in quite astonishing ways." -- importer

    "La Rulles Grande was first brewed to celebrate the brewery's 10th anniversary. It is a hybrid of two Belgian beer styles: triple and Saison. The main flavor derives from the esters of the yeast. Even though it is a strong triple, the alcohol is hidden. 100% Pilsner malt is used along with water from the Rulles forest. Warrior hops are added, and a bit of Simcoe hops. Grodziskie or Grätzer is a Sour Smoked Wheat Ale that was brewed in the 1900s in East Prussia and dates back to as early as the 15th century. It was named after the Polish town of Grodzisk Wielkopolski or Grätz in German. 

Our historic version is brewed according to the German Purity Law with air-dried barley malt & beech smoked wheat malt and hopped with Perle & Saaz.   A sour mash is created using the old and forgotten technique called “Digerieren”. Regent Brewery
The Regent Brewery was founded in 1379. The unique structures of the brewery and malt workshop are a part of the ancient heart of the town of Trebon. Advanced techniques and computer controlled technologies are employed as well as traditional recipes using the best assorted raw materials – water from artesian wells, world famous hops from Zatec and high quality barley malt.







History
This verse is written on the entrance to one of the oldest beer breweries in the world.
Not many breweries in Europe can be as proud of their heritage as the brewery in Trebon, which was founded in 1379. Historically the oldest equipment used for the production of beer in Trebon was owned by the “Canonical order of Augustinian monks“ in 1367. The equipment was mentioned in the archives of Trebon, where it says that the richest classes of the time made beer for themselves and sometimes lent out the equipment to the lower classes as well.

In the year 1482 Vok of Rosenberg expanded the brewery and built new cellars beside the castle. However the rising demand for beer was not met and therefore in 1522 larger scale expansions of the castle brewery were made. Further reconstruction was carried out by Vlach builders in 1560. At the end of the 16th century the Trebon brewery became one of 19 breweries in Rosenberg’s possession with a planned output capacity of 100 batches, about 189,600 litres. 

The beer from the Trebon brewery slowly began to gain in popularity. As a result the smaller old castle brewery could not meet demand


and therefore a new brewery was created with the renovation of the Rosenberg’s armoury between the Svinenska and Novohradska Gates where it still stands today. The construction of the new brewery started in 1706 and was completed by Italian builders in 1712. The brewery of today however was not created until the second half of the 19th century when it was completely rebuilt. In 1886-1887 there was an output capacity of 5,000,000 litres which in those days was very high. In 1888, in an exhibition in Brussels, the Trebon brewery received a prize for "quality beer" from the Belgian King. As the years progressed, the fame of Trebon beer spread further and further. At the start of the 20th century the now Regent Brewery had warehouse stocks not only in Prague and Brno but also in Vienna, Styrsky Hradec and Lvov. Deliveries by train went to many European countries as well as to the Austrian-Hungarian Empire. However, in the forthcoming years, Including the 1st and 2nd World Wars, the brewery did not continue to prosper. Before 1914, the production of beer from the brewery exceeded 10,000,000 litres. After the First World War however, production fell by 50% as exports to Vienna plummeted.

In the time before the “pre-Munich Republic“ production of beer fell, the highest output recorded during this time was in 1929 during the period of the Czech economic recession, and was 6,500,000 litres. After this, there was a fall in production and during the Munich Treaty, production was at 4,300,000 litres. During the Second World War, production fell again and at the start of 1945, it ceased completely. Production recommenced at the end of the same year but only a weak 4 percentage beer was produced. Up until the end of the war the brewery was owned by the Schwarzenbergers. After nationalisation in the newly formed Czech Republic, the brewery was controlled by the South Bohemia Beer Brewery Enterprises (a public/government owned enterprise), with its base in Ceske Budejovice. Then during 1953-1955, a Trebon Beer Brewery Enterprise was founded, with breweries in Trebon, Tabor and also Jindrichuv Hradec. From the 1st of January 1989 the brewery became a part of the Cooperative Company Ceske Budejovice. After privatisation in 1992 the brewery became part of a shareholder company, South Bohemia Breweries. In 1999 the shareholders decided to sell the brewery to Regent and in August 200 the brewery was sold to the shareholding company, Bohemia Regent.

The business name of the brewery, Regent, was inspired by the historic farne of the knight Jakub Krčín from Jelčany (1533-1604), who began as a Rosenberg accountant and then became regent of the large dominion of Vilem from Rosenberg, the uncrowned king of the entire Bohemian Kingdom. Krčín was the talented builder/planner of the monumental Southern Bohemian interlinking lakes and many business houses and pubs.


As well as this he was a leading financial manager of the Czech feudal estates. The figure of Jakub Krčín is surrounded by many folk tales. According to one, he rides along the thin strip of land between the lakes of Rožmberk and Kaňov (which was built specifically for him) at midnight in a carriage drawn by two cats, because he could not get peace even after his death. During his life he always treated his workers very harshly and just before his death one of them put a curse on him. Another tale tells us how the Devil forced Krčín to plough the fields near Zlatá stoka (Golden Canal) which runs through Trebon. Krčín was strapped into the yolks of the plough with heavy chains. Then, while he strained under the blows raining down upon him by the devil's whip, a link in the chains was lost. From this link a great oak tree grew. To this day the spot where this happened is called "At The Devil's Oak". Regardless of these tales, however, one fact remains, and that is that the Regent of Rosenberg, Jakub Krčín from Jelčany, became in his own way, an inspirational name for the Trebon brewery and the beer that it produces, which he also enjoyed drinking in those days.
