The Ama Castle's olive groves are partly specialized and partly farmed on traditional terraces. Leadership essentially consists of repeated and constant soil treatments and an annual administration of nitrogen fertilizers (manure) which is carried out on vegetative recovery. Due to the high average altitude, the olive tree does not need a specific antiparasitic defense.
